Founded by Shimon Bokovza in 1999 in New York City, New York, United States Of America (USA), SushiSamba is a global dining and entertainment brand known for its atmospheric locations in cities worldwide. Opening in Singapore at the 52nd floor of Capital Tower in July 2024, the 1st outpost of SushiSamba in Asia offers 360-degree panoramic views of the Central Business District (CBD).

Ambience at SushiSamba is stunning, with tall floor-to-ceiling glass windows that wrap around the restaurant offering exquisite views. The spot lit area is lined with comfortable plush cushioned booths that lend some privacy, while lush greenery lends a natural feel. An open theatre-style kitchen sits at the heart of the main dining floor. An eclectic soundtrack of Afro House, Brazilian, and Latin beats pulses in the background, while occasional performances by samba dancers and live percussionists inject bursts of Carnaval energy.

Service at SushiSamba is professional and discreet, with staff maintaining polished courtesy without hovering. Staff demonstrate good product knowledge in describing the various menus, though order fulfilment requires a short wait. They proactively offer to clear finished dishes, and clean up quickly when diners leave. I also appreciate the table lamp which doubles as ambient photography lights. Head Sommelier Viknes demonstrated good wine expertise in tailored champagne and wine pairings.

Food at SushiSamba Japanese, Brazilian, and Peruvian cuisines, with a range of creative fusion dishes that exude precision and flair. From sharing starters to hearty robatayaki grills, refreshing ceviche's to fun sushi rolls, chunky empanadas to exquisite plated desserts, each dish is a delight. The wide list of drinks complements. Portions are decently sized, some for individuals, others for communal group sharing. Prices command a premium, budget about SGD $180 per person.

The Champagne N.V. Boizel Rosé Brut (SGD $55 per glass) is a champagne brewed from 20% Chardonnay green grapes, 50% Pinot Noir black grapes, and 30% Pinot Meunier red grapes, by the Boizel Champagne House in Cumières, Marne, Grand Est, France. It has a pale pink colour with hints of bronze, and aromas of raspberries, strawberries, cinnamon, and orange zest. The body is generous, velvety, and nuanced, with tastes of white peach, blood oranges, almond, and acacia flowers, carrying floral fruity nutty sweet spice flavour. Has a strong mineral-driven finish that lingers on the palate.

The Cocktail Espresso Martini (SGD $22) is a blend of vodka, Kahlua coffee liqueur, espresso, white sugar, water, and coffee beans. It has a deep mahogany brown colour, with aromas and tastes of dark chocolate, roasted almonds, caramel, and toffee. The body is rich, bold, and deep, with toasty floral earthy bitter sweet boozy flavour, and a lingering finish.

The Calamari (SGD $18) features chunks of squid marinated with dry white miso paste and shichimi, coated with a spiced flour batter, then deep-fried to golden perfection. It is crisp springy in texture with savoury salty earthy spice flavour, so addictive. Served with juicy jalapenos with vegetal spice flavour, and creamy yuzu mayonnaise with zesty tangy sour milky sweet flavour. Good!

The Shrimp Tempura Sushi Roll (SGD $28) features crisp juicy crunchy tempura battered deshelled tiger prawn, layered with creamy avocado, wrapped with crisp dried seaweed and sticky vinegared sushi rice, topped with tender bluefin tuna loin and a dollop of creamy shichimi mayonnaise. Carries bready savoury sweet vegetal earthy salty grainy sour meaty milky spice flavour. A lot going on at once, yet pleasant and tasty, though the flavours tend to blend into each other rather than remaining distinct. Worth ordering!

The Angus Beef Tenderloin Aji Panca (SGD $98) is excellent. There are 2 pieces of 200g beef tenderloins, each perfectly grilled to your choice of doneness; we opted for medium-rare in this case. Seasoned with salt and black pepper, the beef is tender juicy succulent in texture, with robust smoky meaty savoury salty flavour. Topped with creamy foie gras with savoury salty fatty flavour, and crisp garlic chives with vegetal herbal flavour. On the side are crunchy firm grilled broccolini florets with smoky vegetal salty sweet herbal flavour, yum. Highly recommended!

Loved the Black Cod, White Miso, Hajikami (SGD $84), which features a deboned fillet of black cod fish, marinated with white miso paste, then perfectly grilled. Has a smooth tender flaky texture with smoky sweet savoury salty earthy fatty flavour. Served with juicy crisp hajikami syoga / pickled ginger sprout with vegetal sour sweet flavour, and crunchy firm grilled broccolini florets with smoky vegetal salty sweet herbal flavour. On the side is a dollop of creamy shichimi mayonnaise with milky sweet spice flavour. Enjoyed this immensely. Highly recommended!

The Caramelised Pineapple (SGD $22) dessert features a creamy smooth base of coconut crème brûlée with custardy floral earthy sweet flavour, topped with a crispy caramelised sugar crust and juicy caramelised pineapple chunks with fruity sweet flavour. Finished with a creamy smooth scoop of coconut sorbet ice cream with milky floral earthy sweet flavour. Portion is large and filling, best shared. Highly recommended!
