Founded by longtime friends Lee Hon Wai, Alvin Tan Kok Meng, and Mok Wai Peun, in Kuala Lumpur, Malaysia, in June 2014, GO Noodle House quickly expanded across the country, and opened in Singapore in November 2021. The popularity of GO Noodle House, whose acronym name stands for 'Got One', lies in their house secret broth, a family recipe from the family of Alvin Tan Kok Meng.

This house secret broth is made with a blend of up to 40 different types of fish bones, sourced regionally from the Philippines, Indonesia, and Malaysia. The fish bones are sorted into a central pot kept in a fire-proof room in their Shah Alam central production facility, which has been continuously boiling for nearly 8 years as of 2022.

Ambience at GO Noodle House is styled like a traditional Chinese tea-house. The sturdy dark wooden furnishings has oriental touches, while the spacious seating area is brightly lit. A large shelf, stacked with Chinese wine casks, flanks a wall. Touches of Oriental decor abound, and the atmosphere is usually bustling.

Service at GO Noodle House is polite and professional, albeit transactional with minimal interaction. The menu has clear pictoral descriptions, and ordering via the order chit is easy. Staff will verify orders, and fulfillment is relatively quick. I note staff will clean up efficiently when diners leave, taking the effort to sanitise each table.

Food at GO Noodle House is Malaysian Chinese cuisine, focused on soup noodles with their signature broth. The menu is extensive, with a good range. Quality of dishes is consistent, tasty and delicious. Portions are medium to large for individuals. Prices are relatively wallet-friendly and reasonable, budget about SGD $20 per person.

The Tea Pu-Erh (SGD $2.50) is refillable, and has warm toasty earthy savoury flavour that is calming. Good strength of body too. Good!

A selection of house appetizers, available as a Trio Platter (SGD $15.20 Set), or as ala-carte. The Crispy Bean Curd Skin (SGD $4.80) was the most satisfying for me, the crisp crunchy fried tofu bean curd skin carrying lovely grainy savoury salty flavour. The Pork Gold Coin (SGD $7.50) is their version of bak kwa, with tender chewy minced pork packed into a coin-shape then barbecued, carrying lovely smoky sweet savoury meaty flavour. The 5 Spice Meat Roll (SGD $7.50) is made with a blend of minced pork and minced mackerel fish meat, wrapped in a tofu bean curd skin sheet, has a light juicy tender crisp texture, with gentle meaty salty savoury sweet flavour. Good!

Each order of soup noodles is served with a complimentary shot of Shaoxing Hua Diao Jiu / Yellow Rice Wine, which staff will offer to pour in for you tableside, or you can do it yourself. This infuses each bowl of soup with lovely boozy sweet savoury flavour, enhancing each mouthful. The dipping sauce of Chili accompanies, lending a sharp spicy sour kick to flavour.

I opted for the silky smooth Jiangxi province-style mi xian / rice noodles, medium thick with a soft chew, carrying mild grainy sweet flavour. Each bowl is served with fresh crunchy nai bai / milk cabbage, and a generous sprinkling of crisp spring onions, both with vegetal sweet flavour. Garnished with thin sliced chewy pork belly strips with lovely meaty savoury sweet fatty flavour, and large bursting pork meat balls stuffed with minced pork that are springy chewy juicy in texture with robust meaty savoury salty sweet flavour. Highly recommended!

Each bowl is served with fresh crunchy nai bai / milk cabbage, and a generous sprinkling of crisp spring onions, both with vegetal sweet flavour. Garnished with thin sliced chewy beef flank slices with nice meaty savoury flavour, large beef meat balls that are springy chewy moist in texture with bold meaty savoury salty flavour, and gelatinous braised beef tendons with pronounced meaty salty savoury flavour. Highly recommended!

Garnished with thick sliced fresh Spanish mackerel fish with clean-tasting meaty sweet savoury flavour, I opted to add springy hand made pacific saury fish paste with savoury salty sweet flavour, and also bouncy juicy Fu Zhou fish balls stuffed with minced pork which carries bold meaty sweet salty savoury flavour. Highly recommended!
