Originating in Rome, Lazio, Italy in May 2015 where it was founded by owners Antonio Petrosino, Davide Tiralongo, and Mirko Petrosino, The Mast Of Mozzarella & Co arrived in Singapore in November 2018, establishing itself as a four-in-one concept with an osteria, delicatessen, bar, and Singapore's 1st ever in-restaurant cheese production laboratory. With a name that translates to 'cheese master', The Mast Of Mozzarella & Co uses high-quality milk from their own buffalo farm in Valle Dei Templi in Capaccio Paestum, Salerno, Campania, Italy, to make exquisite mozzarella, burrata, and stracciatella cheese fresh daily.

Ambience at The Mast Of Mozzarella & Co is casual and minimalist. The bright warm lights and floor-to-ceiling glass panels offer a clear view around the small seating area, while faux greenery lends a pleasing touch to the open counter and wine shelf. There's sheltered outdoor and indoor seating, with modern functional furniture that is decently comfortable. Along the front facing the road, is their cheese lab, where you can catch the cheese masters making new batches fresh every morning.

Service at The Mast Of Mozzarella & Co is professional and attentive. Staff accord each group of diners personalised attention, demonstrated through small thoughtful gestures such as moving beside the person placing the order. They demonstrate good product knowledge, able to answer queries and offer recommendations, as well as describe in brief the dish as it's served. They quickly greet and seat guests, clear finished plates throughout the meal, and clean up efficiently when diners leave. Feels like fine dining standards!

Food at The Mast Of Mozzarella & Co is Southern Italian / Roman cuisine, with their speciality being freshly made mozzarella cheese, burrata cheese, and stracciatella cheese. The menu has a decent range of options, and if there's 1 of the 3 cheeses within, you'll be able to taste the difference; a key sign of freshness. Quality is akin to fine dining standards, consistently well executed. Portions are designed for communal dining in small groups. Prices are reflective of effort, being upper mid-range for a restaurant. Budget about SGD $61 per person for a meal with drinks here.

The Caparzo Sangiovese Toscana 2018 (SGD $65 per bottle) is a red wine made from 100% sangiovese red grapes, by the Caparzo Estate winery in Montalcino, Siena, Tuscany, Italy. It has a deep violet ruby colour, with aromas of blackberry, strawberry, pepper, and vanilla. The body is full, smooth, and soft, with tastes of blueberry, oak, liquorice, and plum. Has a fruity sweet woody earthy spice flavour, with a dry and short finish.

The Crostini E Funghi (SGD $20) here is excellent. A base of crisp toasted baguette bread slice is topped with tender sauteed button mushrooms, grainy truffle paste, and stringy soft stracciatella cheese, served with crunchy wild rocket leaves / arugula and juicy cherry tomatoes on the side. The crostini has a lovely delicate crunch, then you get a bold hit of the earthy sweet savoury milky flavour of the ingredients. The vegetables help to contrast the richness with vegetal earthy bitter sweet notes. Real robust mushroomy flavours here, yum. Highly recommended!

The Burrata Pomodoro E Prosciutto Crudo (SGD $30) features a large, soft burrata cheese, which pulls apart easily and has mild milky sweet cheesy flavour. Surrounded by chewy prosciutto crudo / dry cured parma ham aged for 24 months, which lends a bold salty savoury meaty flavour. Completed with crunchy wild rocket leaves / arugula and fresh juicy tomatoes, which hold vegetal earthy bitter sweet notes. The freshness of the cheese is distinctive with its mild and pleasant notes. Highly recommended!

If you're already here, then you can't go wrong with the 300g Grain-Fed Beef Ribeye (SGD $42). It's a simple yet well-executed beef steak, served with tender roasted baby potates with starchy sweet salty flavour, juicy cherry tomatoes with vegetal sweet notes, and crunchy grilled asparagus with smoky vegetal sweet flavour. The star is the grain-fed beef ribeye steak, tender and moist and succulent with a light chew, deep with robust meaty savoury salty flavour. I felt the veal jus was decent, but didn't contribute much to the dish. Satisfying, well worth the price. Good!

Not your usual carbonara pasta. The Rigatoni Carbonara (SGD $25) features large bouncy rigatoni pasta tubes, coated in a rich cream gravy, thickened with egg and cheese. That said, there isn't much gravy, instead, the pasta tubes are evenly coated in it, resulting in a deep milky sweet savoury salty flavour. The star here is the pancetta pork bacon, juicy fatty meaty cubes that burst with oily savoury salty flavour when bit. Completed with shavings of cheese, sprinkling of black pepper and herbs. Really different from what I'd expect a carbonara to be, but it's a delicious pasta dish nonetheless. Voted our favourite dish of the visit. Highly recommended!

The Pinse Funghi (SGD $27) is a Roman style flatbread, differing from the usual pizza. A rectangle-shaped flatbread, crisp with bready sweet flavour, is layered with fresh tomato paste which has bright vegetal sweet notes, and whose freshness can be tasted on the palate. Among the 3 toppings of tender fresh button mushrooms with vegetal earthy salty sweet flavour, juicy pancetta pork bacon cubes with oily savoury salty flavour, and stringy buffalo mozzarella cheese with mild milky sweet cheesy flavour, the stand-out taste was from the cheese. Actually, this is less like a mushroom pizza, and more like a cheese flatbread that happens to have mushrooms and pork bacon. The crostini had stronger mushroom flavours. Worth ordering!

Originating from the Renaissance era, the Zuccotto Amarena (SGD $12) is a black cherry liqueur-soaked frozen dessert sponge cake filled with ricotta cheese and black cherry. Named after a small medieval spiked helmet but resembling a pear in shape, this has a soft spongy creamy texture, with robust fruity sweet boozy flavour. A rather acquired taste, suitable for those who love cherries, as this primary taste is intense. Worth ordering!

Loved the Tiramisu (SGD $12) here. This classic dessert has soft spongy ladyfinger / sponge fingers generously soaked in strong espresso, layered with creamy mascarpone mousse, and sprinkled with cocoa powder. Bite into the soft, creamy dessert, and you get a burst of deep toasty roasted coffee bean and milk flavours. Topped with juicy blueberries and raspberries with fruity sweet flavour. Highly recommended!
