Established in July 2014 by the Ore No Company Limited Group, in Ginza, Tokyo, Kanto, Japan, the Oden Ore-No Dashi store is known for offering high-quality dishes at affordable prices. The intimate atmosphere promises a treat for all the senses, especially Oden Ore-No Dashi signature one-pot dish which is made with a traditional recipe.
Ambience at Oden Ore-No Dashi is cozy and intimate. The dark spot-lit place features floor-to-ceiling mirrors on a wall, across from the counter seating and open kitchen opposite. The fragrant aroma of bubbling dashi / soup stock perfumes the air. Guests dine in hushed tones.
Service at Oden Ore-No Dashi is polite and efficient. Staff work quickly, conversing in Japanese, English, and Mandarin Chinese, offering recommendations or explanations as needed. They engage diners in conversation, and demonstrate good product knowledge. Cleaning up is done quickly.
Food at Oden Ore-No Dashi is traditional Japanese cuisine, focused on Oden / Fish Cake Stew. Their dashi / soup stock is stewed for hours, while the ingredients are prepared fresh daily. The Sake Yuki No Bosha Cabin In The Snow Junmai Ginjo (JPY ¥1,280) is brewed by the Saiya Brewing Company in Yurihonjo, Akita, Tohoku, Japan, using rice polished to at least 60%, water, and yeast, without adding any distilled alcohol. It has a clear transparent colour, with aromas and tastes of peach, strawberry, white pepper, and pear. The body is light, smooth, and soft, with crisp fruity sweet spice flavour. Best served chilled, this has a good balance of acidity, refreshing on the palate.

The Hiyayakko / Chilled Tofu (JPY ¥330) was the appetizer of the day, served once diners have completed placing their orders. Note that the charge is part of the house service charge, and a daily amuse bouche is served as a result. Good!

The presentation of the Poteto Sarada / Potato Salad (JPY ¥580) was more refined, akin to a gourmet style. Shaped like a drawstring money pouch, topped with Anago Shiroyaki / Grilled Saltwater Eel Whitespotted Conger. Delicious too, it served to offer a contrast for the palate throughout our meal. Good!

Presume the Tamago Yude / Boiled Egg (JPY ¥280) was served separately because the main bowl was full of other ingredients we selected. We liked it, nice. Good!

The base of the Oden / Fish Cake Stew (JPY ¥2,680) is a robust yet light dashi / soup stock, made with chicken bones, kombu seaweed, shiitake mushrooms, light soy sauce, dark soy sauce, katsuobushi / dried bonito fish flakes, sababushi / dried mackerel fish flakes, yakiago / dried flying fish, water, and mirin rice wine. The result is a thin light clear transparent soup / broth, bursting with savoury earthy salty fishy sweet flavour.
The ordering method here is that you choose individual ingredients to build your own Oden / Fish Cake Stew bowl. We selected the Daikon Radish (JPY ¥380), the Ganmo Doki / Fried Tofu Patty (JPY ¥380), the Hanpen / Pounded Fish Cake (JPY ¥280), the Atsuage / Deep-Fried Tofu (JPY ¥480), the Roll Kyabetsu / Stuffed Cabbage Roll (JPY ¥780), and the Tsukune / Chicken Meat Balls (JPY ¥380). Each ingredient was large and well-executed, tasty and satisfying. Highly recommended!
