Description:
Egg Masala is a dish of hard boiled eggs, in a dry curry paste from Kerala, South India.


The dry curry paste for Egg Masala is made with onions, tomatoes, powdered turmeric, chili, garlic, ginger, salt, powdered coriander, cumin seeds, cloves, pepper, cardamom, vegetable oil / clarified butter (Ghee), garam masala and curry leaves.

Some hawkers also add bay leaves, paprika or nigella seeds (Kalonji).

Typically, the type of hard boiled eggs used in Egg Masala is either chicken eggs, or quail eggs. The hard boiled eggs are combined with the dry curry paste.

Egg Masala is served as a side dish, together with Indian breads or rice, and other curries.
