Incorporated in March 2017, The Tipsy Cow is not part of the Tipsy Collective, being completely unrelated and stand-alone (since the Tipsy Collective first bar, Tipsy Penguin, only opened in June 2018). A rather under-the-radar bar, The Tipsy Cow is a chill place with better-than-average food and drinks, and a good selection of music. I recall The Tipsy Cow fondly as the place where, sitting in the outdoors al-fresco area in February 2023, we witnessed the rare green Comet C/2022 E3 (ZTF)

Ambience at The Tipsy Cow is known for its laid-back and rustic feel. The dimly lit interior is semi-dated yet cozy, with a rough industrial feel that carries a relaxed vibe. The naturally lit exterior is breezy and spacious. The wooden and metal furnishings are sturdy and large, and the atmosphere is buzzing when crowded. The background music comprises playlists from the 80s and 90s, a set list of nostalgic music.

Service at The Tipsy Cow is observant and proactive, with staff offering to clear finished plates or bring more drinks. The menu is clear with helpful descriptions of ingredients in some places, lacking in others, and there isn't much opportunity for staff to demonstrate product knowledge. I note that staff clean up quickly when diners leave. Orders are served hot and freshly made.

Food at The Tipsy Cow is Modern Singaporean bar food, with a mix of influences from American, Italian, Indian, and Malay cuisines. Bar bites, sharing plates, and drinks dominate here. We often order to share, and portions are nicely sized for communal group dining. Dishes are generally above-average in taste and quality. Prices can escalate quickly due to drinks, budget about SGD $101 per person.

The Beer Tiger Lager (SGD $10.30) is the iconic classic European pale lager and flagship beer of the Tiger Beer brand, brewed by the Heineken N.V. Group in Singapore. A bravely creative and unpretentious tropical pale lager, the Tiger Beer Lager pours a clear golden yellow colour with visible lively carbonation, and aromas of white bread, biscuits, apricot, and hops. The body is smooth, rounded, and crisp, with tastes of cornflakes cereal, honey, wheat, and corn. Has a clear bready sweet flavour with a light bitterness on the finish, pleasant and nicely refreshing.

The Beer Guinness Draught (SGD $10.80) is a dark Irish dry stout, named after Arthur Guinness, and is brewed by Diageo PLC in Dublin, Ireland. Among the most famous beers worldwide, this has a deep, dark black brown colour, with a creamy white foam head. The aroma and taste is similar, consisting of smoked malts, roasted coffee beans, faint caramel, and barley. The body is rich, velvety smooth, almost creamy, with a bitter sweet grainy flavour.

Inspired by the 'Commando Cutlet', a spicy stir-fried dish served in army officer mess halls, the Commando (SGD $26) features a medley of fried anchovies, red onions, sambal belacan / fermented shrimp paste chili, potatoes, and chicken sausages, all tossed together. Garnished with fresh coriander, this has a complex profile of tender juicy crisp crunchy soft textures, with addictive meaty fishy salty savoury spice starchy flavour. The fiery profile is not for the faint-of-heart, gripping and lingering on the palate. Best paired with drinks. Highly recommended!
