The Brasserie Les Saveurs was established along with The St. Regis Singapore hotel in December 2007, and is their all-day dining and semi-buffet concept. With a focus on refined French cuisine admist an opulent setting, Brasserie Les Saveurs has long been a bastion of contemporary French fine dining in Singapore. We visited for a belated birthday celebration.
Ambience at Brasserie Les Saveurs evokes a sense of classy extravagance. The small but opulent dining area impresses with its high ceiling, inimate mood lighting, floor-to-ceiling windows overlooking the tropical gardens and sparkling pool, 3 enormous glittering hand-cut crystal chandeliers, and beautifully patterned floral motifs. Furnishing is comfortable, allowing for lingering meals, and there are even quiet curtained booths for more privacy. At night, a pianist regales guests with classical tunes.
Service at Brasserie Les Saveurs befits its fine dining status, with staff being professional, courteous, and efficient. They accord personalised attention to guests, often coming around to check on your meal, or clear away empty / dirty plates. They display decent product knowledge, able to offer recommendations on the menu, and describe some components of dishes. They were able to assist in wine pairings for us, and are generally polite and refined. Very good impression.
Food at Brasserie Les Saveurs is focused on French cuisine, fine dining style. Each dish we tried is well executed to a good standard, and tasty. Main courses are paired with a semi-buffet concept, making it well worth the price. Portions are decently sized, though with a semi-buffet, this is a moot point. Prices are higher than usual, naturally, but remain very good value for money, especially since the quality of food is good. Budget about SGD $87 per person for a meal, and up to SGD $137 per person with drinks included.

The chilled Foie Gras Terrine is meaty with a satisfiying chew, slightly creamy and stringy in mouthfeel. Good savoury sweet flavour, you get a little of the fatty oily feeling of the foie gras. Part of the semi-buffet, unlimited servings.

Loved the Mushroom Soup, with its rich, thick, creamy texture, and deep robust earthy savoury flavour. Choose to add chunks of diced button mushrooms and bread croutons for texture. Part of the semi-buffet, unlimited servings, and it's tasty enough that we got several rounds of this.

The Duck Rillette On Baguette was nice. Crisp, toasty baguetted bread with a satisfiying soft crunch, topped with stringy chewy duck rillette, having a savoury sweet flavour. Choose to add pickles, whose sharp sour flavour helps cuts through the heaviness of this nicely. Part of the semi-buffet, unlimited servings.

The Wagyu Beef Bourguignon is done classic French style, with Australian wagyu beef cheek slow braised in burgundy red wine and beef stock, rending it incredibly soft, with a texture that nearly falls apart when poked. Bold savoury salty earthy flavours, very meaty. The reduced beef au jus is slightly sweetened with pearl onions, garlic, button mushrooms, and herbs. Served with sauteed button mushrooms, earthy and tender, along with a smooth, creamy mashed potato. So good. This is a 1-time order main course.

A French classic, Berry Clafoutis, this delicate fruity dessert is well executed. A soft, wobbly vanilla custard flan forms the base, studded with cherries, raspberries, and blueberries. This gives it a sweet sour flavour, very nice.

The Opera Cake is bold in flavour, with sweet roasted coffee and chocolate notes. This classic French dessert cake has layers of coffee soaked almond sponge cake, layered with chocolate ganache and coffee buttercream, covered in a chocolate glaze. Nice contast of crisp and soft.

The Wine Concha Y Toro Private Reserve Late Harvest Sauvignon Blanc (SGD $85 Per Bottle) is a refreshing dessert white wine made with 100% sauvignon blanc grapes. Produced by Concha Y Toro in the commune of Pirque, in the Santiago Metropolitan region of Chile. It has a pretty, delicate golden yellow colour, with aromas of peach, caramel, orange, and apricot. Body is light, refreshing, and balanced, with tastes of pear, butterscotch, honeydew melon, and honey. It's ripe, fruity sweet, and complex, yet pleasant with a lingering finish.
