Founded in June 1984 in Abeno ward, Osaka city, Kansai region of Japan, Sushiro has grown to be the largest casual eatery chain of kaiten zushi / revolving belt sushi, with over 670 outlets worldwide. Sushiro opened in Singapore in August 2019, and has since expanded to 9 outlets across the island. Renowned for serving fresh, good quality sushi, in a comfortable setting, at wallet-friendly and affordable prices, Sushiro has a dining time limit of up to 1 hour per table.

Ambience at Sushiro is modern, casual, and functional. The brightly lit place is neatly packed with booth and counter seats, in a layout that offers some measure of privacy. Each seat is served by 2 conveyor belts, the top belt is for specific orders from the table, while the bottom belt is the open category. The place is lively and buzzing, with medium levels of ambient background noise. There's usually a short queue of about 15 minutes, and their ticketing system helps manage in an orderly fashion.

Service at Sushiro is polite, efficient, and transactional. The only interaction with staff is at the point of ticketing for a queue number, when you're seated, and at payment. Staff will explain the ordering instructions tableside, though they tend to rush through it. The menu, both physical and digital, is clear with pictures and descriptions, making it easy to order. No opportunity for serving staff to demonstrate product knowledge, but the kitchen team is definitely familiar with promotional or seasonal dishes.

Food at Sushiro features classic Japanese cuisine and modern Japanese Fusion cuisine, with a focus on zushi / sushi. Ingredients are of good quality, and dishes are fresh; technology such as an integrated circuit (IC) chip at the bottom of each plate tracks how far the plate has travelled on the conveyor belt, it's removed upon reaching the limit (for example, 350 meters). The different plate colours are indications of price, red being the cheapest at SGD $2.30 per plate, grey at SGD $2.90 per plate, gold at SGD $3.90 per plate, and black being the premium at SGD $4.90 per plate.

There's other dishes beyond zushi / sushi here at Sushiro, from ramen to mille-crepe cakes. Sushiro also has a rotating menu of promotional or seasonal dishes, some curated in partnership with other Japanese brands. Portions are sized for individuals, with each plate having 1 or 2 pieces of sushi. Prices are wallet-friendly and affordable, budget about SGD $50 per person.

The Beer Suntory The Premium Malt's (SGD $8.80) is a traditional Pilsner. It has a light straw golden colour, aromas of grains, corn, and malt, with a clean, light, crisp body that has medium carbonation. Taste is of lemon citrus, hops, wheat, and barley, smooth and sweet with a tinge of sour, almost creamy. Finish is dry and sharp. Refreshing and drinkable.

The Sake Morita Nenohi White Peach Daiginjo (SGD $30) is a sweet sake made with 30% white peach juice and 70% daiginjo sake / rice wine, using Yamadanishiki rice and Gohyakumanngoku rice polished to 50%, brewed by the Morita brewery in Sakae ward, Yokohama city, Kanagawa prefecture, Kanto region of Japan. It has a cloudy white pink colour, with aromas and tastes of peach, spring water, white rice, and straw. The body is thick, smooth, and lively, with mellow fruity sweet grainy flavour, a gorgeous aroma and a refreshing finish.

My family thinks the Chawanmushi With Scallop (SGD $3.50) is the best version of this dish they've ever had. The warm, dashi-infused egg custard is wobbly soft with enticing eggy sweet savoury earthy flavour. The garnishings within are more generous than elsewhere, including bouncy steamed scallop, soft fish cake, tender boneless chicken chunk, and soft deshelled prawn / shrimp, all of which pick up the infused flavours. Loved every bite of this, we ordered another round. Highly recommended!

The Fresh Potato Salad (SGD $3.50) features a large serving of mashed potatoes, creamy and chunky soft in texture, garnished with crunchy kombu seaweed and juicy globules of tobiko / flying fish roe. This house-made kaisen poteto sarada / fresh potato salad carries bright starchy briny salty sweet earthy flavour, and is notably lighter and more refreshing than versions elsewhere. Good!

The Chicken Karaage (SGD $5) represents good value for money, with 5 medium sized pieces of chicken karaage, crisp crunchy on the outside, tender juicy on the inside, so satisfying. Bite in and you get a burst of warm meaty savoury salty spice flavour. Rather addictive, served with a creamy mayonnaise which lends added milky sweet flavour for contrast. Good!

Loved the Octopus Karaage (SGD $5), it was surprisingly good. This has 5 medium sized pieces of octopus tentacle karaage, crisp and crunchy with a light batter on the outside, while being chewy bouncy moist on the inside, incredibly tasty. Has robust warm savoury spice salty sweet flavour. So delicious, we keep ordering more of it each time. Highly recommended!

Naturally, all zushi / sushi items are served over a bed of vinegared rice, their version is sticky and soft and moist in texture, with a faint hint of grainy sweet flavour. For the nigiri style, the ingredient is laid on top. The gunkan style also has the ingredient on top, but it comes wrapped in a sheet of crisp dried seaweed which lends added vegetal salty savoury earthy flavour to the zushi / sushi.

The 04 Cuttlefish With Soy Sauce Sushi (SGD $2.90) is done right. The main hurdle of ika / cuttlefish (its bland one-note taste) is overcome here, with the addition of a blend of usukuchi shoyu / light soy sauce and koikuchi shoyu / dark soy sauce as a marinade. Has a bold salty savoury earthy sweet flavour and a slippery crunch to texture, while a garnish of crisp spring onions lend a vegetal sweet herbal note. Nicely satisfying. Worth ordering!

The 09 Vinegared Mackerel Sushi (SGD $2.30) has medium thin fillets of shime saba / vinegared blue mackerel fish, soft and tender with a juicy succulent texture, and bright sour sweet fishy zesty flavour that's rather pleasant. The marinade for curing the fish is made from a blend of rice wine vinegar, white vinegar, white sugar, and salt. Good!

With a crisp crunch to the exterior and a soft gentle bite to the interior, this carries addictive savoury sweet salty fishy flavour that is delicious. Certainly never had anything like this before, the 13 Salt Marinated Pork Belly Sushi (SGD $2.90) is a novel dish. It features thin slices of tender moist shio dare buta bara / salt marinated pork belly, carrying robust meaty salty sweet savoury flavour that masks any gamey taste. A sprinkling of cracked black pepper lends a hint of peppery spice flavour. Interesting zushi / sushi. Worth ordering!

The comforting 14 Beancurd Skin Sushi (SGD $2.30) has juicy spongy soft abura-age / twice-fried tofu beancurd skin, stuffed with vinegared rice. Also known as inari after the Japanese god of rice cultivation protection, this has a lovely grainy sweet savoury flavour; which in mythology is the preferred food of foxes (who are inari's messengers). Good!

The 15 Energy Boost Sushi (SGD $2.30) is an interesting modern fusion dish. This has juicy spongy soft abura-age / twice-fried tofu beancurd skin, stuffed with vinegared rice, topped with tender boiled beef strips, soft caramelised white onions, bouncy soft-boiled ramen egg, and crisp spring onions. Named because it's supposed to sate hunger and grant energy, this has lovely vegetal meaty grainy sweet savoury eggy salty herbal flavour. Good!

Didn't think I would enjoy the 23 Galbi Beef Sushi (SGD $2.90) as much as I did, it was a pleasant surprise. The springy marinated galbi gyuniku / beef short rib slices have a light chew to texture, with yummy meaty savoury salty sweet flavour. Garnished with crisp spring onions which lend vegetal sweet herbal flavour. Tasty enough that we got another round of it. Highly recommended!

A novel idea with the 24 Wasabi Marinated Octopus Sushi (SGD $2.30), taking the classic Japanese appetizer and turning it into zushi / sushi. This has takowasa / wasabi marinated raw octopus, crunchy juicy slippery in texture, generously piled on top of the sushi. Carries sharp spicy vegetal salty sweet herbal flavour, certainly awakens the palate. Good!

A rather uncommon ingredient in other Japanese restaurants in Singapore, the 25 Surf Clam With Lemon Basil Sushi (SGD $2.30) features a plump bouncy nama hokkigai karatsuki / sakhalin surf clam, a species of edible saltwater clam. On its own, this shellfish has a mild briny salty sweet flavour. I appreciate the enhancement of lemon juice and crushed basil leaves, which layer sharp tangy zesty sour vegetal herbal earthy flavour over, bright and refreshing. Good!

Their rendition of 31 Crab Stick Mayonnaise Salad Sushi (SGD $2.30) is potentially the weakest item on the menu, and among the few dishes I disliked here. Heavy on mayonnaise, with an odd sour note to the shredded kanikama / crab stick surimi, the delicate sweet savoury taste is sadly overwhelmed. Could be improved.

It also lacks sufficient salty flavour to go with the savoury notes, though adding some sauce managed to salvage this. Could be improved.

A unique combination of ingredients, the 36 Squid Okra Seaweed Sushi (SGD $2.30) blends finely diced ika / squid, okura / lady's finger / okra, and wakame / sea mustard seaweed. Visually, it all looks incorporated to the extent you can't tell the ingredients apart. But you can taste the distinct difference, from the slippery crunchy gooey layers of texture. Has a bright vegetal earthy herbal sweet savoury flavour, a novel touch. Good!

The shoyu / soy sauce broth has a pleasant salty sweet savoury flavour, nicely balanced. Actually can serve as a wallet-friendly meal on its own. Good!

The Soft Serve Ice Cream With Mango Sauce (SGD $3.50) is nicely cold and refreshing, though the texture of the soft serve ice cream was really soft, and it started melting fairly quickly. With the lashings of mango sauce, this has lovely floral fruity sweet flavour. I wish it held up longer though. Worth ordering!

The Mille Crêpe Cake Strawberry Melba (SGD $5) was excellent, and good value for money. The mille crêpe cake itself was soft and creamy, the layers of thin crepe and fluffy cream combining for a lovely floral sweet eggy flavour. The rich strawberry melba sauce lends bright fruity sour sweet flavour, while the thick chunky adzuki red bean paste on the side holds deep earthy sweet grainy flavour. I liked this dessert more than I thought I would. Good!
