Description:
The Carrot Cake is a Singaporean Chinese dish that consists of stir-fried daikon radish cubes, eggs, and aromatics. The name of this dish is a misnomer, as there are no carrots in the dish, and it has no relation whatsoever to the western style pastry dessert. Also known as Chye Tow Kueh, Turnip Cake, Radish Cake, or Chai Tow Kway, the Carrot Cake dish is usually priced around SGD $3 to $8 per serving. Carrot Cake is a popular and culturally important dish, enjoyed by people of different dialect groups and races in Singapore, a beloved local comfort food eaten at any time of the day.


The typical dish of Carrot Cake begins with shredded or julienned white daikon radish, boiled then blended with rice flour, salt, water, with optional tapioca flour or corn starch to thicken. The mix is then steamed and left to set in moulds, typically overnight, forming a radish cake. This "carrot cake" is then cut into slabs of rectangular strips, partially pan-fried, then set aside. From this point, there are 2 different versions of Carrot Cake, each with its own method of preparation.

Both versions have the cubed radish cake stir-fried with whisked eggs, preserved radish / chye poh / chai poh, minced garlic, and fish sauce, with an option to add sambal belacan chili. For the white version, or Carrot Cake White, it's shaped into little pancake squares and gently sizzled till a crust forms. Garnished with spring onions, the Carrot Cake White has a crisp exterior, soft interior, and a moist texture with pleasant savoury salty eggy sweet flavour. For the black version, or Carrot Cake Black, an additional ingredient of dark sweet soy sauce is added, and it's vigorously stir-fried then shaped into a little circular mound. Garnished with spring onions, the Carrot Cake Black has a fluffy soft moist texture with robust sweet savoury eggy flavour.

Other ingredients may also be added depending on the stall, the most common include bean sprouts, dried shrimp, fresh deshelled prawns, or pork lard. Whether you prefer it black or white, light or dark, there's sufficient varieties of Carrot Cake to satisfy any craving. This is my favourite dish, one that I eat at least once weekly.

This stall came to prominence recently for having the cheapest chye tow kueh around.

The now-unheard of low price is meant to help the elderly in the neighbourhood to have an affordable meal.

That said, their version is pretty tasty, with crisp edges and smoky wok hei / breath of the wok, with the carrot cake cubes being moist and soft, good skill evident in pan frying.

The black has a pronounced sweet savoury eggy flavour, but I prefer the white which has more savoury eggy sweet notes.

This remains a popular stall in an equally popular hawker centre, though allegations that quality varies by the mood of the chefs has some truth.

Generally above average and decent value for money, the plates borders the edge of smoky goodness, with soft moist texture to the carrot cake, and a good spread of egg over.

The black is better, as the dark sweet soy sauce with the egg creates a tasty sweet eggy savoury salty flavour. The white loses slightly as it lacks crispness, and the savoury sweet eggy salty flavour is mild.

Carrot Cake / Chye Tow Kueh (SGD $3) @ Bukit Merah View Carrot Cake.

Serving for over 50 years, the brothers helming this stall used to make everything in-house, but have recently switched to a supplier, albeit one that still mills rice to make the cakes (instead of using rice flour).

Their version has slightly larger, chunky cubes of carrot cake, which has a nice springy soft moist texture.

Their black has a pronounced savoury salty eggy flavour which was alright but lacking that sweet edge. But I was more excited by their white, with its smoky savoury eggy sweet flavour, yum. Nice char to the edges too.

Starting as a pop-up stall at events, enterprising hawkerpreneur-chef Claire Huang has since grown her humble brand into a hawker stall and carrot cake distributor.

Her father, Ng Kwee Boon, has been making and supplying carrot cake for over 22 years, steaming them the traditional way using large aluminium trays. Claire also picked up frying skills from her uncle who sells his own chye tow kueh.

The carrot cake has distinct cubes, moist and soft and gently springy, with a good topping of preserved radish / chye poh.

The black has addictive sweet eggy savoury salty spicy flavour, while the white has fragrant smoky savoury salty eggy sweet spicy flavour.

Their unique creations are a stand out. The Thai hottie features chili flakes for a sharp spicy kick with good fiery heat. And the Bacon has decadent chunks of pork bacon which complements with its meaty salty smoky flavour.

An excellent take which you can't get anywhere else.

Specialising in only the black version, their rendition is a glorious, delicious mess.

The carrot cake is soft and moist, covered with a generous spread of fluffy eggs.

Nicely sweet eggy savoury salty in flavour, with a hidden kick of spicy heat.

Specialist of the white version, this stall has been serving for over 70 years ever since husband-wife team Tay Hoe Seng and Ng Sock Cheng started making their own carrot cake.

Their daughters and 2nd generation owners still handmake the carrot cake, their painstaking efforts recognised with consecutive Michelin Bib Gourmand awards.

Renowned for their flat but super crisp rendition, the (open) secret here is their special chili, which really makes the dish stand out.

Beautifully fried, albeit more oily than elsewhere, you get lovely smoky savoury sweet spicy flavours in each bite.

Fried Carrot Cake / Chye Tow Kueh is my favourite dish of all time. I love it so much that, on average, I eat it at least once per week. And in weeks I'm out of town, I eat more of it on my return, just to make up for the missed experience.

This stall does a style I like, where the carrot cake is chopped into really small cubes, and slathered with egg. It's moist and soft with crispy bits that make it satisfying.

The black version is decent enough, with mild sweet savoury eggy spice flavour. I prefer the white version, which has a lovely savoury sweet eggy spice flavour with smoky aroma.

The immediate difference here is the addition of bean sprouts, which lend a satisfying crunch and a mild smoky vegetal sweet flavour.

Their carrot cake is soft, cut in large irregular cubes so the outside turns slightly crisp, while the inside remains moist.

The white is more popular, with a smoky savoury sweet salty eggy flavour. But I personally prefer the black, for its stronger sweet eggy savoury salty flavour.

You can opt for no bean sprouts if you like. Also, be prepared to queue for at least 15 minutes.

Started in the 1960s by Ng Keng Chow, his humble pushcart became known as 'Tiong Bahru Carrot Cake', and retained the name even after they moved into the Clementi market in the 1980s.

Having patronised them for over 20 years, I remember Uncle Ng's iconic straw hat, and the 2 large pans he used... 1 to marinate the carrot cake cubes in chye poh / preserved radish, fish sauce, and vegetable oil. The other pan to stir fry, dual-wielding 2 ladles and using broad circular strokes, almost like he was swimming.

He handed over to son and daughter-in-law Ng Joong Yew and Jessy Lee in 2010, and they changed the stall name to its current, with grandson Brandon Ng coming on in 2019. Cooking style remains the same, using the 2 large pans.

Having eaten at more than 40 different carrot cake stalls across Singapore, this stall remains my ultimate favourite.

They cut the carrot cake cubes small, and are generous with the chye poh / preserved radish and eggs, resulting in a soft moist fluffy texture, while the edges are a little crispy.

I prefer the black version, laced with a generous helping of sweet dark soy sauce, a bold sweet savoury eggy salty smoky flavour. The white version, which looks almost similar, holds enticing savoury salty eggy sweet smoky flavour.

The chili lends a bit of spicy kick, so yummy. Eating here is a pilgrimage of sorts, requiring careful planning.

Specialist in the black version, this stall is easily spotted with their old-school Mickey Mouse signage.

Hawker couple Goh Chye Oo and Lim Chin Hong makes their carrot cake from scratch, the effort taking about 7 or 8 hours, the fresh daikon radish shredded, seasoned, and kneaded over 100 times to achieve a soft, bouncy texture.

Frying with a generous blanket of eggs and double lacings of sweet dark soy sauce, each bite is a greasy smoky burst of sweet savoury salty eggy flavour, with hints of crispy bits.

Their rendition is slightly more oily than elsewhere, but has its fans.

The queue at this popular stall starts at 6am, and only gets longer throughout the morning, until they sell out.

Still, the family-run stall operates with quick efficiency in clearing the queue, moving at a crisp pace in serving up plate after plate of their delicious carrot cake, moist and soft and eggy without being overly greasy.

I prefer the black version, a tossed messy pile where every bite has a bit of carrot cake, a bit of egg, and a lot of smoky sweet savoury salty eggy flavour. The white version is lovely, stacked in pancake squares that carry aromatic smoky savoury salty sweet eggy notes.

I first chanced upon this stall, and their overly generous huge portions, back when I used to work nearby.

They serve an above average rendition, with a soft easy texture that the elderly folks around here like. Nice smoky edges to their handmade carrot cake, with a good mix of eggs within.

Seasoned with fish sauce and sesame oil, each plate is smoky savoury eggy sweet in taste, while being slightly greasy.

The black version fares better with a distinct lacing of the sweet dark soy sauce, while the white version has more pronounced smoky eggy notes.

Specialising in only the white version, their rendition features symmetrical cut squares of deliciousness.

The family-run stall by Teo Boon Kuang has been serving since 1973, and daughter Alberta Teo has come on to carry on the legacy.

Their carrot cake is soft and moist, marinated in garlic and fish sauce, the egg covering each side and holding it all together, almost like a pancake.

Nicely springy with crisp edges, and lovely savoury sweet eggy salty flavour, with a bit of spicy kick.

The carrot cake is moist and delicious with a soft chew, well executed. Has a generous portion of eggs and chye poh / preserved radish.

The black version is smoky sweet savoury eggy spice in taste. I prefer the white version, with its savoury sweet eggy spice notes, and tiny crispy bits.

As a regular customer over the last 10+ years, I'm glad to see them not only pull through the pandemic, but groom a 2nd-generation to gradually take the helm.

While more well known for their fried oyster, their skill in getting fluffy eggs with crisp edges around starch, is equally applicable to carrot cake.

I always get a yuan yang, with black and white versions. The former has deep sweet savoury eggy flavours, while the latter has bright savoury sweet eggy flavours. I like that the carrot cake is cut into small cubes too.

Vietnamese lady boss Ngo Thi Hoa quickly picked up wok-frying skills from the Hokkien Mee hawker she previously worked for.

While her speciality is naturally Hokkien Mee, her other wok-fried dishes are just as tasty, like this rendition of carrot cake marinated with fish sauce and chye poh / preserved radish.

The medium cut carrot cake is soft and moist. The white version is better, with a generous blanket of egg, and bright savoury salty sweet eggy flavour. The black version is tasty, having a little more smoky aroma, and deep sweet savoury salty eggy flavour.

A very popular stall and among my favourites, now in its 2nd generation from its establishment in the 1960s.

Hawker Peter Goh and wife are hearing-impaired, and the innovative way they take orders through pictures and clear signages is efficient, moving the queue quickly.

The white version is appealing with a slightly crispy edge, good amount of egg holding the soft moist carrot cake together, and an enticing savoury salty spice sweet eggy flavour.

The black version is delicious with small crispy bits within, good amount of wispy egg mixed with the soft moist carrot cake, and an addictive sweet savoury spice salty eggy flavour.

Renowned for their unique flavour of carrot cake, made using curry powder, sweetened chye poh / preserved radish, and deshelled shrimp.

This gives each plate a unique layering of taste, yet it doesn't distract from the soft moist taste of the carrot cake itself.

The white version is my preference here, smoky savoury spicy eggy sweet in flavour, the notes of curry and egg and shrimp quite distinct.

The black version is also well loved, smoky sweet spicy eggy savoury in flavour. Here, the curry is tamed with the dark sweet soy sauce, though you still get the taste of the egg and shrimp. I find the contrast a tad jarring.

The black version is laced with dark sweet soy sauce, sizzled till some of the small bits turn crispy. Has a bold sweet savoury salty eggy spice flavour.

The white version is set into rough squares, sizzled till the sides are slightly crispy. Has a lovely savoury sweet salty eggy spice flavour.

For over 10 years, this stall has been serving consistently reliable, if unassuming, plates of carrot cake.

Shaped in a distinct pyramid-shape, their carrot cake is soft and moist. I like the generous portion of egg within, nice.

I like the black version, which is a little softer, with robust sweet savoury eggy flavour. The white version is tasty too, with savoury sweet eggy flavour. Both carry a hint of smoky aroma.

Their chili is punchy, with a sharp spicy kick, making this all the more delicious.

Quietly serving up heaping plates of carrot cake for over 30 years.

Each plate is fried with preserved radish / chye poh, garlic, vegetable oil, and egg. Their carrot cake has both soft and crispy bits throughout, yum.

The white version has good textures then, with a pronounced smoky savoury sweet eggy spice flavour, though I understand this can be inconsistent sometimes.

Most agree the black version is better here, the addictive smoky sweet savoury eggy spice flavour being a stand-out.

Unusual combination of dishes from a single stall, but as many will attest, their carrot cake is much better than their wanton noodles, with a satisfying soft and moist texture from the small diced cubes of steamed daikon radish.

The most popular is the black version, with the intense lashings of dark sweet soy sauce wafting through the air, the enticing aroma a preview of the robust smoky sweet savoury salty eggy flavours within.

The white version is pretty good as well, with the crunch of the preserved radish / chye poh being more prominent here, a delectable burst of smoky savoury salty sweet eggy flavours.
