Seafood from the Gulf of Mexico and beyond is the highlight at Caracol, which opened in December 2013. Helmed by wife-husband team owner-restaurateur Tracy Vaught and award-winning executive chef Hugo Ortega, Caracol derives its name from the Mexican word for 'sea snail' or 'conch', and offers an upscale dining experience with Modern Mexican dishes.
Ambience at Caracol has an understated elegance and refinement. At the entrance, softly illuminated trees lend an ethereal and magical welcome for guests. Within, soft warm lights illuminate the spacious dining hall, neatly arrayed with comfortable modern furnishings. A long bar occupies a wall, while decorative paintings from Mexican artists adorn the walls.
Service at Caracol is friendly and efficient, with staff warmly welcoming guests, and striking up conversations with diners. They demonstrate good product knowledge, and work efficiently to fulfil orders, or to clean up when diners leave. I commend staff for the good attention accorded to each table. Felt well take care off, enjoyed the dining experience and chatting with staff.
Food at Caracol is gourmet Mexican cuisine, drawing on traditional flavours but presenting them with modern flair. Fresh seafood is the focus, allowed to shine through delicate flavours that define the coastal style. Consistent standards have made them a popular draw. Portions are medium to large for individuals. Prices are upscale, budget about USD $87 / SGD $118 per person.

Love the Pescado Zarandeado (USD $44), made with a deboned fresh fillet of branzino fish / Mediterranean sea bass fish. Nicely flaky and tender and soft, with a crisp bite to the slight char on the surface of the fish. Together with the garnish of sliced red onions, oregano, and parsley, the marinade lends a bright smoky savoury salty spice sweet zesty tangy sour bitter herbal flavour. Highly recommended!

Opted for the alcohol-enhanced Hot Chocolate (USD $4, +$12 For Barbadillo Pedro Ximenez Sherry Jerez), which was thick and rich and semi-creamy in texture, with robust boozy chocolatey bitter sweet flavour. Good!

Enjoyed the Churros (USD $12), which was piping hot when served. Satisfying with its crisp crunchy texture and bready sweet savoury flavour. Served with a light filling of sticky caramel, and lashings of thick chocolate sauce, which combined for a chocolatey candied sweet floral flavour. Highly recommended!
