Opening alongside the Novotel Singapore On Stevens hotel as their in-house restaurant in November 2017, Winestone offers classy Modern European dishes and Mediterranean platters alongside a wide range of signature wines from around the world. The name 'Winestone' inherently reflects its dual concepts; namely, an exquisite curated wine selection, and dishes served on stone boards. For the 2021 festive season, Winestone has collaborated with 4 local makers to deliver a sustainable, inspirational Christmas!

Ambience at Winestone exudes a modern, refined elegance. The open and spacious dining hall is neatly arrayed with comfortable yet sturdy furnishings, spaced according to prevailing safe distancing measures, which happily also accords a measure of privacy. Warm spotlights gleam off the metallic pillar decor and colourful floor tiles, while the well-stocked open bar offers a view of the resident mixologists at work. The place is comfortable and welcoming, well suited for long-lingering meals and business talks.

Service at Winestone is attentive, upbeat, and efficient. Kudos especially to our server Kristine, who made us feel so welcome during our visit, engaging in light-hearted jovial banter and making the dining experience memorable. We loved the attention showed to each table, and the introduction of dishes as they were served, demonstrating a good measure of product knowledge, especially for seasonal dishes. I note staff also accorded other tables similar standards, and were proactive in offering to clear finished dishes or top up drinks.

Food at Winestone is Modern European, drawing heavily on French and Italian cuisines for inspiration. While they had a previous focus on Mediterranean cuisine, for the 2021 Christmas season, they've curated a sustainable menu, using locally sourced fish and vegetable produce, a contributing factor in Winestone securing the Singapore Environment Council’s (SEC) Eco F&B certification. The fresh gourmet ingredients result in bold flavour in each well-executed dish, and you feel so wholesome dining here. Portions are individual sized. Prices for the 4-course festive meal (available from 15 - 30 December 2021) start from SGD $88++ per person.

This 2021 festive season, Winestone has partnered Floral Mikelle for fuss-free Christmas gifting, offering wine and floral bouquets perfect for dolling-up any dining table. The Elegant Blanc Hamper (SGD $126) is a chic modern set exuding elegance, with a pairing of 1 white wine, 1 rosé wine, and 1 bouquet of preserved florals in shades of red, white, silver, and gold. The Merrily Rouge Hamper (SGD $243) is an inviting and homely set, with a pairing of 2 red wines, 2 white wines, 1 rosé wine, 1 sparkling wine, and 6 bouquets of preserved florals in shades of red, white, green, and brown. Beautiful!

A decent Latte, with medium strength of body and a fragrant aroma of roasted coffee beans. Good perk-me-up at anytime of the day. Worth ordering!

This 2021 Christmas, Winestone has invited co-founder and chief mixologist at Section D bar, Dannon Har, to present 5 festive cocktails (available from 15 - 30 December 2021). The blends take common household ingredients, mixing it up with traditional cocktail aromatics, to create fresh and exciting tipples.
The Cocktail A Berry Christmas (SGD $20) features a blend of wheat beer with a spice infused syrup - I detect cinnamon, cloves, and star anise at a minimum. This elevates the beverage, with the syrup lending a herbal spice sweet note, to the grainy bitter sweet boozy flavour of the beer. Interesting.

The Cocktail Candy Rush (SGD $23) features a unique blend of peppermint vodka, lemon, Cointreau orange triple sec liqueur, and prosecco, but missing the candy cane garnish (this tasting was rather early). Nonetheless, this channels the requisite herbal minty fruity sweet zesty sour boozy flavour, lively and bright on the palate. Worth ordering!

The Cocktail Taste The Snow (SGD $18) visually resembles its namesake, looking like fresh fallen snow. The blend of gin, heavy cream, and vanilla ice cream is simple, but carries bold floral milky sweet earthy boozy flavour, thick and rich in mouthfeel. Highly recommended!

The Cocktail Santa's Mudslide (SGD $28) resembles a thick, rich chocolate eggnog. The decadent blend of Cognac brandy, coffee liqueur, Bailey's Irish cream liqueur, heavy cream, and chocolate shavings result in a robust boozy chocolatey milky sweet flavour, like a luscious blanket on the palate. Both soulful and rich all at once. Highly recommended!

Loved the Cocktail Warm Hugs (SGD $20), with its blend of dark rum, spice infused syrup (cloves, nutmeg), butter, and a cinnamon stick stirrer. Served warm, like a mulled wine, this has comforting sweet milky buttery spice boozy flavour. Warms both the body and the soul. So good we got a 2nd round. Highly recommended!

Served to open the meal, the Country Bread Loaf is firm and dense, with a rustic bready sweet flavour. Meant to be paired with Extra Virgin Olive Oil, Black Vinegar, Dukkah, the bread isn't that suitable for absorbing the dip, as it's not pourous enough.

The Pepper Tuna Salad features chunky slabs of tender tuna fish loin, seared aburi-style (or partially grilled) and dressed with black pepper, having robust smoky meaty savoury peppery spice flavour. The other ingredients in the salad lend bright freshness, including the crisp curly endive / frisée, juicy cherry tomatoes, tender pitted black olives, crunchy red onions, and soft quail eggs, combining for a pleasing vegetal sweet earthy eggy flavour. Dressed with a white balsamic vinaigrette, which lends a light sour bitter herbal note, exciting the palate. Yum. Highly recommended!

Like a little bite-sized taco snack, the Chilito Salad is served on a crisp cruncy tortilla chip, topped with fresh baby romaine lettuce, juicy pico de gallo, creamy guacamole, tender kidney beans, crisp red onion, and completed with a piquillos dressing. Big burst of vegetal sweet sour earthy salty spicy flavours when bit. Good!

The Goat’s Cheese Salad features home made fresh ricotta goat's cheese, locally sourced from Singapore's only goat farm. It's light and crumbly with a pleasant milky cheesy flavour. Paired with a thin silver of wispy air-cured prosciutto / parma ham with bold meaty salty savoury flavour, and juicy cubes of rock melon with bright fruity sweet flavour. Fresh crisp lettuce with vegetal sweet flavour complete the dish. Highly recommended!

A luxurious Seafood Bisque follows, having a rich and creamy texture with full-flavours of the ocean. Enhanced with truffle oil, and served with a knob of lobster knuckle.

Termed 'ugly potatoes' on the menu, these Roasted Baby Potatoes don't look half bad. Having a nice firm tender texture with deep earthy savoury salty starchy flavour, these were tasty and paired well with the main dishes.

The Barbecued Iberico Pork Ribs have a nice moist chew to texture, and the unique quince glaze lends a light fruity sweet note to the meaty savoury flavour of the pork ribs. Paired with a tangy mustard dip for a sour spicy kick.

The Free Range Organic Chicken is well seasoned, marinated with a blend of Mediterranean spices that gives it an addictive savoury spice flavour. I enjoyed this! Good!

The Grain-Fed Rosedale Ruby Ribeye features a beautifully seared beef ribeye, tender juicy and medium-rare with a pink center, having bold meaty savoury salty flavour. Served with a mushroom fricassee, juicy and tender with bold earthy savoury salty flavour, complementing the beef. Good!

The Locally Farmed Fresh Sea Perch features a sustainably sourced, medium sized sea perch fish fillet, with a tender moist flaky texture, and mild sweet savoury flavour. Paired with semi-dried tomatoes, which lend a fresh burst of vegetal sweet flavour.

Enjoyed the Mille-Feuille, with its crisp thin layers of flaky buttery sweet puff pastry, shattering beautifully to release the rich luscious vanilla cream with its floral sweet notes. Studded with fresh juicy blueberries and raspberries, which lend fruity sweet sour notes, giving this dessert a touch of character. Good!

The Apple Croustillant has a base of flaky thin buttery sweet puff pastry shell, filled with grainy biscuit crumble and chewy raisins, topped with cinnamon glazed, juicy caramelised red apple slices. Bite in, and you get a bold fruity sweet spice burst of flavour, yum. Enjoyed this unique dessert. Highly recommended!

The Molten Chocolate Log Cake looks unassuming and festive, but it hides a decadent center of rich Valrhona Guanaja chocolate, with chocolatey bitter sweet flavour, beneath a layer of light chocolate cream. Served with smooth vanilla ice cream, complementing with its floral sweet notes, this dessert was the best of the trio for me. Loved every bite. Highly recommended!

Festive feasting at home can be a hassle, but with Winestone's range of festive roasts for takeaway, preparing the meal becomes much smoother. From Honey Glazed Gammon Ham (SGD $238 for ~5.8kg) with pineapple sauce, to Beef Wellington (SGD $228 for 1.4kg) with black truffle jus, to Salmon And Spinach Coulibiac (SGD $188 for 1.4kg) with tarragon and orange reduction, there's something for everyone in the family. Loved the experience at Winestone, from the cozy ambience, attentive service, delicious food, and festive feel. While prices are suitably befitting that of an upper mid-range restaurant, the standards you'll receive make a Winestone dining experience good value. Will return for more!
