Description:
The Egg Bhurji / Egg Poriyal is a Singaporean British English Indian fusion non-vegetarian dish, an uncommon appetizer or side dish that is typically paired with alcoholic drinks like beer. It's essentially a dish of scrambled eggs or egg omelette infused with a medley of spices. Also known as Muttai Poriyal, Egg Bhurjee, or Anda Bhurji, the Egg Bhurji / Egg Poriyal dish is usually priced around SGD $4 to $12 per serving. It's commonly served as an appetizer or side dish for lunch, or dinner.

The key spices used in Egg Bhurji / Egg Poriyal include mustard seeds, salt, curry leaves, powdered turmeric, black pepper, and powdered chili. Other spices used vary from stall to stall, but may include cumin seeds, white pepper, powdered coriander, asafoetida / hing, or powdered garam masala. These are fried together with diced red onions, eggs, and chopped red or green chili, and formed either into a scrambled eggs style or an egg omelette style. Some stalls may also add diced tomatoes, green peas, cabbage, urad dal / black gram lentils, or potates.

The Egg Bhurji / Egg Poriyal will have a fluffy soft bouncy crisp texture, with an eggy savoury salty sweet spicy peppery flavour. So fragrant, it's typically paired with beer and bread. The variations of Egg Bhurji / Egg Poriyal that include vegetables will have a crunch to the body, with a layer of vegetal sweet flavour; these are usually paired with rice instead.

While Egg Bhurji / Egg Poriyal can be easy to prepare, it's not as beloved as other British English dishes, or other Indian dishes either. Instead, it occupies a unique niche, commonly sighted on pub menus, but little elsewhere beyond that. Overall, a rather rare dish in Singapore.

Egg Bhurji / Egg Poriyal (SGD $3.20) @ Sakunthala's Restaurant.

Over the years, their rendition of this spiced scrambled eggs dish has reduced from entree size, and is now more apt as a side dish.

On the plus side, it's probably the most affordable version. Has a soft juicy crunch from the mix of eggs, red onions, and chili.

The spice blend, which includes turmeric and curry leaves, combine well with the ingredients, resulting in pleasant savoury spice salty eggy sweet flavours. Tasty and enjoyable.
