Description:
The Mee Rebus is a Singaporean Malay dish that consists of yellow egg noodles with assorted ingredients in a thick spice rich gravy. Also known as Mi Rebus, or Mie Rebus, the Mee Rebus dish is usually priced around SGD $3 to $8 per serving. It's a popular dish commonly eaten for breakfast or lunch.


With a name that translates to "Boiled Noodles", it's no surprise that the base of Mee Rebus features boiled yellow egg noodles, chewy soft with grainy sweet flavour. This is typically accompanied by an assortment of ingredients, including crisp bean sprouts with vegetal sweet flavour, spongy tofu puffs with grainy savoury flavour, bouncy hard boiled chicken egg with eggy sweet flavour, crisp fried shallots with vegetal earthy salty savoury flavour, and crisp sliced green chili or red chili with vegetal spice flavour.

The defining element in Mee Rebus is the thick luscious gloopy gravy, carrying robust sweet savoury salty sour zesty tangy nutty earthy spice flavour. The gravy is typically made with a blend of chicken stock or beef stock, mashed potato or mashed sweet potato, dried shrimp or shrimp paste, fermented soy bean paste, garlic, lemongrass, galangal, turmeric, salt, white sugar, lemon juice or lime juice, crushed peanuts, dried red chili, and optionally candlenuts, coriander, or curry powder.

Established by Afandi Ahmad in 1967, this heritage stall is now run by the 2nd generation.

The ingredients are standard, chewy soft yellow egg noodles, crisp bean sprouts, spongy tofu puffs, bouncy hard boiled chicken egg, and crisp green chili, resulting in grainy sweet vegetal savoury eggy spice flavour.

But the star is their gravy, thick, chunky, and viscous, made with a base of mashed sweet potato, fermented soy bean paste, dried shrimp, lime juice, and spices; with the addition of unique ingredients including mutton and flower crab.

The result is an addictive sweet savoury earthy nutty spice flavour to the gravy, comforting and filling.

The base ingredients of chewy soft yellow egg noodles, crisp bean sprouts, spongy tofu puffs, bouncy hard boiled chicken egg, crisp green chili, and crisp fried shallots, carry grainy sweet vegetal savoury earthy eggy spice flavour.

Their gravy is thick gloopy rich, enhanced with a dash of lime juice, and coats the noodles well. Has robust savoury sweet sour tangy zesty earthy spice flavour, yum.

Often sells out after lunch, way before their stated closing time.

Established by Muhammad Sani in 2009, this shop is named for his wife's village in Bandung, West Java, Java, Indonesia.

Their rendition has a base of chewy soft yellow egg noodles, crisp bean sprouts, spongy tofu puffs, crisp green chili, bouncy hard boiled chicken egg, and crisp fried shallots, carrying grainy savoury sweet eggy vegetal spice flavour.

The gravy is balanced but less spicy than elsewhere, thick gloopy smooth with sweet savoury earthy spice flavour. The fermented soy beans are slightly more prominent here, nice.

Finished with a bit of lime juice and kecap manis / sweetened soy sauce, for added sour zesty tangy sweet salty savoury flavour.

Established since 1986 and now run by 3rd-generation owner Muhammad Siddiq Bin Shafrudin, this stall is renowned for tasty and nostalgic meals made using their family recipes.

The chewy soft yellow egg noodles, crisp bean sprouts, springy tofu bean curd cubes, bouncy hard boiled chicken egg, crisp fried shallots, and crisp green chili, carry combined grainy sweet savoury vegetal earthy eggy salty spice flavour.

Their gravy is thick smooth gloopy in texture, with the unique addition of roasted peanuts, curry powder, chilli powder, and ikan bilis / anchovies, resulting in a savoury sweet salty spice nutty flavour.

Roasted fresh daily, their peanut sauce is bold and punchy.
