Established since June 2016 and themed around 'Opposites Attract', Beast & Butterflies is the in-house dining restaurant concept of the M Social Singapore Hotel. They're known for serving up exciting modern fusion plates that are hearty and pretty. Across our last several visits, Beast & Butterflies has consistently impressed us.

Ambience at Beast & Butterflies is elegant whimsical. Designed by reowned French designer Philippe Starck, the spacious living room style dining hall is filled with sturdy wooden and marble furnishings, psychedelic lava lamps, colourful plush sofas, warm lighting, and even a pool / pocket billiards table! Glass panels allow you to view the action in the kitchen, while a long, well stocked bar beckons.

Service at Beast & Butterflies is friendly and attentive. Staff were polite and efficient in carrying out requests, and I liked that they accorded guests personalised attention when speaking. Decent product knowledge was displayed, with staff introducing each dish as it's served. Post-covid, there's temperature taking and SafeEntry measures in place, with approriate safe distancing between tables.

Food at Beast & Butterflies is modern fusion, influenced by worldwide flavours, including American, British, French, Italian, Chinese, Indian, Thai, and Japanese. Crafted with fresh ingredients and presented to excite the senses, each dish is a visual work of art, and a burst of flavours on the palate. Portions are large for individuals, and may be shared. Prices are comparable to other mid-range restaurants. Budget about SGD $45 per person for a decent meal here, and about SGD $88 per person if you order drinks.

Absolutely loved the Alaskan Crab & Fresh Salmon Salad (SGD $24). This beautiful and healthy bowl features a medley of ingredients; including fresh salmon fish, deshelled Alaskan king crab, anchovies, baby spinach, romaine lettuce, sorrel, purple cabbage, dried seaweed, avocado, and shallots with wasabi and soy sauce dressing. The result is a pleasing combination of crisp juicy crunchy tender chewy soft creamy textures, with addictive vegetal sweet savoury salty bitter herbal earthy spice flavours. So good we got a 2nd round. Highly recommended!

The Braised NoChicken Chunks (SGD $88++ for 3-course set meal) surprised us with how good it was, and how different it is from other meat-free products. The Braised NoChicken Chunks were whole, not minced, with a bouncy tender texture that closely resembles the real thing. It has even replicated the chicken skin! Served with bouncy button mushrooms in a sweet savoury salty mushroom tofu cream gravy, these were so good. Accompanied by grainy quinoa tossed with crunchy bell peppers / capsicum, sharp mint leaves, and crisp parsley, a beautiful contrast of textures with vegetal grainy sweet bitter herbal flavour. Nicely refreshing and satisfying. We agreed that if we didn't know this was nochicken, one could easily be led to believe it was real meat. Highly recommended!

The Char-Grilled NoBeef Patty (SGD $88++ for 3-course set meal) was pretty good, though the texture of the Char-Grilled NoBeef Patty was much more crumbly than expected. Still, I like the crisp crunch of the exterior, and the crumbly chewy interior. Tastes somewhat like falafel, with smoky grainy earthy savoury salty flavour. Garnished with crunchy Sauteed Brussels Sprouts and chewy Smoked Vegetarian Bacon, which lent a deep smoky vegetal sweet salty flavour. Accompanied by a thick creamy smooth Scallion Mashed Potatoes, giving it an addictive starchy sweet salty flavour. Overall wholesome and satisfying. Good!

The Char-Grilled Kurobuta Pork Chop (SGD $36) was excellent. The thick slab of Kurobuta Pork Chop on the bone is juicy and succulent with a light chew to texture, a nice ratio of fat to lean pork meat, and has decent savoury sweet peppery spice fatty flavour. Served with Mushroom Fricassé, featuring tender button mushrooms in a mushroom cream gravy, which has deep earthy savoury salty flavour. A rich black pepper gravy accompanies this dish, lending bold peppery spice savoury notes. We enjoyed this greatly. Highly recommended!

The aromatic 3-Cup Lobster In Claypot (SGD $38) features whole fresh rock lobster, wok-fried with rice wine, thai basil leaves, sesame oil, ginger, and bell peppers / capsicum. This imparts the bouncy succulent lobster meat with beautiful herbal spice nutty sweet savoury salty flavour. Paired with sticky soft steamed white rice with grainy sweet flavour. Love how skillfully executed this is, the lobster isn't overcooked or tough, yet the gravy is robust. Worth ordering!

The Molten Chocolate Cake & Ice Cream (SGD $15) features a stick of mini Magnum Ice Cream, pushed into a warm moist gooey chocolate cake made with Valrhona Guanaja 70% dark chocolate, causing the chocolate to burst forth in a river of molten goodness. The combination of chocolate and the vanilla ice cream is beautiful. Good!

The Apple Pie (SGD $10) is well baked, with a buttery crumbly pastry crust, laid with a petal of caramelised apple slices spiced with cinnamon. With a juicy tender chew and bold fruity sweet flavour, this lovely dessert entices you to reach for more. Good!

What's nice about the Thai Milk Tea Pudding (SGD $10) is the bold earthy sweet bitter flavour within the wobbly gelatinous milk tea infused pudding. A gravy of caramelized coconut banana and evaporated milk lends bold fruity sweet milky flavour. Garnished with a juicy blackberry and a crisp candy net. Worth ordering!

The Royal Chocolate Log Cake (SGD $70++) has a soft airy spongy texture, with rich chocolatey sweet notes. A swirl of chocolate cream and thick chocolate fudge completes this festive chocolate cake.

The Cheese Berries Log Cake (SGD $68++) has a creamy smooth texture, with bold cheesy sweet notes. A coat of thick raspberry and strawberry fudge contrasts with fruity sour sweet flavour, balancing out this festive log cake.

Loved the oversized Profiterole (SGD $12), which has spongy chewy choux pastry, filled with creamy smooth scoops of vanilla ice cream. This has lovely floral bready sweet flavour. Completed with thick chocolate sauce, which is drizzled lusciously over. Good!

House Mixologist Vladyslav Yesepiv led us in a Cocktail-Making Workshop, which is available throughout December 2020 as part of the 'Mix & Stay' staycation package here at M Social Singapore Hotel. This fun experience guides you in the process of creating your very own cocktail, and guests get to bring home an actual cocktail shaker! My cocktail creation was strong in liqueur, but I couldn't get the caramelised sugar to stick at the edge of the glass, and it sank sadly to the bottom of the cocktail.
