Established in October 2004, Carnivore Brazilian Churrascaria is a meat-lover's paradise, offering a veritable meat buffet in the Brazil style churrascaria. With a casual, relaxed atmosphere; friendly, personable service; and tasty South American food served communal dining style, Carnivore Brazilian Churrascaria has grown in popularity, and they now operate 3 outlets islandwide.
Ambience at Carnivore Brazilian Churrascaria is relaxed and rustic. The simple, modern, wooden cushioned furniture is in shades of black and brown, contrasting with the simple bare walls and floors. There is minimal decor, but what little there is are homages to Brazil and its culture. Latin American music plays in the background, very apt with its lively salsa beats. The spacious layout and comfortable vibes lend well to long, lingering, communal meals with friends.
Service at Carnivore Brazilian Churrascaria is friendly, courteous, and professional. Staff make an effort to go out of their way to accomodate requests, which I like. They display proper attention and care for diners, and have good product knowledge, able to describe the various options in the salad bar or on the menu. Staff also clear empty / dirty plates and tables efficiently. The knife wielding passadors are skilled, introducing each meat, then expertly carving it right in front of guests; with no mess and no splashback from gravy.
Food at Carnivore Brazilian Churrascaria is all about Brazil style churrascaria. Begin the buffet at the salad bar, where over 15 different hot and cold dishes (salads, appetizers, soups, staples) await. The passadors will then come around with large skewers of various cuts of meat, in total, 14 different cuts are available, comprising chicken, pork, fish, and the signature, beef. Generally, dishes are executed well, with consistent quality expected of a restaurant. Being a buffet, portions are free-flow. Prices are reasonable too, budget SGD $75 per person for a meal with drinks here.

The Beer Erdinger Weissbier Dunkel (SGD $16) is a German / Bavarian dark wheat beer, brewed by Privatbrauerei Erdinger Weißbräu Werner Brombach GmbH in Erding, Bavaria, Germany. It has a dark, chestnut brown colour, with aromas of malts, yeast, caramel, and banana. Body is smooth, creamy, and medium-bodied, with a good amount of carbonation. Tastes of caramel toffee, roast coffee beans, bread, and hazelnuts, with notes of sweet and nutty, lacking bitterness. Finish is short, almost non-existent.

I find the Set Lunch (SGD $12.75), and the Buffet Dinner With Salad Bar (SGD $57.40), are reasonably priced per person, and well worth checking out.

A decent Creme De Cogumelos / Mushroom Soup, rich and creamy in texture, with good savoury earthy flavour. Despite lacking the chunky texture of mushrooms, the flavour is alright.

Think I like the Batatas Assadas / Roasted Baby Potatoes more than I should, these are rather simple and straightforward, but executed well. Has a texture that borders firm and tender, yet isn't limp, and boasts good solid potato flavour.

Loved the Pure De Batatas / Mashed Potatoes, with its thick, creamy smooth texture, and the bright potato flavour, contrasted nicely by the savoury salty brown gravy.

The Goulash De Carne / Beef Goulash was terrible. The beef chunks were dry and stringy, and the gravy lacks the robust flavour of typical Hungarian goulash.

The Salada De Repolho / Coleslaw is alright. Fresh and crunchy, with a light sweet taste. I like that it lacks sourness, and the sauce isn't heavy. Decent.

Loved the Cogumelos Com Balsamico / Mushrooms With Balsamic Vinaigrette, it's among the better salad options here! The shiitake mushrooms are meaty, tender and earthy, then you get the light sour sharpness of the balsamic vinaigrette, lending a nice contrast. I greatly enjoyed this.

The Salada De Queijo De Tomate Cereja / Cherry Tomatoes With Parmesan Cheese has lovely juicy cherry tomatoes, bright and sweet, bursting with flavour. The earthy milky soft parmesan cheese lends a depth of flavour, but perhaps too heavy, as it slightly overwhelms the tomatoes.

A poor rendition of Arroz De Alho / Brazilian Garlic Rice, nothing at all like the fragrant dish of white rice, onions, and garlic, as it's supposed to be. Taste is much too mild, and texture is dry. Skip this.

The Salpicao De Frango / Brazilian Chicken Salad is a traditional appetizer in Brazil, though the version here is rather stripped down to its essentials. Featuring tender shredded chicken, bell peppers / capsicum, olives, carrots, and mayonnaise, it has a nice crunch from the vegetables, with a sweet earthy salty taste. It lacks the other traditional ingredients of apples and raisins, but is still pretty tasty as is.

The Salada De Palmito / Brazilian Hearts Of Palm Salad amazes me for its simple freshness. Featuring tomatoes, onions, lime juice, salt, hearts of palm, and pepper, the taste of this dish is sweet sour with a light bitter and bold earthy, very tasty. Good!

Described as the national dish of Brazil, the Feijoada / Brazilian Black Beans And Pork Stew is a hearty stew of black beans, onions, garlic, salted pork belly, and pig's tail, slow cooked for hours. The result is a visually dark but tasty dish, robust in savoury salty earthy nutty flavours, with the ingredients being tender, coming apart easily. Full meaty textures here. Comfort food, best paired with rice. Highly recommended!

The Abacaxi Grelhado / Grilled Pineapple is lovely, with a sweet, succulent, juicy texture, and slight hint of smoky aroma from the grill. The fruit sugars have caramelised slightly, giving this a wonderfully fruity flavour. Highly recommended!

Of all the beef cuts, I felt the Cupim / Beef Hump was the weakest, due to its rather tough, dry texture. The edges are the worst, because they're bone dry, though the meat gets more moist towards the center.

The Chimichurri Lombo / Chimichurri Beef Top Sirloin features a thick yet juicy cut of beef sirloin, rubbed with chimichurri sauce, which is made from finely-chopped parsley, minced garlic, olive oil, oregano, vinegar, paprika, and bay leaves. This makes the flavour savoury salty, with a hint of herbal earthy vegetal taste. Good!

Loved the Carne De Hamburguer / Beef Rump Hamburg Steak, the minced beef patty is thick and juicy. Bite into it, and the juices run clear. Tasty, having a robust savoury flavour, with a nice chew to texture. Good!
