I first chanced upon 320 Below at their original outlet in Mackenzie Road, back in October 2012 shortly after they were founded. As the first self-styled 'Nitro Cream Cafe' in Singapore, the concept of 320 Below stood out - a dessert cafe specialising in ice cream and sorbet, made to order using liquid nitrogen. They've since relocated their shop several times. Liquid nitrogen is used, as the quick freeze process ensures no build-up of ice crystals, resulting in a smoother texture, plus, no germs survive at -320°F.
Ambience at 320 Below is simple and casual. Shades of yellow, wood, black, and beige adorn the open, brightly lit area, while sturdy and functional modern wooden furniture provide a comfortable place to relax. While suitable for chilling, most people only linger a short while. The biggest attraction here is to watch your order made right in front of you, while the billowing clouds of cool nitrogen catch the eye. Otherwise, there is minimal decor here.
Service at 320 Below is partially self-service, with ordering, payment, and collection over the counter, though staff do serve orders to your table as well. I note staff display competent product knowledge, able to describe if a particular flavour is dairy-free or not. They're efficient at clearing empty / dirty tables when diners leave. Generally, there is a short wait for your order to be prepared, around 5 minutes or so, hence a small queue usually forms.
Food at 320 Below is all about desserts; ice cream, sorbet, yoghurt, and waffles. Choose from a range of 30 different flavours, all freshly made to order, without any artificial flavourings, preservatives, emulsifiers, or stabilizers. In fact, their desserts are usually lower in sugar too. Portions are medium sized for individuals, and suitable for sharing. Prices are affordable, similar to most other places, budget about SGD $6 per person for a dessert here.

We enjoyed the Waffle, Mango Sorbet, Lychee Sorbet (SGD $12.80). The waffle has a crisp exterior, with a soft fluffy interior, though it borders slightly on dry. The mango sorbet is straightforward, good with fruity sweet flavour. But the lychee sorbet really stood out, not only did it hold robust floral fruity sweet flavour, it even had bits of lychee fruit within.

The Thai Coconut Ice Cream (SGD $5.80) is their signature flavour, with good reason. A creamy smooth texture, coupled with a delicate floral earthy fruity sweet coconut flavour, and bits of young coconut meat studded within, make this a delightful dessert treat. Highly recommended!

The American Cheesecake Ice Cream With Rainbow Sprinkles (SGD $6.40) really does taste similar to the dessert cake, with its rich and luscious texture. Nicely creamy smooth with a delicate sweet flavour, it has bits of graham cracker crust within, lending a grainy crumbly chew with a lovely biscuit flavour. Good!

A signature flavour here, the Apple Cinnamon Ice Cream (SGD $4.90) is lovely with its fruity sweet flavour, and the numerous bits of apple studded all over. Nice hint of cinnamon spice on the palate, followed by the luscious juicy refreshing feel of the apple. Highly recommended!
