Description:
The Mee Goreng is a Singaporean Indian Malay dish that consists of yellow egg noodles stir-fried furiously with assorted ingredients including vegetables and sometimes meat, usually topped with a fried egg. Also known as Mie Goreng, Fried Noodles, or Mamak Mee Goreng, the Mee Goreng dish is usually priced around SGD $4 to $8 per serving. It's a popular dish commonly eaten for lunch, dinner, or supper.
The base of Mee Goreng consists of yellow egg noodles, stir-fried with salt, kicap manis / dark sweet soy sauce, water, garlic, and edible red food colouring, such as tomato ketchup, chili paste, beetroot paste, or a combination thereof. This gives it a distinct red colour hue that sets it apart from versions in other countries. Vegetables commonly stir-fried in Mee Goreng may include some combination of the following; bean sprouts, cabbage, red chili, green chili, chye sim / Chinese flowering cabbage, red onions, spring onions, potatoes, and shallots.
The protein garnishing for Mee Goreng may include some combination of the following; tofu bean curd, diced beef or minced beef, diced mutton or minced mutton, chicken eggs, fish cake, deshelled prawns / shrimp, squid, and fried chicken pieces. Completed with a fried egg on the top, and fresh cucumber slices glazed with tomato ketchup on the side. A Mee Goreng will have tender chewy crisp juicy soft textures with smoky grainy meaty savoury salty vegetal sweet eggy spice flavours.
A Mee Goreng is best eaten quickly, when served hot and fresh. A versatile dish that can be made with other types of noodles, including bee hoon / rice vermicelli noodles, kway teow / wide flat rice noodles, or instant noodles, the dish name is then changed accordingly as well. Being budget-friendly and quick to prepare, Mee Goreng reflects the rich culinary heritage of Southeast Asia, and is a nostalgic favourite for many.

So this stall is only accessible to air transport personnel and invited business partners. For 2 decades or more, this pakcik often sells out after lunch.
He fries each order individually, so there's usually a queue waiting patiently.
The soft chewy yellow noodles carry a smoky savoury salty spice flavour, contrasted by crisp bean sprouts and juicy cucumbers, both lending a vegetal sweet flavour. Bits of wispy whisked chicken egg lend a slight eggy sweet savoury note.
You can opt to add several ingredients, which most do - from springy fish cake, tender boiled potatoes, soft overeasy chicken egg, to crispy battered chicken cutlet.

Since August 2004, this street side fast casual 24-hour eatery has been a go-to in town, from when I used to work nearby.
Their rendition is among the more aesthetically pleasing, thanks to the perfectly fried chicken egg shaped by a round mould, with eggy sweet savoury flavour.
The dish itself is delicious, the soft chewy yellow noodles, crisp bean sprouts, wispy chicken egg, and tender beef slices, all in a vibrant orange hue, with bold smoky grainy eggy vegetal sweet savoury salty meaty spice flavour.
Bits of chili give it a good fiery kick.

Established since January 2007, this chain of casual eateries is among the more ubiquitous, making it a reliable and convenient option.
Their rendition veers towards the Mamak style common in Malaysia, with the use of light soy sauce and dark soy sauce, omitting tomato ketchup, resulting in a more natural brown hue.
The soft chewy noodles glisten in the light, and together with wispy chicken egg, tender beef slices, crunchy cabbage, and crisp chye sim / Chinese flowering cabbage, this carries smoky grainy savoury salty sweet eggy meaty flavour.
The default is non-spicy, though you can certainly opt for a spicy version if you wish.
