Founded in July 2017 but only getting a physical location in West Coast Plaza in January 2018, Waterbath Chef aims to make healthy eating delicious, convenient, and sustainable, while also being affordable and wallet-friendly. Owner Shannen Low is certified in exercise nutrition, and at Waterbath Chef, serves up tasty DIY bowls with her home made 'flavour bombs' that are healthy and wholesome. She also organises weekly workout sessions for the community.

Ambience at Waterbath Chef is modern casual. The small space is neatly lined with comfortable cushioned chairs and light wooden tables, and seats up to 16 people. Love the bright natural light during the day. The display of colourful vegetables and ingredients looks vibrant and attractive, and allows diners to watch as they prepare your meal to order.

Service at Waterbath Chef is completely self-service, with ordering, payment, and collection of orders over the counter. As a family-run business (with some hired help), Shannen Low is often front-of-house plating orders, serving customers, and offering recommendations on the menu. With the limited seating, I generally prefer to clear my own cutlery after a meal, bringing it back to the counter.

Food at Waterbath Chef is Modern Singaporean, with both Western and Asian influences. Dishes are healthy and wholesome, bold on flavour, and you just feel good after a meal. Portions are nicely sized for individuals, and ingredients are fresh. They offer a 'no pork, no lard' menu, and I understand they're in the process of getting halal certification (at the time of this post). Prices are affordable, and I observe many families coming to dine here. Budget about SGD $13 per person for a meal here.

The Fresh Barley With Lemon Slice (SGD $2.50 / $3) is refreshing. The ice lemon tea has a delicate sweet zesty flavour, and the barley grains lend a natural grainy sweetness to the beverage. Nice when served chilled.

The Grass Jelly Fresh Milk Tea With Chia Seeds (SGD $3.50 / $4.90) has a milky earthy sweet flavour, with medium sized cubes of slippery smooth grass jelly, and crunchy chia seeds within. Served chilled, this is a decent dessert beverage.

I enjoyed the Cold Soba With Sous-Vide Salmon (SGD $10.90). Built this bowl with a base of slippery smooth cold soba noodles, smooth flaky sous-vide salmon fish, tender broccoli, chewy lady's fingers / okra, crispy seaweed flakes coated in white sesame seeds, and crunchy honey mustard soya chips, dressed in home made teriyaki flavour bomb. Lovely vegetal sweet savoury salty flavours, makes you crave more. Good!

I enjoyed the Truffle Mashed Potato With Sous-Vide Beef (SGD $10.90). Built this bowl with a base of creamy smooth truffle mashed potato, tender moist strips of sous-vide beef sirloin, wobbly soft-boiled onsen egg, crunchy romaine lettuce, juicy cherry tomatoes, and bright corn kernels, dressed in home made truffle olive oil spray flavour bomb. Bold earthy meaty vegetal sweet savoury eggy flavours, satisfiying and filling. Good!

I loved the Organic Quinoa & Cauliflower With Sous-Vide Chicken Breast (SGD $10.40). Built this bowl with a base of grainy organic quinoa and crunchy cauliflower florets, tender moist succulent sous-vide chicken breast, wobbly soft teriyaki torched tofu beancurd, tender mixed sauteed mushrooms (straw and golden), chewy raisins, and soft crab stick meat, dressed in home made honey ginger soy flavour bomb. Robust and complex layered flavours of smoky sweet savoury salty earthy, completely delicious. Good!
