Description:
The Mee Siam is a Singaporean Malay Chinese Peranakan dish that consists of rice vermicelli noodles with assorted ingredients in a thin spice rich gravy. Also known as Siamese Noodles, or Mie Siam, the Mee Siam dish is usually priced around SGD $3 to $8 per serving. It's a popular dish commonly eaten for breakfast or lunch.
Mee Siam is said to be inspired by Thai cuisine (hence its name), specifically, the Thai dish known as Mi Kathi. The base of Mee Siam features blanched white rice vermicelli noodles, springy with grainy sweet flavour. This is typically accompanied by an assortment of ingredients, including crisp bean sprouts with vegetal sweet flavour, spongy tofu puffs with grainy savoury flavour, bouncy hard boiled chicken egg with eggy sweet flavour, crisp fried shallots with vegetal earthy salty savoury flavour, and crisp fresh garlic chives with vegetal herbal flavour.
The defining element in Mee Siam is the thin light yet punchy gravy, without being overly watery, carrying robust sour zesty tangy sweet spice flavour. The gravy is typically made with a blend of water or chicken stock, dried shrimp or shrimp paste, fermented soy bean paste, garlic, tamarind juice, salt, white sugar, lemon juice or lime juice, dried red chili, and optionally candlenuts.
Best eaten quickly when hot, an appetizing Mee Siam has every mouthful of noodles picking up the gravy. Simple and quick to prepare, a straightforward light meal, the Mee Siam is a staple and affordable hawker dish. There are also dry versions of Mee Siam without the gravy (being stir-fried instead), using similar ingredients and carrying the same flavours and textures.

What I like here is the punchy thin gravy, the zesty sour tangy sweet spice flavour enticing and addictive.
The standard springy rice vermicelli noodles, crisp bean sprouts, crisp garlic chives, and bouncy hard boiled chicken egg, carry grainy sweet eggy savoury vegetal herbal flavour.
No tofu puffs, instead, there are several crunchy deshelled prawns with meaty sweet savoury flavour.
A dollop of chunky sambal belachan lends shrimpy savoury salty spice flavour for added kick.

Family-owned since the early 1970s, this beloved stall was originally run by the mother of Madam Chen Mei Ying, though she now runs the stall with her son.
Prepared fresh daily over 3 hours, tweaked with lower sugar and salt, the thin yet punchy gravy is still big on taste, being sour zesty tangy sweet spice in flavour.
The springy rice vermicelli noodles, crisp bean sprouts, crisp garlic chives, tender tofu bean curd, spongy tofu puffs, and bouncy hard boiled chicken egg, carry grainy sweet vegetal herbal savoury eggy flavour.
