The Cocktail Zacapa Manhattan (SGD $15) is a blend of Ron Zacapa Centenario Sistema Solera 23 Rum, dry vermouth, sweet vermouth, bitters, water, and honey. Meant for sipping, this stiff, strong tipple has a sweet zesty sour flavour with a smooth, dry texture to the body of the beverage.

Presented by Chef Benjamin Halat of Curate, the Stuffed Roast Suckling Pig With Broiche Dumpling & White Cabbage (SGD $15) features a pork roulade, stuffed with crumbly, grainy sweet broiche dumpling. It contrasts the salty savoury flavour of the tender pork belly and ham nicely. I particularly loved the crispy crunch of the pork crackling / pig skin. The white cabbage on the side is brined with white vinegar and seasoned with cumin seeds, giving it a palate cleansing sour spice flavour. Delicious, hearty plate.

Presented by Chef Scott Webster of Osia Steak And Seafood Grill, the Foie Gras, Pineapple Textures, Vanilla, Coriander (SGD $20) features a tender, smoky savoury, succulent fatty slab of foie gras duck liver, with 4 different textures of pineapple and coriander dressing. Each of the 4 textures of pineapple is fruity sweet savoury in unique ways; the globule of rich pineapple gravy is the most robust tasting, followed by the sticky jam-like pineapple compote. Contrasting the heavier flavours is the pineapple and vanilla foam, with its creamy airy lightness of texture, and the crisp crumbly pineapple meringue. I enjoyed slowly savouring every bite, and the novel pairing each component brought to the dish.

Presented by Chef Richard Van Oostenbrugge of 212 Amsterdam and Table65, the Langoustine Albufeira, Coffee, Katsuobushi (SGD $20) features a tender, meaty, sweet savoury langoustine sourced from Albufeira, Faro, Portugal. It's plated in a rich, creamy, salty savoury soup / broth of cream and langoustine stock, then enhanced with coffee powder and katsuobushi / bonito fish flakes, which lend notes of roasted espresso and savoury fish flavours respectively. I felt this was a tad too rich and full flavoured for me.

Presented by Baker Andres Fatso of Baked By Andres, there are several versions of the cute Salted Caramel Pineapple Cake (SGD $8)... I got an unhappy fellow, but there are also happy or amused versions. The salted caramel buttercream is rich and nicely sweet, and covers a soft vanilla and pineapple sponge cake, with a shape similar to a pineapple. The look is completed with green coloured chocolate fondant acting as 'leaves'. This dessert cake is heavy on the cream, and has a dry texture, we weren't able to finish it.

Presented by Chef Joe Leong of Forest, the Textures Of Coconut (SGD $12) is a signature dessert that would fit right at home in his famous parents' restaurant. Served in a hollowed young coconut, the dessert has a base of tapioca sago balls, with 4 textures of coconut; a creamy coconut ice cream, a crispy meringue wafer, and a chewy smoked meringue cream, all coated in grainy toasted dessicated coconut. Bold earthy fruity sweet flavours of the coconut here, and the interplay of textures is beautiful. Loved every bite of this.

Created especially for The Great Food Festival (TGFF) 2018 by Magnum Singapore, the Magnum Ocean Fantasy (SGD $12) is a limited edition, one-of-a-kind whimsical ice cream creation. The signature Magnum vanilla ice cream is coated in white chocolate hued with ocean colours (white, aqua, violet), then lovingly decorated with edible silver pearls, dusted with silver glitter, and completed with a magical mermaid tail made from chocolate fondant. Expertly crafted, calls to mind pure summer indulgence, and utterly beautiful. Delicious too, as with all Magnum creations.

Overall, I loved the dining experience at The Great Food Festival (TGFF) 2018, and the opportunity to sample a variety of gastronomic delights that appeal both to the eyes and to the palate. Budget about SGD $80 - $200 per person for a visit to The Great Food Festival (TGFF) 2018. Looking forward to next year's edition!
