Established in April 2017, Jingimoo (金雞母) is a Taiwanese dessert shop that specialises in modern shaved ice desserts. Considered a hidden find, Jingimoo has quickly attracted a loyal following for its tasty fruit-based shaved ice desserts, which are awesome on warm summer days, as well as hordes of instagrammers seeking their picture-worthy treats.

Ambience at Jingimoo is casual modern, yet attractive in a quaint way. The small floor space has limited seating, so there's typically a queue. Wooden furniture and bright lights stand out against the vibrant blue walls, while the open kitchen allows you to watch the dessert artists craft your dishes. Small touches of faux greenery lend character to this cozy space.

Service at Jingimoo is partial self-service. Every diner is required to order at least 1 item, via a small chit that has both English and Chinese Mandarin. Helpful pictures in the menu means pointing works as well. Staff will serve orders to your table, and I note they display good product knowledge when questioned. Due to the ever present queue, staff quickly clean empty / dirty tables when diners leave.

Food at Jingimoo consists purely of Taiwanese desserts, with a focus on shaved ice and glutinous rice balls. Ingredients largely consist of fruit, and dishes are tasty and refreshing. Portions are large for individuals, and since all customers are required to order something, sharing is best. Prices are comparable to most cafes, and affordable even for students. Budget about NTD $144 / SGD $7 per person for a dessert here. Loved my experience at Jingimoo (金雞母).

The Matcha Glutinous Rice Balls With Hakka Tea & Nuts (NTD $130 / SGD $5.80) has sticky chewy matcha / green tea infused glutinous rice balls, garnished with soft sweet adzuki red beans, floral sweet palm sugar, crunchy nutty chopped almonds and pistachio nuts, surrounded by a bed of matcha / green tea powder, and kinako / roasted soy bean powder. A cup of earthy tea accompanies. I can't objectively comment on this, because I dislike some of the ingredients, and I usually avoid eating them.

The Milk Foam Barley (NTD $95 / SGD $4.20) is a simple dessert that grows on you, and I actually enjoyed it. The creamy smooth milk foam holds grains of tender soft barley within, while the garnish of raisins, chopped almonds, pistachio nuts, adzuki red beans, and pine nuts lend a beautiful contrast for texture, being crunchy and tender. Lovely grainy nutty earthy sweet milky fruity flavours here. Worth ordering!

The Shaved Ice Black Tea (NTD $150 / SGD $6.70) was enjoyable. A large mound of finely shaved ice is infused with earthy black tea, topped with creamy milk foam and crunchy black tea crystals. Combined with the chewy topica sago pearls in a sugar syrup on the side, this has a lovely enticing earthy sweet milky flavour. The shaved ice is really beautiful too, fine enough that it melts away the minute it touches the mouth.

The Shaved Ice Fire Blueberry & Raspberry (NTD $200 / SGD $8.90) is a performance dessert piece. A large mound of finely shaved ice is infused with blueberry compote, raspberry compote, and topped with custard and sugar crystals. Served with chewy glutinous rice balls on the side, the dessert is blow torched right in front of you. As you watch, the sugar crystalises into a caramelised crust akin to a crème brûlée. Each mouthful is a burst of bold fruity sweet flavours. Highly recommended!

The Shaved Ice Lemon Citron (NTD $120 / SGD $5.30) is particularly refreshing. A large mound of finely shaved ice is infused with lemon juice, charcoal foam, and sugar coated lemon slices. Combined with chewy topica sago pearls and crunchy sea coconut strips in a sugar syrup on the side, this has a zesty tangy sour sweet flavour. Nice lively burst, refreshing on warm days. Good!
