Having been established since 2013, or possibly even earlier, Toi Thai Kitchen is a casual, hawker style stall, serving up hearty portions of delicious Thai Chinese fusion dishes. These days, they're a hidden find, with 2 outlets in Singapore, the original at Golden Mile, and the branch in the Toa Payoh North industrial area.

Ambience at Toi Thai Kitchen takes after its location, sharing with the other stalls in the hawker centre. Usually, it's brightly lit, clean, and decently comfortable, with modern functional furniture. I like that the stall display is brightly lit and attractive, displaying their menu clearly.

Service at Toi Thai Kitchen is largely self-service, with ordering, payment, and collection of cutlery over the counter. However, staff do serve orders to your table, as there is usually a short wait of about 10 minutes for your order to be prepared. There's little engagement, as with most hawker stalls, but staff do make recommendations if asked.

Food at Toi Thai Kitchen is all about Thai Chinese fusion dishes. What I like best are their huge, generous portions; the serving size is designed for communal dining of between 2 - 4 people. Taste is above average, most dishes are delicious and well-executed with fresh ingredients. Prices are very affordable, budget about SGD $11 per person for a full meal here.

The Tofu With Minced Pork Soup (SGD $5) is decent, the thin clear soup / broth is slightly savoury sweet from the inclusion of minced pork, cabbage, kai-lan / Chinese kale / Chinese broccoli, straw mushrooms, crab stick, soft silken tofu beancurd, and carrots. Pure comfort food, makes a decent accompaniment to a meal.

The Omelette With Prawn (SGD $10) is large and fluffy in texture, but overly greasy. Also, the ratio of prawns / shrimp within is far too little. Looks great, but doesn't taste as good. Skip this.

Love the Thai Style Kai-Lan (SGD $6), with its fresh, crunchy kai-lan / Chinese kale / Chinese broccoli, in a savoury sweet oyster gravy. Stir-fried along with carrots and straw mushrooms, this was delicious and fresh. Good!

The Kaeng Khiao Wan Gai / Green Curry Chicken (SGD $5) has a lovely fragrance, and the green curry has a smooth, milky texture. There is a generous portion of chicken and chopped string beans within, nicely tender in texture with good savoury sweet herbal flavours. Slight departure from the traditional recipe, they've replaced the pea eggplant with cabbage instead. I find this delicious, because it lacks that metallic taste present in other versions elsewhere, and the herbs lend a refreshing touch. Good!

The Gai Hor Bai Toey / Pandan Chicken (SGD $10) is great value for money. Large, baked chunks of chicken, infused with the fragrance from the wrapping of pandan / screwpine leaf, juicy and tender in texture, with bold savoury sweet flavour. So so good. Highly recommended!

While the Khao Pad Nahm Liap Moo Sap / Olive And Minced Pork Fried Rice (SGD $5) is slightly lacking in the earthy olive taste, it has excellent wok hei / breath of the wok, each grain having a smoky savoury sweet flavour. The fried egg is decent, but I like the inclusion of the green mango salad, the sharp sour strips of young mango lend a bright zesty juicy burst of flavour. There is a hint of spicy heat as well, though I'd prefer it to be more spicy. Good!

The lovely Khao Pad Sapparod / Pineapple Fried Rice (SGD $5) has a delicate smoky fragrance of wok hei / breath of the wok, and the rice is nicely perfumed with the fruity sweetness of raisins and pineapple chunks. A dash of chicken floss lends texture and a depth of savoury flavour. An above average rendition.

The highlight was the Garlic Fried Chicken With Rice (SGD $6), so good that I wished it could be a stane-alone dish without rice. The large, generous portion has fried chicken strips whose interior is moist and tender, with a nicely crisp exterior. Fragrant with garlic, each bite releases the succulent, savoury sweet salty flavour. Pair it with the Thai chili sauce for added kick. Highly recommended!

The Combo Set Meal (SGD $7) is incredible value for money, as it's a huge serving just for a single person. Each of the 8 sets are served with a Tom Yum Seafood Soup, which has a lovely balance of sour sweet spicy flavours, filled with onions, straw mushrooms, 2 crabsticks, and 2 deshelled fresh prawns. I got the set with the Basil Pork Rice, which is served with plain white rice and a fried egg. The minced pork is stir-fried with carrots, basil leaves, string beans, sugar, light soy sauce, and chili. I find their version to be very good, less salty than elsewhere, having a nice savoury sweet flavour, with a mild spicy kick. Highly recommended!

The Deep-Fried 3 Tastes Sea Bass Fish (SGD $22) is named for its trio combination of sweet, sour, and spicy flavours. The sea bass fish is large and fresh, with a nicely crisp exterior that holds up well beneath the thick gravy, yet the fish meat is moist, tender, and clean-tasting. Great value for money too, it's among the cheapest fish dishes with a decent quality. Worth ordering!

The Pad Thai / Stir-Fried Thai Rice Noodles (SGD $5) doesn't have that balance of flavours, but what it lacks in sweet and bitter spicy flavours, it more than makes up with its smoky savoury sour flavours. The slippery long flat rice noodles contrast well with the crunchy fresh bean sprouts, chewy dried tofu beancurd puffs, and tender egg and crabstick. Tasty, but not the best I've had, being slightly above average.
