Opening in October 2017, Nuodle is a halal-certified noodles store that serves hand-pulled Chinese noodles, specifically, the Lanzhou variety. Novel idea, as this is an uncommon cuisine for most Muslim friends, Nuodle has thus attracted long queues almost daily, thanks to their tasty and consistently well-executed food.

Ambience at Nuodle is simple modern casual. The light wooden cushioned furniture and medium lighting, along with its linear arrangement, make the place seem welcoming. High seating near the open kitchen allows you to watch the chefs at work. Oriental touches of decor complete the look. The place is usually buzzing during meal times.

Service at Nuodle is largely self-service, with ordering, payment, and collection of orders over the counter. That said, staff are friendly, and offer greetings to diners upon entry. Don't expect much product knowledge, though I note staff do their best to fulfill requests. They're also quick to clear away empty / dirty tables when diners leave, quite efficient.

Food at Nuodle is focused on Chinese Lanzhou hand-pulled noodles, with a limited menu. There are only 2 different main courses on the menu - beef noodles and seafood noodles, with several customisation options for each. This also means consistency; the dishes are generally tasty. Portions are large for individuals, and can be shared. Prices are comparable to a cafe, budget about SGD $17 per person for a meal here.

A straightforward Lemon Tea (SGD $2.65), served in a small jug. Has a zesty sweet sour flavour, more refreshing than cloying.

I prefer the Sour Plum Drink (SGD $2.65), with its fruity sour sweet flavour. Served in a small jug, this is lighter, and more refreshing, as a beverage.

The star dish is the Signature Beef La Mian Noodles (SGD $8.65 / $11.95). Choose the style of your noodles; thin, normal, thick, flat, or leek leaf shaped. The hand pulled noodles are soft and springy with a light chewy texture, done in the traditional style of Lanzhou, Gansu, China. Served in a warm but incredibly tasty soup / broth, which looks thin but has big beef flavour. I prefer the version which has chili oil, for a little bit of kick. The marinated beef slices have a tender chew with savoury meaty flavour, while the beef tendons have a slippery crunch to texture. Finished with tender vegetal sweet daikon radish slices, and spring onions. Good!

They have a variety of side dishes. I usually get the Soft-Boiled Egg (SGD $1.60), because it goes well with the warm soup / broth. Will share the additional Sliced Beef (SGD $8.65) for a more satisfiying meal, this has a tender chew with savoury meaty flavour. The Pickled Cucumber (SGD $2.60) is a refreshing side dish, for its juicy, vegetal sweet sour flavour and crunchy texture.

Best eaten quickly when served piping hot, the Beef Pancake (SGD $6) has a crisp, flaky, crunchy outer pastry shell, enveloping tender marinated beef slices and scallions within. Bite in, and you get the bold meaty savoury flavour. Better than I expected. Worth ordering!

Update Sep-2020: Returned to Nuodle for more of their signature hand-pulled noodles, and their tasty soup, perfect on cold days. The menu at Nuodle has expanded, with more options available, and while prices have remained about the same, portion sizes have decreased. Due to the COVID-19 pandemic, seating at Nuodle is less cramped these days, with appropriate spacing between tables.

The Pickled Cucumber (SGD $2.80) remains a refreshing side dish, for its juicy, vegetal sweet sour flavour and crunchy texture. But the portion size is halved from before.

Slight change with the Braised Eggs (SGD $1.90 per piece), as it's now served whole instead of halved. Price has slightly increased, but still worthwhile to add for its earthy eggy sweet flavour and wobbly soft texture.

Served chilled, the lovely Black Fungus Salad (SGD $2.80) has crunchy slippery black fungus / cloud ear fungus pieces, with a slightly sour, bold earthy vegetal flavour. Some tender white onions and red chili complete, giving this a sweet spice note.

Served chilled, the Tofu Skin Salad (SGD $2.80) has a pleasant chewy soft texture, with mild grainy sweet spicy flavour. The tofu beancurd skin is tossed with tender carrots and drizzled with chili oil, I only wish it were slightly more spicy.

Was disappointed with the Pan-Fried Chicken Dumplings (SGD $3.90) which had a doughy thick and dry dumpling skin, with little minced chicken within.

The Beef Ball Soup (SGD $6.80) has their signature warm but incredibly tasty soup / broth, which looks thin but has big beef flavour. Filled with big bouncy beef balls, which were a tad more salty than savoury meaty in flavour. Slices of tender daikon radish with vegetal sweet salty flavour, and fresh crunchy spring onions with vegetal sweet flavour completes this sharing dish.

Update 15-Dec-2023: TL;DR - Undandy has seemingly ceased operations and / or gone bankrupt. They owe worldwide customers nearly 2 years worth of unfulfilled orders and refunds. Angry public feedback on multiple channels. Undandy customer service email addresses are offline, but their website is still live. Buyer Beware.

On 25-July-2022, I placed an order for 3 pairs of customised shoes from Undandy. As of 15-December-2023, I have neither received the order, nor received any refund of the SGD $612 I paid. Following 15 email chasers across the last 1.5 years, they replied up till 03-June-2023, and since then have been silent. Now, we've discovered their customer service email addresses are offline and have been de-registered.

However, their website and social media channels are still live, and it's technically still possible to make purchases, so buyer beware - you're highly unlikely to receive your order or any refund. I understand some banks have already begun to block payments to Undandy. It also seems Undandy employees were unfairly treated and released, with some being owed salaries. The online community of Undandy customers are livid, but there appears to be little recourse.

I still have 5 pairs of Undandy shoes from earlier purchases, and they are some of the best fashion footwear I own... a real pity it's come to this.
