The Nasi Lemak is a Singaporean Malay or Singaporean Chinese dish, featuring rice infused with coconut milk and aromatics like pandan / screwpine leaves, then served accompanied by an assortment of ingredients. Also known as Nasi Gemuk, Nasi Uduk, Nasi Liwet, or Coconut Rice, the Nasi Lemak dish is usually priced around SGD $1 to $15 per serving. It's commonly eaten throughout the day, for breakfast, lunch, dinner, or supper.
The base of Nasi Lemak has long-grain white rice infused with coconut milk or coconut cream, water, pandan / screwpine leaves, salt, ginger or galangal, and optionally, white sugar or lemongrass. Established in June 2005 by wife-husband owners Masita Ghani and Mohammad Firuz Samuri and named after their son (Ashraff, nicknamed 'Aliff', who now helps out here), this stall is beloved for their traditional, unpretentious, everyday-comfort rendition.
The neatly plated dish has a bed of fragrant long-grain basmati rice, the aroma and taste of coconut milk and pandan / screwpine leaves gently perfuming the dish, carrying grainy earthy milky floral sweet flavour. The crispy crunchy deep-fried ikan bilis / anchovies is golden with a mild fishy salty savoury balanced flavour, while the juicy cucumber has vegetal sweet flavour, and the wobbly soft fried chicken egg carries eggy savoury sweet flavour.
The otak-otak / otah / spiced mackerel fish paste is soft with a lingering kick of fishy savoury spice flavour, while the deep-fried turmeric marinated chicken wing has a crisp exterior and a tender interior that bursts with meaty savoury salty spice flavour. Registered in June 1990 but operating since 1985, this stall was founded by Susan Koh, 3rd sister of the Koh Family behind the equally famous Ponggol Nasi Lemak and Mount Faber Nasi Lemak brands. Her stall is known for being the most artisanal and hands-on amongst the 3 brands, with unique Indonesian inspired dishes.
The long-grain basmati rice tends towards moist and sticky, with a fragrant but mild grainy earthy milky sweet salty flavour, light on salt and coconut milk. The crisp deep-fried ikan bilis / anchovies are the tiny version, crunching with mild salty savoury fishy flavour. The wobbly soft fried chicken egg carries eggy savoury sweet flavour. The soft otak-otak / otah / spiced mackerel fish paste has fishy savoury spice flavour. Most diners are happy with the juicy cucumbers with vegetal sweet flavour, which are free-flow and self-service.
There are 2 signature dishes here. The stir-fried petai / stink beans with shallots and wing beans in chili carries a bright crunch to texture, bursting with vegetal earthy bitter grassy savoury spice flavour. The ayam kicap manis / sweet and spicy soy sauce chicken wing is tender and juicy, the marinade lending a bold meaty sweet savoury salty spicy flavour. Established well before September 2015 and also known as 'Padang Banana Leaf Rice Nasi Lemak', this stall is a familiar fixture in the area, well-frequented at all hours throughout the day and night for its wide variety of dishes.
Their short-grain rice has a unique green colour, infused with more pandan / screwpine leaf essence than coconut milk, resulting in a pleasant grainy floral earthy sweet flavour. The firm crunchy deep-fried ikan bilis / anchovies with roasted peanuts have fishy salty savoury earthy nutty flavour, while the wobbly soft fried chicken egg has eggy savoury sweet flavour. The crunchy achar / Peranakan pickled salad carries a pronounced vegetal sour sweet spice flavour, rather sharp on the palate.

The bed of fluffy loose long-grain white rice is steamed with extra virgin coconut oil, imparting a delicate coconutty earthy floral sweet grainy flavour. The juicy cucumber slices carry vegetal sweet flavour, while the crisp crunchy deep-fried ikan bilis / anchovies with roasted peanuts have fishy savoury salty nutty flavour. The fried over easy chicken egg is soft and springy with eggy savoury sweet flavour.

Descended from the famous Selera Rasa Nasi Lemak when it was founded in May 2015 by 2nd-generation owner Doctor Abdul Malik Hassan, this modern homegrown chain is among the most accessible and ubiquitous, with nearly 50 outlets across Singapore.
Consistent in quality and taste, their fluffy loose long-grain white rice carries distinct floral earthy grainy sweet flavour. The crunchy deep-fried ikan bilis / anchovies carry fishy salty savoury flavour, the firm roasted salted peanuts have nutty savoury salty flavour, and the wobbly soft fried chicken egg with runny yolk releases pleasant eggy savoury sweet flavour.
The soft otak-otak / otah / spiced mackerel fish paste is decent with fishy savoury spice flavour, and the tender springy breaded fish surimi fillet has sweet savoury flavour. The deep-fried turmeric marinated chicken wing, while smaller in size than their parent brand, is tender and juicy with smoky meaty savoury salty spice flavour, best eaten when piping hot. Established in June 1983, this stall caters primarily to hungry university students and port workers, the result of which means large and generous portions at affordable wallet-friendly prices, coupled with long operating hours through most of the day and night. The place isn't a culinary bastion, but it is a place for fast, cheap, and good eats.
The sticky and moist white rice carries a mild fragrance of coconut cream, a touch of grainy earthy floral sweet flavour. The achar / Peranakan pickled salad is crunchy and juicy with bright vegetal sour sweet spice flavour, the deep-fried ikan bilis / anchovies is crisp and crunchy with fishy savoury salty flavour, and the fried chicken egg with runny yolk is wobbly and soft with eggy sweet savoury flavour.
The sotong / squid balls are springy bouncy with savoury sweet flavour, the battered crab stick surimi is tender and crisp with mild sweet savoury briny salty flavour, and the battered chicken wing is tender though not as crisp as I'd hoped yet carrying meaty sweet savoury flavour. This heritage stall has been operating for more than a decade, my earliest recollection of dining here being April 2012.
Their rendition has a generous mound of fluffy soft long-grain coconut rice with grainy earthy floral sweet flavour. The crunchy juicy thick cucumber slice carries vegetal sweet flavour, the soft springy fried chicken egg has eggy savoury sweet flavour, and the crunchy firm crispy deep-fried ikan bilis / anchovies with roasted salted peanuts have fishy savoury salty nutty flavour.
The turmeric marinated chicken wing is deep-fried beautifully, with a crisp exterior and tender interior, carrying meaty savoury salty spice flavour. Their sambal tumis / stir-fried chili paste is partly grainy partly smooth, with pleasant savoury sweet spice flavour.

Established sometime in the 1990s by Che Katijah (otherwise fondly known as Mak Jah), the day-to-day running of this popular stall has since been passed down to her daughter, Nooraini Mohamed.
Their rendition has a bed of long-grain white rice infused with coconut milk, fluffy and loose with grainy earthy floral sweet flavour. The deep-fried ikan bilis / anchovies crunch satisfyingly with fishy salty savoury flavour, while the thin cucumber slices are juicy with vegetal sweet flavour. The fried chicken egg is crisp around the edges, soft towards the center, with a runny yolk and eggy savoury sweet flavour.
The breaded fish surimi fillet has a tender springy chew with sweet savoury flavour, while the golden spice battered chicken wing has a crunchy exterior with a tender interior and meaty savoury salty spice flavour that carries a hint of ginger and turmeric. The sambal tumis / stir-fried chili paste is smooth and tends towards sweet savoury spice in flavour, with a mild kick at the tail.

Founded in 1979 by husband-and-wife team of Ang Chye Choon and Madam Koh Ah Tan, the latter being the 1st sister (and eldest) of the Koh Family behind the equally famous Mount Faber Nasi Lemak and Bali Nasi Lemak brands. Known for being the most accessible yet commercial entity amongst the 3 brands, with crowd-pleasing dishes.
Their short-grain jasmine white rice is gently infused with coconut milk and pandan / screwpine leaf essence, fragrant and fluffy with mild grainy earthy milky floral sweet flavour. The tiny deep-fried ikan bilis / anchovies are crispy crunchy in texture with mild salty savoury fishy flavour, while the cucumber slices are juicy and burst with vegetal sweet flavour. The sunny side up chicken egg is wobbly soft and carries eggy savoury sweet flavour, the lovely runny yolk just beautiful.
The sotong / squid balls are bouncy with savoury sweet flavour, while the signature achar / Peranakan pickled salad (comprising cucumber, pineapple, shallots, garlic, ginger, lemongrass, turmeric, white vinegar, white sugar, salt, red chili, and crushed peanuts) is crunchy juicy crispy in texture with vegetal sour sweet spice nutty flavour. The highlight is the large chunky battered chicken drumstick, crisp outside tender inside, with robust meaty savoury salty flavour. The chunky sambal tumis / stir-fried chili paste carries deep savoury salty spice flavour.

Established in 1998 by couple Hassan Abdul Kadir and Aminah Binte K. Omar, this legacy brand is amongst the most well-regarded in Singapore, counting Southeast Asian royalty, dignitaries, and heads of government amongst their customers. Today, it remains family-run by their descendants, including founder of Crave Nasi Lemak and their eldest son, Doctor Abdul Malik Hassan.
Their rendition features a bed of long-grain basmati rice infused with coconut milk, lemongrass, and pandan / screwpine leaves, resulting in a fluffy loose soft moist texture with beautiful grainy earthy floral sweet herbal milky flavour. The deep-fried ikan bilis / anchovies with roasted peanuts are crispy crunchy firm in texture, shattering with fishy salty savoury earthy nutty flavour. The thin cucumber slices are crisp and juicy in texture with vegetal sweet flavour, while the fried chicken egg is soft and wobbly in texture with eggy savoury sweet flavour.
The otak-otak / otah / spiced mackerel fish paste is pliant and soft in texture, carrying fishy savoury spice flavour. The turmeric marinated and battered chicken wing has a lovely crunch to the exterior, a warm tender juicy chew to the interior, and lovely meaty savoury salty spice flavour. Their grainy sambal tumis / stir-fried chili paste has a bigger sweet salty spice flavour kick compared to elsewhere. Additional crispy bits of batter lend an addictive crunch.
