Description:
The Egg Masala is a Singaporean Indian non-vegetarian dish, a popular curry that differs quite widely from family to family, and stall to stall. It can range from a wet curry gravy, to a dry curry paste; from a chunky curry, to a smooth curry. Also known as Anda Masala, Egg Sambal, or Egg Curry, the Egg Masala dish is usually priced around SGD $2 to $10 per serving. It's commonly eaten as a side dish for lunch, dinner, or supper.


The key spices used in Egg Masala include garlic paste, ginger paste, salt, white sugar, cinnamon, cardamom seeds, powdered turmeric, and powdered chili. Other spices used vary from stall to stall, but may include curry leaves, bay leaves, cloves, cashew nut milk, cream, yoghurt, fermented shrimp paste, or powdered garam masala. The spices are cooked together with water, tomato puree, diced fresh tomatoes, and diced red onions, with the resulting texture of chunky or smooth dependent on how large or small the vegetables are.

Then, the mixture is cooked together with whole chicken eggs, and reduced. The Egg Masala will then have either a chunky or smooth texture, with bold eggy sweet sour savoury spice flavour. The style of Egg Masala varies by stall, some have it oily with the use of mustard oil, some have it spicy with sambal belachan and anchovies, some have it rich with buttery ghee / clarified butter and cream.

An Egg Masala side dish usually accompanies a meal with other curries, along with bread or rice. Egg Masala originated from the highway roadside casual eateries known as "Dhaba", a rest and refuelling stop for truck drivers and travellers across the South Asia subcontinent, as part of an affordable and filling meal.

Luxurious with bright eggy spice sweet savoury flavour, derived from an age-old recipe of the royal Nawabs.

A great dish for cold days.

A mild spiced tomato and onion curry, buttery creamy smooth with robust eggy spice savoury sweet flavour.

The hard-boiled eggs are bouncy and soft, pairing well with rice or bread.

Slight tangy vegetal sour sweet undercurrent from the tomato puree.

Since May 2019, this quiet stall has been serving consistently delicious North Indian cuisine and communal meals at reasonable prices.

Dishes are made to order, using fresh market-sourced ingredients every time.

Their rendition has a thick, almost-chunky rich curry gravy, robust with savoury spice salty sweet flavour. Has a pronounced fiery bite that fades relatively quickly.

The hard-boiled eggs are bouncy and tender in texture, the eggy sweet flavour at the fore, then you get the taste of the curry on the tail.

The South Indian style here has this rendition coated in a thick chili paste, juicy and oily with sharp spicy salty savoury flavour.

The hard-boiled egg has a springy soft chew to texture, with the natural eggy sweet flavour complemented by the fiery chili.

Goes well with rice. Yum.

Egg Masala (SGD $15.10) @ Sankranti Restaurant.

Named for the Indian Harvest Festival (Sankranti or Pongal) which marks the end of winter and the coming of spring, this family-run brand has been serving tasty and authentic South Indian dishes since January 2008.

Their rendition has a creamy thick curry, almost like a stew, with mild but pleasant sweet savoury spice flavours, a touch towards the sweeter side as compared to elsewhere.

The hard-boiled eggs within are bouncy soft, with good eggy sweet flavour. Yum.
