Description:
The Pig Organ Soup is a Singaporean Chinese Teochew dish that consists of a hearty peppery pork bone soup filled with pig offal, pork meat, and preserved mustard greens, accompanied by white rice and optional side dishes such as braised pig offal. Also known as Zhu Za Tang, or Pig Offal Soup, the Pig Organ Soup dish is usually priced around SGD $4 to $12 per serving. It's a popular dish eaten throughout the day, during lunch, dinner, or supper.

The stock for Pig Organ Soup comprises of pork bones boiled in water with seasonings (salt, garlic, ginger, white pepper or black pepper, and optional white sugar) for up to 3 hours. Various ingredients are added throughout the boiling process, depending on length of time it takes to tenderise them. The base pork bones take the longest. The pig's stomach, small intestines, and large intestines, are thoroughly cleaned prior (rinsed with water, trimmed of fat, rubbed with coarse salt or all-purpose flour, rinsed again with water, rinsed with white vinegar, then boiled once for up to 15 minutes), then boiled for up to 1.5 hours. The preserved mustard greens are boiled for up to 45 minutes, while delicate cuts such as pig's liver, silken tofu bean curd, pork loin, pork meat balls, and pork belly, are added towards the end, boiling for just about 1 minute.

The Pig Organ Soup broth will be clear and thin, with savoury salty sour sweet flavour. The pig's stomach, pork loin, pork meat balls, and pork belly, will be tender springy chewy in texture with meaty savoury flavour. The pig's small intestines, pig's large intestines, and pig's liver, will be chewy tender in texture with earthy savoury flavour. The preserved mustard greens will be crunchy tender with vegetal salty sour flavour, while the silken tofu bean curd will be soft wobbly with grainy sweet flavour.

Other uncommon offal used in Pig Organ Soup include pig's heart, pig's blood cubes, or pig's kidney. Additional garnishes may include celtuce, spring onions, fried shallots, or parsley. A Pig Organ Soup is typically served along with a bowl of white rice, and a vinegared chili dipping sauce.
