The Mee Soto And Soto Ayam is a Singaporean Malay dish, featuring either yellow egg noodles (for Mee Soto) or compressed rice cakes (for Soto Ayam), along with chicken, bean sprouts, and other assorted garnishings, in a spiced chicken soup / broth. Also known as Mee Soto Ayam, Soto Mi, or Soto Mie, the Mee Soto And Soto Ayam dish is usually priced around SGD $3 to $7 per serving. It's commonly eaten throughout the day, for breakfast, lunch, dinner, or supper.
The only difference between a Mee Soto And Soto Ayam dish is the base carbohydrate or staple used, which is blanched chewy thick yellow egg noodles with grainy sweet flavour for Mee Soto, and boiled or steamed chunky sticky compressed rice cakes / ketupat with grainy earthy sweet flavour for Soto Ayam. Otherwise, they share similar ingredients for garnishings and toppings. Stalls will typically offer both options at similar prices.
Common ingredients used to complete a Mee Soto And Soto Ayam dish include tender chewy bone-in or boneless chicken meat marinated with turmeric with meaty sweet savoury spice flavour, crisp bean sprouts with vegetal sweet flavour, crisp fresh coriander with vegetal bitter herbal flavour, and crunchy fried shallots with earthy salty savoury vegetal flavour.
It is the thin, clear, and hot soup / broth that gives the Mee Soto And Soto Ayam a signature savoury salty spice sweet flavour. A spice paste of blended shallots, garlic, ginger, galangal, lemongrass, turmeric, coriander, cumin, white pepper or black pepper, salt, white sugar, fennel seeds, curry leaves, and nutmeg, is stir-fried with vegetable oil (and optionally cardamom, star anise, belachan / fermented shrimp paste, or cloves), then stewed with chicken bones and water for up to 2 hours to derive the rich taste of the soup / broth. Their rendition features probably the lightest turmeric infused chicken soup / broth I've tried, thin and clear, warm with mild meaty sweet spice flavour.
Generous portion of chewy yellow egg noodles, crisp bean sprouts, tender boneless shredded chicken, crisp coriander, and soft fried shallot. Carries grainy sweet meaty savoury herbal spice flavour, lower in salt than most.

Their rendition sits on the opposite end of the spectrum than most, being the most heavily seasoned and spiced version. The turmeric infused chicken soup / broth is cloudy and thick, with big meaty savoury salty sweet spice flavour.

The Sapari family has been running this stall since 1973, now in the hands of 3-generation hawker Sumadi Sapari.
Their warm and lovely soup / broth is more complex, with chicken bones simmered with 21 different ingredients, thick and cloudy, robust with meaty savoury earthy salty herbal spice flavour.
