Description:
Murtabak is a type of Singaporean Indian fusion dish, originally a combination of the Chennai, South India bread called Roti / Prata, and the stuffed egg pancake called Mutabar, of Hejaz, Saudi Arabia.


Murtabak is therefore a type of Indian bread / pancake, made from a dough that has wheat flour / plain white flour, salt, water, egg, milk, sugar and clarified butter (Ghee). The dough is then rested.

Making a Murtabak often requires several balls of dough, as it is quite large.

Before cooking the Murtabak, the dough is flipped (like a pizza), and then stuffed / topped with a variety of ingredients. These commonly include egg, onions, and 1 type of meat / fish, such as minced mutton (Mutton Murtabak), shredded chicken (Chicken Murtabak), tuna chunks (Tuna Murtabak), sardine chunks (Sardine Murtabak) or minced beef (Beef Murtabak / Daging Murtabak).

Some hawkers also include squid, prawns or crab.

The Murtabak is then folded into a square shape, and fried on a hot skillet with oil / clarified butter (Ghee).

A good Murtabak should be thick and fluffly, with a crisp exterior. It should be liberally filled with stuffing / toppings of meat / fish, with fluffy eggs well mixed into the dough, and sliced / cubbed onions sprinkled throughout.

Murtabak is often served with a side dish of wet curry gravy, sliced cucumbers and tomato ketchup sauce.
