As the in-house all-day buffet dining restaurant of Conrad Centennial Singapore since November 1996, Oscar's is reowned for their extensive international buffet offering, consistently ranking as among the best in Singapore. We visited post-Christmas 2021 to sample their festive weekend brunch!
Ambience at Oscar's exudes an elegant sophistication. The warmly lit and spacious dining area centers around an open show kitchen with attractive food displays, flanked by large marble columns. Colourful balloons fill the ceiling, lending a festive atmosphere. The place is suitably comfortable for long, lingering meals.
Service at Oscar's is attentive and friendly. Staff engage in light banter with guests, demonstrating good product knowledge of the available dishes and buffet flow. They're observant, proactively offering to clear finished plates, as well as top up drinks, throughout the meal. Staff also efficiently assist with fulfilling requests.
Food at Oscar's spans international cuisine, including American, British, French, Italian, Chinese, Japanese, Indian, Turkish, and Singaporean. Fresh ingredients feature, and quality is consistently well executed. Portions are unlimited, with an extensive range of over 50 dishes. Prices are comparable to other hotel buffets, budget about SGD $128++ per person.

The festive Joy Christmas buffet at Oscar's is an 'assisted buffet', meaning you get to walk around and view the glass-covered food counters, but there isn't any self-service as per prevailing hygiene measures, instead, staff will plate and hand you the food. The weekend brunch buffet we had came with free-flow food and drinks (including a small selection of house pour wines and cocktails) for SGD $128++ per person, with dining hours from 12pm till 3pm on the weekends. This meal was not sponsored, we dined and paid as actual customers.

The Indomita Varietal Chardonnay is a white wine made from 100% chardonnay green grapes, by the Indomita winery in Casablanca Valley commune, Valparaíso province, Valparaíso region of Chile. It has a pale green colour, with aromas and tastes of pear, orange, pineapple, and green apple. The body is light, dry, and soft, with a bright fruity earthy sweet flavour, and a clean finish. Straightforward and simple, an inoffensive and standard wine.

It has a deep purple colour, with aromas and tastes of cherry, plum, blackcurrant, and roasted coffee beans. The body is bold, dry, and smooth, with a vibrant earthy fruity sweet flavour, and a clean finish. Straightforward and simple, an inoffensive and standard wine.

The Gordon's Pink Gin is infused with tonic water, rosemary, and strawberries, giving this a distinctive fruity herbal sweet flavour that lingers gently on the palate.

The Beefeater Gin is infused with tonic water, rosemary, orange, lime, juniper berries, and elderflower syrup, creating a pleasant floral fruity herbal zesty sweet sour flavour. We preferred this over the other drinks!

The Cheese On The Board features a selection of up to 7 different types of cheese, paired with an assortment of crackers, nuts, and fresh and dried fruit. This included the firm crumbly Pecorino Romano with its sharp salty milky cheesy flavour; the soft bouncy Chaumes with its pleasant nutty milky sweet cheesy flavour; the semi-soft creamy Livarot with its bold nutty savoury spice cheesy flavour; the firm grainy Gruyère with its distinct earthy salty savoury cheesy flavour, and the soft smooth Mahón with its appetizing fruity sweet salty cheesy flavour.

A signature festive Christmas special, the Foie Gras, Egg, Wild Mushroom Truffle Toast features a base of crisp pourous sourdough bread toast with mild bready sour smoky flavour. Topped with grainy foie gras and black truffle paste, fresh crisp spinach leaves, tender pork ham, bouncy wild beech mushrooms, and a runny poached egg coated with creamy hollandaise sauce. Finished with a sprinkling of spring onions and paprika. Cut in and the beautiful runny yolk just oozes lovingly over the dish. Has a complex layer of vegetal meaty earthy eggy salty sweet savoury spice flavour, bold and uncompromising. Good!

A signature festive Christmas special, the Buttermilk Fried Chicken, Bacon And Eggs features a base of crisp airy broiche bread toast with mild bready sweet smoky flavour. Topped with crunchy pork bacon, creamy soft scrambled eggs, tender juicy fried chicken coated with a crunchy mala peppercorn and buttermilk batter, and fresh crisp coriander leaves. Finished with a drizzle of sriracha sauce. Bite in, and you get a burst of meaty savoury spice sweet salty eggy bitter earthy flavour, yum. Highly recommended!

Loved the Pineapple And Honey Glazed Ham which was tender and moist with a big meaty bite to texture. The fruity sweet floral flavour of the pineapple juice and honey glaze complemented the bold savoury salty meaty flavour of the pork gammon ham. Paired with a rich red apple and hennessy cognac sauce, which was fruity boozy sweet savoury salty in taste. The Cinnamon Roasted Sweet Potatoes was tender and soft in texture. I loved how the unique sweet spice layer from the cinnamon paired with the natural sweet savoury flavour of the sweet potatoes. Highly recommended!

The Dry Rubbed Whole Roasted Beef Ribeye is carved gently before you, and the beef ribeye steak has a beautiful medium rare doneness, with a moist tender chew to texture and bold meaty savoury salty flavour. The Glazed Winter Carrots With Toasted Almonds were yummy, with a juicy crunch to the winter baby carrots and bold vegetal sweet flavour, layered with a nutty smoky note from the crisp toasted almonds. Highly recommended!

A Chinese New Year 2022 special that Chef showcased for our table, the Battered Cod Fish, Sauteed Asparagus & Brussels Sprouts features a medium sized fillet of battered cod fish, with a tender flaky texture. The rich gravy of curry leaves, dark soy sauce, and light soy sauce, lends a bold savoury salty spice flavour to the dish. Completed with crunchy sauteed asparagus and brussels sprouts with bold smoky vegetal sweet savoury flavour, and a whole bird's eye red chili garnish with sharp spicy flavour. Good!

The Rosemary & Garlic Marinated Lamb Chop was beautifully grilled. Succulent and juicy, tender lamb meat that pulled easily off the bone, with satisfying meaty savoury salty herbal spice fatty flavour. The chunky mashed potato with starchy sweet savoury flavour pairs well with the lamb. Good!

The unique Chestnut & Cranberry Stuffed Chicken Wing was a delicious festive special. The large chicken wing has diced chicken, chestnuts, and cranberries, in a grainy combination stuffed within. Holds bright meaty savoury nutty fruity sweet earthy flavour. Served over a bed of smooth spiced mashed pumpkin, which lends mild vegetal sweet spice flavour. Good!

Finished with only a few of their Festive Desserts, as we were too full. The Mulled Wine Tart has a crumbly grainy creamy texture, with the requisite earthy sweet fruity boozy flavour, which is a rather acquired taste. The Caramel Maple Pecan Tart was much better, the pleasant buttery crumbly crunchy texture and bold nutty sweet floral flavour was yummy. The Chocolate Royal Hazelnut Crunch was our favourite dessert, with its light crisp crunch alternating with creamy smooth textures, and the enticing chocolatey nutty sweet notes within. The unique Walnut Cheesecake had a pleasant nutty milky sweet flavour, with the crunch from the walnuts contrasting the smooth creamy richness of the cheesecake. Good!
