The Bak Chor Mee is a Singaporean Chinese dish that consists of minced pork, pork loin slices, lettuce, braised shiitake mushrooms, and noodles, which can either be served in a soup or dry manner; with the dry version being more common. Also known as Mushroom Minced Pork Noodles, Minced Pork Noodles, Minced Meat Noodles, or BCM, the Bak Chor Mee dish is usually priced around SGD $3 to $12 per serving. It's a typical comfort dish that is popular, commonly eaten for breakfast, lunch, or dinner.


The Bak Chor Mee dry version is prepared Chinese Teochew style, with your choice of noodles tossed in a thin piquant gravy of vegetable oil or fried pork lard cracklings, light soy sauce, black vinegar, and sambal belachan / dried shrimp chili paste; fish sauce is sometimes added. The result is a pleasant sharp sour savoury salty spicy flavour profile to the gravy. There're some common foods I've never learned to appreciate (I'll actively avoid them), namely: 1) Matcha, 2) Pig's Liver, and 3) Durian.

As such, purists may not agree with this series on Bak Chor Mee (BCM) which is without pig's liver (and that's ok).

Since 1973, this stall has been drawing queues for their simple, unassuming, well-cooked BCM.

No meatballs or dumplings here, just the use of fresh tender pork loin and minced pork, crispy pork lard, and 2 kinds of tender braised mushrooms (shiitake & button champignon).

The chewy mee pok / wide flat egg noodles picks up the gravy of light soy sauce, black vinegar, and sambal chili paste well. For those who a prefer stronger taste, a bottle of black vinegar sits on the counter; add as you like.

Has bold meaty tangy sour earthy savoury spicy flavours.

The clear soup carries a heady sweet savoury flavour from the pork bone stock.

Crisp spring onions and bird's eye chili to complete. Queued about 15 minutes.

Operating since 1995 and formerly known as Ah Guan Mee Pok, this once-prominent stall has since consolidated into a single outlet in town.

Chef Guan is known for noodles made according to his recipe, and a zingy gravy that incorporates 4 different types of vinegar along with soy sauce, pork lard, and chili.

He also offers what is possibly the most 'atas' bowl of bak chor mee around, with options to add prawns, fish maw, eel, or abalone (prices go up to SGD $15+ per bowl). Previously they had options to add squid or scallops too. Pictured is the regular option though.

The mee pok / wide flat egg noodles are slightly bouncy with a soft chew, and evenly coated with the gravy, which lends a sharp savoury sour spicy flavour.

While there's no braised mushrooms or pork meat balls, they pair the tender minced pork with crisp lettuce, wobbly soft Japanese style onsen egg, chewy pork and shrimp roll, and a pork dumpling.

These lend a decent layer of vegetal eggy meaty sweet savoury salty flavours, decent enough.

An unconventional and luxurious bowl, especially with the premium ingredients added.

With history stretching back to 1945, this legendary stall was formerly at Hong Lim Food Centre, but relocated to the West in 2016 as the founder's 4th son took over the helm.

They're known for their Chinese Teochew pork dumplings, the slippery thin skin holding a juicy ball of minced pork with meaty sweet savoury flavour.

The gravy is intentionally strong, punchy with sour tangy salty spice flavour from the quality black vinegar, light soy sauce, and sambal chili paste.

The crunchy fried sole fish lends a fishy savoury salty contrast to the tender minced pork with sweet savoury flavour, and the succulent soy braised shiitake mushrooms with earthy salty vegetal flavour.

The soup is clear but rather light on taste. Not many come close to this BCM standard in the West, so expect queues of up to 30 minutes during peak periods as each bowl is prepared from scratch.

This dinner / supper spot is typically overshadowed by the more popular nasi lemak a few steps away.

This stall's BCM has a strong punchy gravy, full with earthy sour savoury notes, great for a late night meal.

The noodles tend to have a soft texture, but portion size is generous with lots of tender minced pork and pork loin slices, bouncy braised shiitake mushrooms, along with juicy pork meat balls.

The dry version feels better, as the soup has a sweet note that's unusual.

They formerly had 14+ stalls islandwide, but have since been reduced to this lone stall manned by the owner.

The soup is supposedly made with 18 ingredients, including old hen, turnip, and luncheon meat; resulting in a clear broth that carries bold sweet savoury flavour.

I also like their pork meat balls, which have a hollow center filled with minced meat. Bite in and the meat juice bursts out, with a satisfying meaty savoury salty flavour.

The braised shiitake mushrooms are thick sliced and chunky, with a pleasant tender chew and vegetal earthy salty sweet flavour.

The gravy coats the chewy mee pok / wide flat egg noodles well, and tends towards being more spicy savoury in taste, will suit those who prefer a milder vinegar taste.

The competitive edge here is the hand made meatballs, bouncy and juicy with lovely sweet savoury flavour.

The braised shiitake mushrooms carry vegetal earthy salty sweet flavour, served warm from the constantly bubbling stew.

The pork lard and sambal chili infused gravy coats the chewy mee pok / wide flat egg noodles well, with the spicy savoury flavour gradually building throughout the meal.

This stall actually does a good child-friendly version of bak chor mee, using a rich tomato sauce that results in an appetizing vegetal sweet savoury gravy, very nostalgic.

The regular version with black vinegar and sambal chili is decent enough, with the mee pok / wide flat egg noodles here having a more chewy texture than elsewhere.

Of note are the pork meatballs with a small hollow centre, carrying a burst of meaty savoury salty flavour from the meat gravy within.

With stalls spread across Singapore, cooking techniques vary from meh to good, but at least the ingredients from this renowned supplier brand offers a measure of consistency.

The stalls that offer the premium selection (fish maw, abalone) tend to serve better executed noodles.

The life hack when ordering here is to get the version with egg whisked in, which lends a lovely eggy sweet note to the savoury sweet pork broth.

You get the best of both worlds really, the noodles tossed in a sharp sour spicy gravy, the rest of the ingredients in a hearty bowl of soup, flavoured with wolf berries which lends a light herbal touch.

Though it doesn't boast a Michelin star, this stall run by the brother of that other famous stall has a lot of similarities in their dishes, with few differences.

Crucially, while they offer a similar winning gravy of black vinegar, light soy sauce, and sambal chilli, this is less intense in sour savoury spicy taste than the other stall.

The gravy beautifully coats the springy mee pok / wide flat egg noodles and tender minced pork meat and pork slices, while the pork meat balls have a juicy chew.

The crunchy fried flat fish offers a nice contrasting texture with salty savoury flavour, while the clear soup is beautifully sweet savoury, yum.

This 1-Michelin starred stall attracts queues of up to 1 hour, but we managed to get lucky with a wait of only 15 minutes.

Recognised as the 1st to combine black vinegar, sambal chili, light soy sauce, noodles, and pork, creating the now-iconic bak chor mee; they've been delighting folks since being founded by Tang Joon Teo in 1932.

Their gravy has a well balanced yet piquant sour savoury salty spicy flavour, while the mee kia / long thin egg noodles has a springy chew to texture.

The clear soup has a lovely sweet savoury flavour, with a light vegetal earthy note from the seaweed.

Love the freshness of the tender pork and the crisp fried flat fish.

The braised mushrooms have a nice vegetal earthy salty savoury flavour, with a juicy bite.

I like that they have 2 different kinds of dumplings too.

This popular stall draws a constant queue throughout the day. Known for its reliably decent and consistent bak chor mee, I queued 20 minutes for this.

Their soup is clear and light, but I prefer their gravy which is balanced with savoury sour spicy notes.

Love that the mee pok / wide flat egg noodles were al-dente with a light chew. The pork slices and minced pork are fresh with meaty sweet savoury flavour, the braised mushrooms lending a salty earthy savoury contrast.

Big flavour from the crisp pork lard. A comforting and satisfying bowl, among the better renditions in the area.

Since being established by Yap Eng Lam (Ah Lam) in 1975, they've been innovating with rice and noodle dishes. The salt-baked chicken here is delicious, but since you're already here, they also serve a tasty bowl of bak chor mee.

This is the atas premium option, with top shell abalone. They once used whole abalone, but few would pay $100 for a simple meal, hence the switch to a more wallet-friendly option.

The other unique feature is the omission of black vinegar from the gravy, and options to add battered scallops or soft boiled onsen egg.

They're generous with the minced pork and pork slices, and the overall bowl has satisfying meaty savoury sweet spicy flavour.

As 1 of the 4 famous soup bak chor mee stalls in the Bedok area, this is perhaps the one with the shortest queue, though differences in taste when compared with their more popular competitors is arguably minimal at best.

The star is the soup, light yet packing robust pork flavour, with a hint of alkaline on the tail. The bits of minced pork and fat are super soft, almost melting away in the mouth.

Paired with the springy mee kia / long thin egg noodles, this is a comforting dish on cold days.

The gravy is nicely balanced with sour savoury spicy flavour, the braised mushrooms are thick cut yet tender with earthy salty savoury notes.

The pork meat balls are juicy and meaty, while the fresh crisp lettuce lends a vegetal sweet contrast.

A generous portion of minced pork, crisp fried pork dumplings that crunch satisfyingly, and a large fried flat fish with sharp flavour completes.

So good.

What I like about this place is the decently reliable quality across visits, and the ease of customisation when ordering.

This chain has been operating for well over 10 years, but their main outlet still draws a near constant queue during peak periods.

The mee pok / wide flat egg noodles have a slight al-dente chew, picking up the slick yet punchy gravy, strong with sour savoury flavour, and just a tad of spicy on the back.

The pork meat balls are juicy with a satisfying chew, the minced pork is fresh with meaty savoury sweet flavour, and the lettuce is fresh and crisp.

The tender braised mushrooms have a juicy earthy salty savoury note. Enhanced with prawns which lend a premium feel.

Love the rendition here, because of their generous ingredients and punchy gravy.

Their gravy is more spicy in taste, with the chili building in heat as you eat. The mee pok / wide flat egg noodles are a good foil, springy and picks up the gravy well.

The pork meat balls have a hollow center, filled with minced pork and meat juice, bursting with a lovely meaty savoury salty sweet flavour.

The soup is clear but holds good taste, with seaweed, lettuce, and spring onions lending a vegetal earthy sweet note.

There's a good portion of tender braised mushrooms and minced pork too. I like adding bird's eye chili with this.

The most unique feature is their use of fried ikan bilis / anchovies, which lends a satisfying crunch to texture, and light savoury salty flavour.

Being open 24 hours a day, they're a reliable supper spot, and their dish helps alleviate the effects of the night.

Followed this stall for over 15 years, since the time they were at Eunos. Now with 2 stalls; the more prominent one in Serangoon Gardens and another in Ang Mo Kio, the legend of Mr Lee's 'tok tok' cooking technique carries on.

What makes this place stand out are the robust flavours of both gravy and soup versions, pairing nicely with the springy soft texture of the mee pok / wide flat egg noodles.

The gravy is thick and decadent, rich with earthy salty savoury flavour enhanced with pork lard, while the spicy notes are mild.

The pork bone soup is rich and full-bodied, probably the most strongly flavoured of pig's liver, carrying an earthy savoury sweet mineral taste. The premium version is enhanced with fish maw and egg, giving it a strong depth of flavour.

The minced pork is fresh and meaty sweet with a light chew, while the tender slow braised mushrooms have deep earthy salty savoury flavour.

A bit expensive for the portion size, but it's an all-round reliable quality that's delicious.

They cook 1 bowl at a time, methodically. The mee pok / wide flat egg noodles are springy, well coated with the balanced gravy of black vinegar, light soy sauce, flat fish, pork lard, fried shallots, and sambal chili. Bold with savoury salty sour spicy flavour.

The minced pork is tender and fresh, while the deshelled shrimp is juicy and succulent; both lending a meaty sweet savoury flavour.

The chewy pork meat ball is meaty and salty savoury, while the juicy braised mushrooms with vegetal earthy salty notes complete the old-school taste, yum.

Braised ingredients are the star here, to the extent that they actually offer 2 different versions of Bak Chor Mee.

The standard version has fresh minced pork and pork loin slices, meaty sweet savoury in flavour.

But the main taste profile is the juicy braised mushrooms with vegetal earthy salty savoury herbal flavour, plus the braised egg which lends eggy salty sweet herbal notes.

Those who want bigger flavour can go for their other version, which also has the same delicious mushrooms, paired with braised minced pork and braised pork ribs instead.

The braised pork ribs are the highlight; incredibly tender and succulent, with robust depth of meaty salty savoury herbal taste, so good. These tend to sell out just after lunch, so going early is advised.

Probably the most well known soup bak chor mee stall in the Bedok area and the originator of it all.

They're renowned for consistently serving heart-warming, tummy-filling bowls since 1968. Today, the 3rd-generation of founder Yap Tiong Chye runs the stall.

Beautiful in simplicity, it combines springy mee kia / long thin egg noodles, soft minced pork, bouncy pork meat balls, crisp pork lard, fresh spring onions, and chopped red chili, in a robust pork broth.

Bold on taste, each mouthful carries addictive meaty sweet savoury salty flavour with a hint of spice. Delicious and comforting, especially on cool days.

Bak Chor Mee (SGD $5) @ MacPherson Minced Meat Noodle.

Helmed by Yap Lye Hock since 2009, the stall itself has shifted locations at least 4 times over the years, sometimes remaining closed for up to 1 year, before restarting in a different location. Since he announced his original retirement in 2016, his 2 disciples stepped up and now each helm their own stalls, though "Uncle Yap" eventually made his own sporadic return (these days he alternates between working and retirement).

Of note is their soup, made by stewing a combination of pork bones, chicken bones, anchovies, and soy beans, resulting in a lovely warm sweet savoury flavour.

The pork slices and minced pork are tender with meaty sweet savoury flavour, the fish cake slices are bouncy with mild savoury salty flavour, while the soy braised shiitake mushrooms are springy with vegetal salty earthy savoury flavour.

The mee pok / wide flat egg noodles are springy with a light chew, picking up the balanced gravy well, which carries savoury salty spicy sour flavours from the rich black vinegar and chili.
