Heirs to Fortune Food, a traditional Chinese brand known for their high quality Singaporean snacks such as popiah or kueh pie tee, sisters Hong Wei Ling and Hong Wei Ting are keeping their family's legacy alive, while taking the business to greater heights. This is the story of Souperstar, opened by the sisters in July 2015, where their family's artisanal expertise in popiah meets cosmopolitan flavours. It's no surprise that Souperstar thus offers a variety of modern fusion soups and popiahs.

Ambience at Souperstar is modern casual, with a light industrial feel. Furnishings and decor in shades of black, red, wood, and metal line the place, and seating is tightly packed. The open concept, which allows you to watch the chefs prepare your food, lends a sense of space. However, the limited seating capacity means the place quickly gets crowded, especially during meal times.

Service at Souperstar is completely self-service, with ordering, payment, and collection done over the counter. However, staff are able to advise on dishes and food, and when questioned on ingredients in the soup, they display decent product knowledge. I also note that staff are fast and efficient at clearing empty / dirty tables, which allows for quick turn around for waiting guests.

Food at Souperstar is modern Singaporean cuisine, focusing on mostly Western style soups, and the family's signature popiah, given a modern twist. The soups are classic flavours which are popular amongst most Singaporeans, very safe and decent in taste. The popiahs are where they stand out, an innovative wrap serving style, exciting combination of flavours. Portions are nicely sized for individuals, and prices are affordable even for students. Budget about SGD $9 per person for a full meal here.

The Ban-Ban Combo, Traditional (SGD $7.60) offers a good variety, with 2 small soups and 1 roll of popiah. Pretty good value for money, and it's also very filling.

The Ban-Ban Combo, Modern (SGD $8.50) is similar, as it also has 2 small soups and 1 roll of popiah, but the difference is, the popiah can be any of the modern versions. Also good value for money, and very filling.

The Classic French Onion Soup (SGD $3.20) is a traditional soup appetizer from France. Featuring tender, sweet savoury, caramelised onions, simmered with herbs in a flavourful beef stock, garnished with a buttery cheese crouton. Warming and comforting, each mouthful also has a burst of peppery flavour. Good!

The Souper Shroomy (SGD $3.20) is made with chopped then seared wild button mushrooms, simmered with cream and homemade mushroom stock, and finally pureed till it achieves a smooth texture. Rather thin and delicate in flavour, with notes of sweet savoury earthy. Would have liked to have chunky mushrooms though, instead of the grainy bits here. Decent at best.

The Boston Clam Chowder (SGD $3.20) stays true to the classic version from the city of Boston, in the state of Massachusetts, in the New England region of the United States Of America. Fresh clams, boiled to release the natural sweet savoury flavours, then simmered along with cream, potatoes, carrots, and onions, before being garnished with parsley and served. Warm and hearty, rich in seafood flavour. Worth ordering!

The Creamy Tomato Basil (SGD $3.20) is a bright, tangy dish, featuring pureed tomatoes with a rich, creamy texture, infused with basil leaves, giving it a slight herbaceous touch. Chunks of smoked pork sausage lend a meaty chew, and a depth of savoury salty flavour, complementing the sweet vegetal notes of this soup / broth. Highly recommended!

I like the Double-Up Potato & Bacon (SGD $3.20) for its rich, creamy texture and good potato flavour, yet it doesn't feel overwhelming or heavy on the palate. Made with 2 types of potato, it also has bacon bits, which lends the soup / broth a nice savoury salty flavour. Worth ordering!

The Brisket Set (SGD $9.50) is served with the house signature Three-Grain Rice, which features a healthy trio of grains; pearl barley, brown rice, and japanese short-grain white rice, tossed with diced carrots, parsley, and olive oil. This gives it a fragrant aroma, a fluffy sticky texture, and a light sweet savoury vegetal flavour. But the star here is the robust Braised Beef Brisket With Red Wine Sauce. The beef brisket is slow-braised till tender and moist, in a bold savoury salty beef stew fortified with red wine, onions, carrots, broccoli, and cilantro. More filling and satisfiying than it looks. Good!

The family business is known for their Popiah Traditional (SGD $2.50), so it's no surprise that this Singaporean snack is among their more popular items. Everything is handmade fresh daily, from the thin, soft, yet stretchy skin, to the slow-cooked stewed turnips. All 10 ingredients (sweet bean paste sauce, minced garlic, deshelled prawns, crushed peanuts, boiled eggs, shredded cucumbers, cilantro, sambal belachan, stewed turnips, crispy fried flour bits) are tightly packed and skillfully wrapped.

Extremely delicious, with flavours of sweet savoury salty nutty, and complementing textures of chewy tender juicy crunchy. So delightful. It's served in an innovative wrap style, which makes me wonder why no one else has thought of serving it like this. A true modern Singaporean wrap / snack. Highly recommended!

Loved the refreshing feeling of the Popiah Seafood Wasabi Mayo (SGD $4.10). This innovative modern wrap features the signature thin, soft, yet stretchy popiah skin, layered with prawns / shrimp, tuna flakes, crab stick, wakame seaweed, coral lettuce, and a light wasabi mayonnaise. The textures of chewy tender juicy crunchy are nicely complemented by the flavours of sweet savoury zesty tangy sharp vegetal. So delicious. Highly recommended!
