Said to be operating for over 30 years, Siam Pandan is a popular Thai pastry and dessert stall that many locals have fond childhood memories of. The stall draws strong word-of-mouth and its convenient location attracts busy foot traffic throughout the day, resulting in Siam Pandan having a constant churn of freshly baked treats at all hours.

Ambience at Siam Pandan is casual and bustling. The takeaway-only kiosk has hot griddles constantly making fresh batches of pancakes, the enticing aroma perfuming the surroundings. Service at Siam Pandan is fast and no-nonsense, with staff quickly attending to customers and packing their orders. Optimised for speed, there's rarely a queue here. Food at Siam Pandan is local Thai desserts, focused on Thai-style pancakes. Made fresh throughout the day, consistently tasty and delicious, their dessert treats hold up well from breakfast to supper. Portions are sized for individuals. Prices are affordable, budget about THB ฿50 / SGD $2 per person. All these factors make Siam Pandan a must-visit for many.

The Khanom Krok Bai Toey / Pandan Pancake (THB ฿80 for 8 pieces) has a pleasantly soft springy bouncy texture, slightly crisp towards the edges. Carries a deep floral earthy grainy sweet flavour, yum. Highly recommended!

The Kanom Pakkaad Kaek Hua Chai Tao Tod / Fried Radish Cake (THB ฿60) was a surprise star. With a chunky yet tender texture, contrasted by the chewy and crunchy toppings, this held addictive smoky savoury salty shrimpy earthy nutty flavour. Paired with a thick sweet dipping sauce. Highly recommended!

The warm fluffy chicken egg omelette mixed with chewy sweet potato starch, garnished with medium sized juicy oysters and crisp coriander leaves, feels luxurious. Has savoury eggy sweet briny salty vegetal herbal flavour. Highly recommended!

The crunchy chewy sai haan phalo / braised goose intestines carry savoury earthy herbal salty flavour from the rich 5-spice and soy braising stock. Good!

The Khao Kha Moo / Braised Pork Leg Rice (THB ฿70) has a base of fluffy moist white rice with grainy sweet flavour, heaped with a large portion of tender fall-off-the-bone braised pork leg meat with robust meaty salty savoury herbal flavour, and crisp preserved mustard greens with vegetal sour salty sweet flavour. A liberal dressing of gravy completes this punchy dish. Highly recommended!

Ambience at Hua Seng Hong is bustling and packed. The warmly lit space has narrow aisles with wide and comfortable furnishings. Ambient chatter fills the background. Service at Hua Seng Hong can be brusque, staff appear hurried and it takes awhile to attract their attention. They move quickly, serving orders, seating guests, and cleaning up. Food at Hua Seng Hong has more or less remained the same over nearly half a century, focused on traditional Thai Chinese cuisine. Their roast meats, clay pot soups, and braised dishes are among the most popular items. Quality and taste is good. Portions are sized for communal group dining. Prices are naturally high, budget about THB ฿640 per person.

The Har Gow Khai Goong / Har Gow Xia Zi / Shrimp Dumplings With Shrimp Roe (THB ฿75) has thin flimsy skin with a soft sticky chew, and juicy bouncy springy filling of deshelled shrimp / prawns and shrimp roe. Succulent and delicious, with delicate shrimpy sweet savoury briny salty flavour, enough to forgive the weak dumpling skin wrap. Good!

The Goong Mae Nam Op Wun Sen / River Prawns With Glass Vermicelli Noodles In Clay Pot (THB ฿650) feels luxurious, but the star isn't the fresh giant river prawns with its tender springy texture and premium meaty sweet savoury salty flavour. The star is the silky chewy glass vermicelli noodles made from mung bean flour, which has absorbed the rich stock of water boiled prawn shells, pork bones, pork fat, garlic, ginger, cilantro root, light soy sauce, dark soy sauce, fish sauce, oyster sauce, white sugar, black pepper, and sesame oil. The result is a robust meaty shrimpy salty sour earthy savoury nutty spice herbal sweet flavour, yummy. Highly recommended!

The Huu Cha Lam Nam Dang / Shark Fin Soup (THB ฿660) is a Thai Chinese dish which features a thick gloopy superior stew / soup / broth that is piping hot, carrying earthy sweet sour savoury salty flavour, luxurious and decadent. Sides of sharp black vinegar and white pepper may optionally be added for a sour peppery spice kick. Garnished with tender sliced shiitake mushrooms with vegetal earthy flavour, flaky soft deshelled crab meat with sweet savoury flavour, crunchy bean sprouts with vegetal sweet flavour, crisp parsley with vegetal bitter herbal sweet flavour, and crunchy gelatinous shark fin cartilage with neutral flavour. Recent times have seen restaurants pivot to serve imitation shark fin, or replace it with the more sustainable fish maw ingredient instead.

Ordered a Guay Tiew Ruea Moo / Pork Boat Noodles (THB ฿179) in dry rendition, which has a punchy gravy that is thin yet savoury salty sweet sour spice herbal in flavour. The al-dente springy chewy egg noodles pick up the gravy and garlic chips well, each mouthful a delight of grainy earthy herbal spice sweet salty flavour. The slices of pork loin are very fresh, the premium quality of Japanese Kurobuta pork having a clean and meaty sweet savoury flavour, tender with a gentle chew. The bouncy chewy pork meat balls carry meaty savoury salty flavour, and the garnish of crisp coriander lends vegetal bitter herbal sweet flavour. Highly recommended!

The thick wide chewy rice noodles pick up the soup / broth and garlic chips well, each mouthful a delight of grainy earthy herbal spice sweet salty flavour. The slices of beef shank and beef rump are very fresh, the premium quality of Australian Wagyu beef having a robust and meaty savoury fatty flavour, tender with a good chew. The gelatinous sticky beef tendon has savoury salty fatty herbal flavour. The bouncy beef meat balls carry meaty savoury salty flavour, and the garnish of crisp coriander lends vegetal bitter herbal sweet flavour. Highly recommended!
