Founded in November 2016, Just Steam is a Chinese casual dining restaurant that offers a host of seafood, all cooked using their signature method; steaming. Just Steam has quickly gained popularity for its fresh, healthy, nutritious, reasonably priced seafood, served professionally in a comfortable environment.

Ambience at Just Steam is modern, clean, and casual. The brightly lit space is livened with a vibrant blue and white nautical theme, and the comfortable black cushioned chairs around the spacious, custom-built glass topped tables look sleek. The smell of steaming seafood hangs lightly in the air, and the sauce counter is easily accessible. Feels welcoming and lively. However, the outside of the restaurant looks drab, not visually appealing or eye-catching, save for a bowing statue.

Service at Just Steam is top-notch, modelled after fine dining restaurants. Staff are quick to welcome and seat guests, and while they converse mostly in Chinese Mandarin, they understand a little English. Good product knowledge, they're able to list the various types of seafood, and will accede to off-menu requests. All cooking is done by staff in front of you, as the injection steamer requires some skill. If you insist, staff will also let you cook the food on your own. They also offer a change of cutlery during your meal, and clear away empty / dirty tables efficiently.

Food at Just Steam is all about Chinese style steamed seafood. Freshness is key here, because you'll be able to taste the difference. I'm pleased to say that during our visit, the extensive range of seafood we had was very fresh, clean-tasting, and delicious. Cooked simply by steaming, the natural flavours of the seafood really shine. Portions are sized for communal dining, and visiting in groups of at least 4 or more people is recommended. Prices are mid-range, but considerably more affordable for premium seafood than elsewhere, and reasonable enough. Budget about SGD $45 per person for a full meal here.

They offer a small selection of sauces for you to create your own dipping sauce. Personally, I love the taste of the fresh seafood, so I tried to use as little sauce as possible. However, some items, like the fish, actually taste better with sauce. My picks for sauce include the sesame paste, sesame oil, chili paste, and fresh chili.

The Raw - Congee With Dried Shrimp / Seafood Porridge (SGD $5) is prepared before the start of the meal, with uncooked white rice and dried shrimp added to the bottom of the steamer, then staff lay the steam grill over the top. Throughout the 1 - 2 hour meal, the natural juices and flavors from all the vegetables and seafood flow down into the base of the steamer, cooking it.

The Signature Pork Bee Hoon (SGD $8 / $12 / $16) looks plain, but has a wonderfully bold, smoky aroma, and a flavour that is savoury peppery with a hint of salty, completely delicious. The owner's daughter says she's been eating this since young, and it's easy to see why this is a best seller here. Highly recommended!

The Display Of Fresh Seafood is a visual feast for the eyes, whetting the appetite, and allowing diners to inspect the good quality of the seafood.

Staff started us on the lighter seafood, being the Raw - Scallops (SGD $12), Oysters (SGD $6.50 Per Piece), which were steamed together. The scallop has a lovely bouncy chew to texture, with a light sweet savoury flavour, very clean-tasting and fresh. The oyster has a medium briny salty flavour, with a soft creamy texture, and I find adding a touch of lemon juice and light soy sauce to this helps enhance the taste. Good!

The Raw - Lobsters (SGD $45 Per Piece) look absolutely beautiful when laid out on the steamer. Fresh, clean-tasting, meaty sweet, the lobsters are so good. In particular the amount of lobster tomalley (actually lobster innards) is substantial, and having this luxurious ingredient feels decadent, like you're pampering yourself. Good!

Staff lay out the Raw - Fish Sea Bass (SGD $25), Clams (SGD $12), to steam together. Love the fresh, plump clams, which have a light sweet flavour, and completely lacks the bitter taste. The sea bass fish is meaty, and Chef has taken the effort to debone most of it, so the meat comes off easily. Do watch out for a few small bones that remain. The fish is clean-tasting and sweet, and I find adding a little light soy sauce and sesame oil helps enhance the flavour. Good!

The Raw - Crabs (SGD $21), Glutinous Rice (SGD $6) is neatly arranged in a steamer basket, with the glutinous rice forming the base and the crabs on top. The sticky savoury glutinous rice, which has tender earthy shiitake mushrooms and chewy firm lup cheong / Chinese pork sausage cubes within, absorbs all the natural sweet juice and roe of the crabs, making it extremely delicious. The crabs are fresh and large, with a good amount of clean-tasting, sweet meat and roe. Love that Chef has thoughtfully pre-cracked the shells for easy eating. Highly recommended!

The Raw - Napa Cabbage (SGD $5), Golden Mushrooms (SGD $5), King Trumpet Mushrooms (SGD $5), Pork Belly Bacon (SGD $8 for 8 pieces), Mushroom Pork Meat Ball (SGD $10 for 5 pieces) is steamed together in layers. While the savoury pork belly bacon becomes soft, it imparts a slight meaty flavour to the crunchy sweet napa cabbage, tender earthy golden mushrooms, and chewy earthy meaty king trumpet mushrooms. The mushroom pork meat ball is home made, and has a bouncy texture with an earthy savoury salty flavour. Good!

Staff assist to round off the meal with hardy vegetables, the Raw - Corn On The Cob (SGD $5), Purple Sweet Potato (SGD $6). The corn, still on its kernel, has a lovely fresh sweet flavour, though I found myself wishing for some butter and salt with it. Still tasty though, and really healthy. The Japanese purple sweet potato stains everything a vibrant hue, and its tender soft texture and light earthy sweet flavour is nice. Good!

Finally after 1 - 2 hours, and lots of steaming of seafood and vegetables, the Cooked - Congee With Dried Shrimp / Seafood Porridge is ready. Infused with all the sweet savoury flavours of the fresh ingredients, the medium thick porridge congee is warm and comforting. Staff add spring onions and help to stir everything, before serving. Love this satisfiying finish to the meal. Highly recommended!

Overall, Just Steam stands apart from the crowd with its focus on steaming food as a cooking method. With its extensive menu, great tasting fresh seafood, and reasonable prices, Just Steam is sure to continue attracting the crowds.
