Description:
The Aloo Gobi is a Singaporean Indian vegetarian dish that consists of spiced potatoes and cauliflower, stewed and served in a mild curry gravy. Also known as Aloo Gobhi, Alu Gobi, or Alu Gawbi, the Aloo Gobi dish is usually priced around SGD $5 to $18 per serving. It's a simple, comforting, one-pot curry that is commonly eaten for lunch, tea, dinner, or supper.

The Aloo Gobi is typically prepared in North Indian style, which features a creamy thick 'wet' curry gravy, with the sticky chunky 'dry' curry paste version being less common. The key spices used include powdered turmeric, curry leaves, ginger paste, garlic paste, coriander stems, whole cumin seeds, and powdered garam masala. Other spices used vary from stall to stall, but may include black caraway seeds, powdered mango, mint leaves, fenugreek seeds, bay leaves, or powdered chili.

The spices for Aloo Gobi are lightly fried, after which chunks of pre-roasted potatoes and cauliflower are added and coated. Other ingredients may also be added depending on the stall, the most common include chopped tomatoes, red onions, peas, sliced chili, or shallots. The vegetables in the Aloo Gobi dish will have a tender soft texture without being mushy, and mild vegetal earthy sweet spice flavour without any bitter taste.

Usually served as a main dish accompanied by bread or rice, Aloo Gobi is considered relatively healthy and wholesome due to its nutritional value (provided less oil is used in preparation). Its versatility has contributed to its popularity, as a dish of Aloo Gobi can quickly be prepared for an easy meal, or adapted for gluten-free or vegan diets.

With several outlets around, this is one of the most convenient places to get this dish.

It's also one of the cheapest, with the drawback being the lower ratio of crunchy cauliflower to tender potatoes.

But the flavour is properly mildly spice sweet savoury, with a little bit of heat. Nice.

While they once had several outlets, they've lost out to competitors over the years. Now, only the main stall remains.

Still, it's nostalgic for me here, recalling after school meals with friends. The food remains good, and the portions hearty.

Their rendition of this dish has a generous portion of crunchy cauliflower and tender potatoes, with the curry paste coating the ingredients well, having mild vegetal earthy sweet spice flavour.
