Opening in August 2022, Gyu San is a gourmet wagyu beef butchery and sando / sandwich purveyor, proudly sourcing true wagyu directly from different prefectures all across Japan. Offering the widest range of over 55 premium Japanese wagyu beef cuts from nose-to-tail and farm-to-table, Gyu San has also curated a small but focused dining experience that allows customers to sample their beef as a sando / sandwich.
Ambience at Gyu San is modern, simple, and casual. There's limited seating here, both indoor and outdoors, with decent functional modern furniture that's meant for quick meals. The extensive display of aged meat, and the decorative touches like lamp coverings that resemble their wagyu beef, lend the up-market feel of a gourmet butchery.
Service at Gyu San is friendly, efficient, and chirpy. The relatively young service staff offer recommendations, though the menu is small and focused, but they're able to describe each dish. They proactively top up water glasses, and offer to remove finished plates; I also note they clean up quickly when guests leave. Order fulfilment has a short wait.
Food at Gyu San is Japanese cuisine, focused on sando / sandwich featuring cuts of wagyu beef, for customers to experience. Chef Tomoyuki Kiga is the master behind each sando / sandwich, while Chef Linh Lam heads the butchery and carving. Quality is evident in each dish, exquisite and well-executed. Portions are sized for individuals. Prices are high, budget about SGD $52 per person.

The Wagyu Poteto Chippusu / Wagyu Potato Chips (SGD $8) features thin-sliced russet potato chips fried in top-grade wagyu beef fat, crisp and satisfyingly crunchy. Does this actually make them taste better? Perhaps, but it's very mild. You still get more of the starchy savoury salty flavour of the potatoes, with perhaps a faint hint of the fatty meaty savoury aroma of the beef fat. Well-executed and straightforward to be sure, but I can't recommend it on price.

The A5 Wagyu Yakiniku Sarada / A5 Wagyu Grilled Beef Salad (SGD $18) is a refreshing salad, with a base of fresh crisp vegetables (baby spinach, chard, mizuna, sorrel, red radish), topped with juicy cherry tomatoes and tender grilled A5 grade wagyu beef slices. The salad has lovely bright vegetal bitter herbal earthy sweet flavour, while the succulent beef lends bold smoky meaty savoury fatty notes to complement. Really good. Highly recommended!

The Tamagoyaki Sando / Grilled Rolled Egg Omelette Sandwich (SGD $18) has a thick slab of fluffy soft rolled egg omelette, coated in a crunchy panko breadcrumb crust and flash-fried. It's then sandwiched within crisp soft toasted crustless shokupan / milk bread, and perfectly grilled. Bite in and you get a satisfying smoky eggy sweet savoury bready flavour. Good!

The Gyu San Sando / Honorable Madam Cow Sandwich (SGD $32) visually resembles a mille-crepe, with multiple layers of thinly sliced, tender juicy Satsuma Gyu 4% Miracle wagyu beef flank (so named as it's the top 4% worldwide, with only 120 Tajima-Gyu / Japanese Black cows per year that have 80% or more fat, which is a miracle), 200g in total with prime marbling, coated in a crunchy panko breadcrumb crust and flash-fried. It's then sandwiched within crisp soft toasted crustless shokupan / milk bread, and perfectly grilled. Bite in and you get a robust smoky meaty savoury salty fatty sweet bready flavour. Good!

A thick and solid cut of Satsuma Gyu 4% Miracle wagyu beef striploin, incredibly juicy with a moderately tender succulent chew, 200g in total with prime marbling, coated in a crunchy panko breadcrumb crust and flash-fried. It's then sandwiched within crisp soft toasted crustless shokupan / milk bread, and perfectly grilled. Bite in and you get a robust smoky meaty savoury fatty sweet bready flavour. Highly recommended!

The Ebi Sando / Shrimp Sandwich (SGD $28) has a thick, bouncy, juicy patty of deshelled shrimp, coated in a crunchy panko breadcrumb crust and flash-fried. It's then sandwiched within crisp soft toasted crustless shokupan / milk bread, and perfectly grilled. Bite in and you get a lovely smoky sweet savoury bready flavour. Highly recommended!

For dessert, the Mango Sando / Mango Sandwich (SGD $12). This has thick juicy slices of fresh mango, layered with airy cream, sandwiched within soft crustless shokupan / milk bread. Has bright fruity sour sweet bready milky flavour, yum. Can get slightly messy as the cream oozes out when bit. Worth ordering!
