Description:
Chicken Masala is a dry curry from Tamil Nadu, South India. Traditionally, Chicken Masala consists of cubes of chicken in a spicy dry curry paste.


The spices used in the dry curry paste for Chicken Masala include mustard seeds, cumin seeds, chili, curry leaves, fennel seeds, powdered coriander, powdered turmeric, salt, chopped ginger, chopped garlic, chopped onions, powdered cinnamon, cloves, cardamom, pepper and garam masala.

Some hawkers also include yoghurt, vinegar, bay leaves, cilantro or lemon juice.

This spicy curry paste is then fried together with cubes of chicken, tomatoes and onions until it turns dry. Some hawkers will also garnish the Chicken Masala with cashew nuts or coriander leaves.

Chicken Masala is normally accompanied by Indian breads or rice.

In Singapore, Chicken Masala may sometimes refer to a chicken fried in Indian spices. The traditional Chicken Masala is mostly sold in South Indian stalls.
