Originally established in Jingzhou, Hubei, China, over 1,000 years ago (!), A Gan Guo Kui specialises in the popular Chinese street snack known as "Guo Kui"; a crispy oval-shaped flatbread that is traditionally oven-baked within a cylindrical drum, without using any oil. It resembles the North Indian tandoor baked "Naan" flatbread. Operating hundreds of outlets across China, A Gan Guo Kui made its international debut in Singapore in June 2019.

Ambience at A Gan Guo Kui is eye-catching, with its bold red colours, large signage, and the aromatic fragrance of baking breads. All stalls are takeaway kiosks, there is no seating here. There's usually a short waiting time of about 10 minutes, as they freshly bake each order.

Service at A Gan Guo Kui is transactionally efficient. You queue, order, and make payment over the counter. Interaction with staff is limited to menu options, though they display decent product knowledge, being able to describe the various flatbreads. You've given a number, and collection is indicated via a screen.

Food at A Gan Guo Kui is focused on the Chinese street snack of guo kui. Freshly prepared and baked to order, each flatbread is hand moulded and kneaded, generously spread with your chosen ingredients, then baked in the cylinderical ovens. Portions are sized for individuals. Prices are affordable, budget about SGD $4 per person.

The Preserved Mustard Greens Meigan Cai Guo Kui (SGD $2.90) features a large all-purpose flour flatbread, spread with a filling of preserved mustard greens / meigan cai / mei cai. Studded with sesame seeds, the fragrant flatbread has a light crispy texture and a smoky bready sweet flavour, while the filling has a soft chew and deep vegetal salty sweet savoury flavour. I understand this savoury snack is the most common variety of guo kui. Good!

The Pickled Mustard Greens Suan Cai & Grilled Fish Guo Kui (SGD $3.30) features a large all-purpose flour flatbread, spread with a filling of pickled mustard greens / suan cai, and Sichuan / Szechuan style mala chili peppercorn grilled barramundi fish. Studded with sesame seeds, the fragrant flatbread has a light crispy texture and a smoky bready sweet flavour, while the filling has a moist tender soft chew and robust salty sour savoury spicy flavour. A delicious gourmet guo kui. Highly recommended!

The Spicy Beef Guo Kui (SGD $3.30) features a large all-purpose flour flatbread, spread with a filling of carrots... and that's about all I can detect. Studded with sesame seeds, the fragrant flatbread has a light crispy texture and a smoky bready sweet flavour, while the filling has a distinct meaty savoury flavour, yet I struggle to see any minced beef, plus, it isn't spicy. Of all their offerings, this guo kui was the most disappointing. Could be improved.

The Brown Sugar Red Bean Guo Kui (SGD $2.60) features a large all-purpose flour flatbread, spread with a filling of brown sugar and mashed red bean paste. Studded with sesame seeds, the fragrant flatbread has a light crispy texture and a smoky bready sweet flavour, while the filling has a creamy chew and bright earthy sweet floral flavour. This sweet guo kui resembles the Chinese Red Bean Paste Pancake dessert. Good!
