Description:
The Naan is a Singaporean Indian dish, featuring a tandoor oven baked leavened flatbread, sometimes garnished with aromatic herbs, or stuffed with various simple ingredients. Also known as Nan, Naan Plain, or Roti Naan, the Naan dish is usually priced around SGD $2 to $13 per serving or per piece. A typical stall will usually offer between 3 to 14 varieties of Naan, averaging around 5 varieties. It's commonly eaten for either lunch or dinner, typically accompanied by a variety of curries.
The dough is common to all varieties of Naan flatbread, with the standard dough usually made from all-purpose flour or bread flour or wheat flour, baking yeast or baking powder, water, salt, white sugar, ghee / clarified butter, and plain yoghurt. Once combined, the ingredients are kneaded, left to rest, then finally baked in a tandoor oven. This Naan Plain will have a soft fluffy chewy texture, with smoky bready sweet savoury flavour, and crisp charred spots or edges from the oven. A Naan Plain can also act as a canvas for garnishing or stuffing, and the following are the 5 most common Naan varieties available, of which 3 are garnished and 2 are stuffed.
The garnished Naan will include the Naan Garlic which has finely minced garlic and additional savoury spice flavour, the Naan Butter which is brushed with additional ghee / clarified butter and has deeper buttery salty savoury flavour, and the Naan Pudina / Naan Mint which has finely chopped mint leaves and additional minty herbal flavour. The stuffed Naan will include the Naan Paneer / Naan Cheese with gooey cottage cheese and additional milky cheesy salty flavour, and the Naan Kashmiri with chewy dried fruits (cherries, apricots, black raisins, golden raisins, cranberries) and additional fruity candied sweet flavour.
The Naan is usually served as a staple to a meal, accompanied by various curries, and used as a replacement to utensils for scooping up food. Regarded amongst the world's most popular flatbreads, the Naan today is still being used to push culinary boundaries, with experimental versions that feature modern ingredients such as chicken, spinach, mushrooms, cinnamon sugar, avocado, or truffle.

Their rendition is baked in a tandoor oven, resulting in crispy edges with a fluffy soft center. Being gently brushed with ghee / clarified butter, their plain version holds smoky bready sweet buttery savoury flavour, while the garlic version studded with minced garlic holds smoky bready salty savoury spice flavour. Nice char on some of the surfaces, lending a depth of smoky aroma.

This long-serving brand was established in October 1974 by Chellappan Sankaranathan, who named the casual restaurant after the Apollo 11 moon landing, with the hope that the restaurant would 'take-off' like a rocket.
Their plain version is amongst the best around, with smoky bready sweet savoury flavour and crisp chewy fluffy texture, with decent char-brown colour from high heat in the tandoor oven. By contrast, their garlic version is amongst the more straightforward around, with smoky bready savoury spice flavour and crisp chewy fluffy texture.
