Established in Shanghai, China, in October 2011, Mellower Coffee has grown to become one of the leading Western style coffee chains across the country. Expanding with their 1st global outlet in Singapore, which opened in April 2016, Mellower Coffee is known for their tasty yet incredibly photogenic drinks and desserts.

Ambience at Mellower Coffee is a highlight. The place exudes a casual, relaxing vibe, with its warm spotlights, ample natural sunlight, and earthy calming colour tones of beige, white, blue, wood, and grey. Comfortable cushioned furnishings, in eclectic forms, line the spacious, open floor. Incredibly friendly and welcoming design, makes you want to linger on here. They even offer free wifi connectivity and power sockets!

Service at Mellower Coffee is completely self-service, with ordering, payment, and collection over the counter. However, staff are friendly, and display good product knowledge when questioned, particularly on the range of drinks and coffee blends available. Perhaps as part of the relaxed atmosphere here, empty / dirty tables are not efficiently cleaned when diners leave.

Food at Mellower Coffee is largely limited to Western style snacks and desserts, such as pies, quiches, and cakes. Personally, I find the savoury snacks to be underwhelming in taste and texture, not that great. However, their desserts are well executed, tasty, and photo-worthy. Portions are sized for individuals. The highlight here is, of course, the coffee. Good variety of speciality coffee beans, freshly hand-brewed. Prices are comparable to other cafes, budget about SGD $22 per person for a meal here.

While the Chunky Steak Pie (SGD $5.80) has a crisp, flaky pie crust on top, the sides are thick, doughy, and not so pleasant to eat. At least the filling is tasty, the tender cubes of beef and carrots are coated in a rich savoury salty gravy, and it's warm and satisfiying. Portion of filling could be more generous. Decent at best.

The Tuna Puff (SGD $5.80) is decent, with a crisp, flaky pastry crust, and a slight hint of buttery flavour. Within is savoury but dry chunks of tuna fish. It's light, without any unpleasant fishy aroma. Average quality for a pastry.

The Ham & Spinach Quiche (SGD $5.80) is decent enough in taste, the salty savoury strips of ham complemented by the earthy vegetal sweet spinach. The eggy and crumbly quiche pastry shell has a light buttery fragrance. However, it's also a little dry in texture. I like that it's sized slightly larger than elsewhere. Average at best.

The Salted Caramel Cheesecake (SGD $7) features a proper American style cheesecake, moist and dense and creamy smooth in texture, topped with a layer of thick, gooey salted caramel sauce, and caramelised nuts for crunch. The bold salty sweet flavours of the sauce contrast nicely with the more delicate milky sweet taste of the cake. A righteous dessert. Highly recommended!

The incredibly pretty Galaxy Cream Cheese Rainbow Cake (SGD $8) features a vibrant, colourful rainbow cake, which has a soft, moist, fluffy texture, and a bold sweet vanilla flavour. Very nice! The cream cheese frosting is rich and smooth, while the glaze on top is beautifully patterned in shades of black and white, very attractive. Good!

Whilst better known for their visually stunning beverage creations, the Caffe Latte (SGD $6.20) here is pretty good. With a medium strength of body and a fragrant aroma of roasted coffee beans, this is sufficiently strong and perky. Lends confidence that their other coffee-based beverage creations will be just as good. Also love the precise latte art.

The Sweet Little Rain (SGD $9.80) is the house signature dessert beverage, created by Korean barista champion and resident coffee director Kim Jinkyu. Essentially, a white ball of cotton candy floss is suspended above a steaming cup of Americano (espresso coffee brewed with hot water, unsweetened).

The steam wafts upwards, condensing on the cotton candy floss, which then drips as sugar syrup back into the cup below. Very pretty, and a unique idea, though it takes about 15 minutes or so for the brew to be properly flavoured. Rather messy too, as the sugar syrup also drips around the outside of the cup. The taste is decent, but light in strength.

The Ondeh X Latte (SGD $9.80) is a fusion beverage homage to the traditional Malay dessert of onde-onde / klepon. A glass of pandan / screwpine leaf infused coconut milk, laced with gula melaka / palm sugar and sprinkled with dessicated coconut shavings, paired with a piping hot, robust and strong shot of espresso coffee. Mix both together, and savour this refreshing chilled beverage, with its floral earthy sweet notes.

The name of the Frangelico's Nuts (SGD $9.80) gives away its alcoholic nature. A strong, robust espresso coffee, fortified with Frangelico hazelnut and herb flavoured liqueur, along with milk, cocoa powder, and hazelnut syrup. The result is a nutty layer of flavour, overlaid on the coffee beverage. Stir well before drinking it, by sipping via the straws.

Created for Halloween 2017, the Goth Latte (SGD $9.80) features a regular latte, infused with dark bamboo charcoal, which is said to aid digestion. Strength is medium light, with an earthy sweet smoky note in taste. Looks visually appealing, but those who like their coffee strong will be disappointed with the weakness in this.

The Vietnamese Filter Coffee (SGD $9.80) here resembles the classic version. Strongly sweet condensed milk, rich and creamy in texture, mixed with roasted Robusta coffee bean, strained via a traditional drip filter. A glass of ice is served on the side, allowing you to quickly pour the coffee in to cool it. Good for those who like their coffee sweet, or strong. Worth ordering!
