Established in March 2013 by owner Keith Hoo, Teochew Meat Puff is a pop-up stall that operates solely in pasar malams / night bazaars. Moving around Singapore, with their location updated via their Facebook page, Teochew Meat Puff sells traditional Fuzhou Oyster Cake, which are handcrafted fresh daily.
Ambience at Teochew Meat Puff draws on the surrounding bustle of the pasar malams / night bazaars. Lively and noisy, the large signage and sounds of frying attract attention. Expect to find a queue at the stall, which usually takes up to 1 hour.
Service at Teochew Meat Puff is quick and efficient. Staff handmake items to order, frying them fresh. This ensure your order is always piping hot, but also causes a short wait. Generally, they serve each person in about 10 minutes or so, hence the queue.
Food at Teochew Meat Puff is focused on handcrafted, traditional Fuzhou Oyster Cake. Made with fresh ingredients, the portion size is large and very filling. They also offer meat puffs made with a variety of other ingredients, giving their menu a good range. Prices are cheap, budget SGD $3 per person for 1 meat puff or Fuzhou oyster cake.

The classic Fuzhou Oyster Cake (SGD $3) is done to traditional standards here. A generous portion of moist, savoury sweet minced pork, along with crunchy parsley, earthy shiitake mushrooms, and juicy fresh oysters, are stuffed in an all-purpose flour batter, then deep-fried till crisp, and studded with roasted peanuts on top. The Fuzhou oyster cake / meat puff is piping hot and so satisfiying, each bite is meaty and juicy. Highly recommended!

The Crab Stick Cake (SGD $3) features the classic base of minced pork, parsley, and shiitake mushrooms, fried in all-purpose flour batter, but with crab stick instead. This lends the meat puff a lovely pronounced sweetness, complementing the savoury taste of the ingredients. Decent enough.

Loved the Scallop Cake (SGD $3.50), with its classic base of minced pork, parsley, and shiitake mushrooms, fried in all-purpose flour batter, but with whole scallops instead. Tasty and delicious, with a lovely sweet savoury flavour, and the chewy bouncy texture acts as a foil against the tender crunchy soft texture herein. Highly recommended!

Update Dec-2022: It's been more than 5 years, and Teochew Meat Puff has survived through the COVID-19 pandemic and accompanying circuit breakers. They moved into a permanent stall in Woodlands, then gave that up when restrictions relaxed. Teochew Meat Puff is now back to operating out of pasar malams / night bazaars, with their most common location being in the Woodlands area of Singapore. They've also improved their queue and ordering system, so you no longer wait in long physical lines anymore (but the actual queue is still long, albeit invisible). Prices have also increased slightly in line with market inflation.
Their signature Fuzhou Oyster Cake (SGD $4) is as good as ever. The hand-formed generous portion of moist minced pork, crunchy parsley, tender shiitake mushrooms, and juicy fresh oyster, is covered with all-purpose flour batter and studded with roasted peanuts, then deep-fried till crisp. Bite in, and you get an addictive burst of meaty vegetal earthy savoury briny salty sweet herbal nutty flavours. Yummy and satisfying, best eaten when piping hot. Highly recommended!

The unique Scallop Cake (SGD $4.50) is as good as before. This has a generous portion of moist minced pork, crunchy parsley, tender shiitake mushrooms, and bouncy scallop, covered with all-purpose flour batter and studded with roasted peanuts, then deep-fried till crisp. Each bite is a lovely enticing burst of meaty vegetal earthy savoury sweet herbal nutty flavours. Nicely clean-tasting, best eaten when piping hot. Good!
