Description:
Tikka means 'bits' or 'pieces', and Fish Tikka is a dish from Punjab, North India, which consists of pre-marinated boneless chunks of fish roasted in a tandoor oven.

Some variations grill or pan-fry the fish instead.

The pre-marinade for Fish Tikka consists of plain yoghurt and tandoori masala. Tandoori masala is made with garlic, ginger, onions, pepper, lemon juice, cloves, cinnamon sticks, cumin seeds, cardamom and garam masala.

Some versions of tandoori masala also include star anise, fennel seeds, chili, mustard seeds, sesame seeds, corainder, malibar leaves or edible orange food colouring. These spices are then ground together.

The type of fish used is normally a firm, white flesh fish. Examples include tilapia fish, king mackerel fish / king fish, angoli / goldband snapper fish, basa catfish, and more.

The tandoori masala and plain yoghurt are then dry rubbed over the chunks of boneless fish and rested, before being skewered and placed into the tandoor oven to roast.

Periodically, the meat is brushed with clarified butter (Ghee), or oil.

A well cooked Fish Tikka will be juicy, with tender meat then pulls off easily. The spices should add a nice tangy flavour, without overpowering the taste of the meat.

Fish Tikka is used in the preparation of dishes like Fish Kadai. It can also be served on its own, accompanied by Indian breads or rice, chutney, fresh onion slices and a slice of lemon.
