Established in December 2014, NUDE Seafood is named for their philosophy - to source fresh gourmet ingredients, then cook them simply, letting the natural flavours shine on the plate. With their focus on serving healthy fish and seafood dishes, NUDE Seafood stands out among casual dining restaurants, and they regularly draw a crowd. Advance reservations are recommended.
Ambience at NUDE Seafood is modern, casual, and functional. Illuminated with bright spot lights and warm decorative light bulbs, the spacious seating area is neatly lined with comfortable furnishings in colours of blue, white, black, and wood. A rough partially exposed brick wall lends character to the breath, while the open kitchen spanning its length offers a view of the team at work. There is a light odour of fried fish hanging in the air though.
Service at NUDE Seafood is warm, friendly, and attentive. Staff willingly engage in casual conversation, yet professionally introduce each dish and the ingredients when it's served, a quality usually associated with high-end restaurants. Beyond their good product knowledge, they proactively offer to clear finished plates throughout the meal, as well as offer a change of cutlery between courses. Fantastic, memorable customer engagement.
When I visited at lunch, I realised that they practice full self-service, with ordering, payment, and collection of orders at the counter. This is in contrast to our dinner visit, where we placed advance orders, paid in advance, and had dishes served to the table throughout the meal.
Food at NUDE Seafood is Modern Asian, with a focus on fish and seafood. Only quality ingredients are used, and these are procured daily, ensuring freshness. Dishes are simply prepared and healthy, with minimal seasoning or sauces, allowing the natural flavours to shine. Portions are sized for individuals, though most people tend to share. Prices are inexpensive and affordable. Budget about SGD $32 per person for a meal here.

The NUDE Iced Tea (SGD $5) is a refreshing blend of lavender earl grey tea and lime juice. Has a floral earthy sweet sour tangy zesty flavour, lively and lovely. Good!

The Beer Asahi Super Dry (SGD $10) is a Japanese pale lager, brewed by Asahi Breweries in Tokyo, within the Kanto region of Japan. This bright, clear golden yellow brew has a tame aroma of hops, grass, corn, and apples, with a smooth, refreshing, medium body and medium carbonation. Taste is floral bitter sweet, with notes of wheat, rice, malted barley, and lemon citrus, with a super dry, crisp finish. Very drinkable.

Their version of Chawanmushi (SGD $8) features a large, smooth, wobbly soft egg custard, generously coated in a rich velvety gravy of egg white, deshelled Sri Lankan crab meat, and crunchy spring onions. It has a lovely robust sweet savoury salty briny flavour, tasting vaguely of the ocean, in a good way. Delicious, and great for sharing.

The simply named Salad (SGD $5.80) is a complex interplay of textures; the crunch of the black fungus / cloud ear fungus, the soft red radish slices, the tender spinach leaves, the chewy tofu beancurd skin noodles, and the crisp dried tofu beancurd skin sheets. Garnished with white sesame seeds and a light sour plum gravy, this has layered flavours of earthy, sour, salty, grainy, vegetal, sweet, and nutty. Rather punchy on the palate, the dressing really helps bring the dish together.

In comparison to the other 'wow' dishes, the Broccoli (SGD $5.80) is simple and straightforward. Fresh crunchy florets of broccoli are tossed in thick oyster sauce, garnished with red chili (which has no spicy heat) and crisp shaved almonds. This has decent vegetal sweet savoury flavour. Best paired with rice, just ho-hum on its own.

The Gochujang Cauliflower (SGD $6.80) features fresh crunchy florets of cauliflower, glazed with a thick coat of gochujang / fermented red chili paste sauce, garnished with juicy pickled daikon radish and crisp shaved almonds. You get the bold sweet savoury spicy shrimpy flavour of the sauce, then a hint of the vegetal sweet sour notes of the vegetables beneath. A creative and delicious dish.

The Black Pepper King Prawn (SGD $13.80) is served with a minimum of 2 large fresh tiger prawns, along with 2 pieces of mantou bread. The partially deshelled tiger prawns have a juicy bouncy texture, with good sweet savoury flavour. The mantou bread is crisp outside, spongy inside, and has good bready savoury sweet flavour. But the star is the rich gravy; a thick grainy blend of black pepper, tamarind juice, curry leaves, dark soy sauce, sugar, water, and oyster sauce. Like a typical black pepper crab gravy, this has strong peppery savoury spice flavour, with a hint of salty sour notes on the finish. It was so good, we ordered more mantou bread to soak it all up!

Only available during lunch, the Fisherman's Stew (SGD $26.80) is best described as a variation of a French prawn bisque crossed with a Spanish zarzuela de pescado. This rich, thick stew is made with prawn stock, stewed tomato, garlic, thyme, fish broth, water, sea salt, paprika, and parsley. It's warm and comforting, soulful and hearty, with bright vegetal sweet savoury crustacean flavour. Within is a medley of fresh seafood, all with tender moist bouncy textures and lovely sweet savoury flavours, including squid, white clams, a single tiger prawn, and a fillet of sustainably-caught hake fish, although I wish it also had blue mussels. Finally, crunchy haricot vert with vegetal sweet flavour, chunky potato with starchy earthy flavour, and a large slice of warm toasted spongy soft sourdough bread with bready sweet sour flavour, complete this beautiful summer dish.

The Squirrel Grouper (SGD $18.80) is done in the classic Chinese Mandarin style of sweet and sour fish. The large squirrel grouper fish is flash-fried, resulting in a light crisp exterior, while the interior remains moist, tender, and flaky. Good sweet savoury flavour on its own. Dressed with airy oatmilk espuma foam and served with juicy slices of fruity sweet lychee, in a rich thick sweet and sour gravy. Flavours are bold yet balanced, allowing you to taste the natural goodness of the fish.

Visually resembling otah / otak-otak, the Hickory Smoked Salmon (SGD $12.80) is wrapped in a bamboo leaf, then steamed and smoked, locking in all the natural juices of the salmon fish. The result is a tender, flaky, juicy texture to the fish, with bold smoky savoury sweet salty flavour, so aromatic. The use of hickory wood really lends a depth of flavour that complements this. So addictive, I just had to have more!

Inspired by the traditional Chinese Teochew dish, the Steamed Pomfret (SGD $13.80) features a large, tender, relatively boneless fillet of fresh pomfret fish, steamed in a lotus leaf, along with crunchy mei cai / preserved mustard greens. This lends a bold salty savoury vegetal earthy flavour to the natural sweet savoury notes of the pomfret fish. Tasty enough to make you crave more, yet not overwhelming, being nicely balanced on the palate.

The Grilled Japanese Squid (SGD $16.80) is large and fresh, marinated in a blend of Thai spices and curry leaves, lending a deep savoury sour spice flavour to the natural sweet notes of the squid. Has a juicy bouncy firm chew to texture. Paired with a side of crunchy shredded purple cabbage dressed in a Thai chili vinaigrette, which results in a bright tangy zesty vegetal sour sweet spicy flavour. I enjoyed this.

We loved the Miso Grilled Halibut (SGD $20.80), with its beautiful sear to the tender, almost soft, silky, flaky fillet of halibut fish. Almost like cod fish! Served with soft earthy slices of shiitake mushrooms, tender young bamboo shoots, and chewy vegetal sweet leaves of spinach. The fish is marinated in miso paste and has a natural sweet savoury earthy oily flavour, with several large bones within. A warm mushroom infused tea is poured over tableside, lending an aromatic earthy note to the dish. Warm and comforting, nicely soulful.

The Oatmilk Spinach Tofu (SGD $12.80) was the weakest dish here. The wobbly soft tofu beancurd is made from oatmilk and spinach, served with tender portobello mushroom in a thick mushroom gravy, along with crispy fried kale. Overall, the dish has well executed textures, but tasted bland. I found myself wishing for some salt or spices to aid this along. Could be improved.

Their Bamboo Steamed Rice is fragrant and aromatic, with 2 different varieties on the menu. The portion size is more than sufficient for individuals, and is best shared.

The fragrant Blue Pea Mushroom Rice (SGD $4.80) doesn't have the signature blue colour from the blue pea flower, instead, it's a rich brown hue from the infusion of tender straw mushrooms. Garnished with crisp shredded seaweed, the fluffy sticky rice has a deep earthy savoury flavour. Deliciously addictive in taste, with a stronger flavour than several dishes. I think this would pair well with heavily flavoured dishes.

In contrast, the Salted Fish Blue Pea Rice (SGD $4.80) has the signature lovely blue colour from the blue pea flower, but seems to lack the flavour profile of the salted fish. We actually couldn't detect any salted fish at all. That said, we still loved the fluffy sticky rice garnished with juicy corn kernels, which lends bright grainy sweet corn flavour to the dish. Lovely and fragrant, this would pair well with lightly flavoured dishes.

The NUDE Honeydew Sago (SGD $6.80) was highly recommended by staff. The base has juicy honeydew melon balls, sticky peach gum, and chewy tapioca sago balls, over which is poured a rich, thick, chilled coconut milk gravy. It has a bright, fruity sweet flavour, followed by a mellow, earthy sweet flavour. Delicious but filling, this cool dessert is best shared.

The Tiramisu (SGD $6.80) is home made, and pretty delicious. Served in a large glass, the layers of espresso coffee infused ladyfinger biscuits / savoiardi / sponge finger biscuits, mascarpone cheese, whipped cream, and cocoa powder, result in a creamy rich soft texture. It contains rum within. This decadent dessert has a bold roasted coffee bitter sweet flavour, with a boozy finish. Yum.

Staff pretty much said that the Brownie With Ice Cream (SGD $6.80) is the most... normal dessert on the menu, and it was. It's not terrible, just average. The thick chocolate brownie has a soft moist texture, with deep earthy chocolatey sweet flavour. The creamy smooth vanilla ice cream complements, but it's still straightforward average. Best to go for the other desserts while here.

Update May-2022: Nearly 3 years later, and NUDE Seafood has survived through the Covid-19 pandemic, looking stronger than ever. NUDE Seafood has since moved into a larger space, with improvements in ambience, service quality, food quality, and a larger menu with more seafood options, though prices remain affordable and reasonable. Their al-fresco area is also pet-friendly, and it was great to see so many cute and friendly dogs during our visit!

The Cocktail Air Mail (SGD $16.80) features a blend of light rum, lime juice, honey, and champagne, served chilled with a garnish of caramelised lemon. It's additively boozy sweet zesty sour tangy floral in taste, beautiful but with a hidden strength. Loved it. Highly recommended!

The Momo (SGD $16.60) has 4 sticks of chicken thigh yakitori skewers, grilled to perfection. The chicken thigh is meaty yet juicy and tender, with enticing smoky savoury salty sweet flavour. Loved this. Highly recommended!

The Baby Squid & Capsicum Danish Set (SGD $19.80) is an appetizer that's large enough to share between 2 - 4 persons. The baby squid is fresh, bouncy, and succulent, with clean sweet savoury flavour. It's served in a Thai nam jim sauce with house preserved lemon, cucumber, and fish sauce emulsion, which has bright sour tangy zesty savoury salty sweet flavours, utterly delicious. Paired with a flaky danish pastry finger with bready sweet flavour and a satisfying crisp crunch, topped with a chunky blended capsicum / bell pepper gravy which lends vegetal sweet smoky notes. Highly recommended!

This features thickly sliced king oyster mushrooms, tender and bouncy with a light chew to texture, in a tamarind and mushroom glaze with fried shallots. Each mouthful is a bold burst of vegetal earthy salty savoury sour tangy flavours, yum. Worth ordering!

The Bouillabaisse Seafood Stew & House Made Focaccia Set (SGD $30.80) is a hearty, filling meal. The house made focaccia bread is crisp and pourous, which is great at soaking up the stew, and has a light bready sweet salty oily flavour. The bouillabaisse seafood stew has fresh seafood, including large juicy shell-on tiger prawns, tender flaky grilled barramundi fish, meaty plump clams, and bouncy chewy cuttlefish chunks, all with smoky sweet savoury salty flavours. The stew itself takes after a classic French rouille sauce, thick and creamy with robust salty savoury sweet creamy flavour, but is overly seasoned unfortunately. Garnished with fresh crisp watercress with vegetal herbal bitter sweet flavour, crunchy baby corn with vegetal grainy sweet notes, and tender roasted potatoes with starchy savoury sweet flavour. Could be improved.

Loved the Ling Cod Fish & Chips With Ponzu Cucumber Set (SGD $23.90). The ponzu cucumber has sliced Japanese cucumber marinated in a ponzu sauce with almonds, each bite carrying refreshing vegetal sweet salty nutty flavour. The fish and chips features large fillets of breaded ling cod fish, tender and moist and flaky, with bright sweet savoury flavour, and a light crunch from the breadcrumb batter. The medium cut potato fries / chips are crisp yet fluffy, with good starchy salty savoury flavour. A wedge of lemon and creamy tartar sauce is served alongside to complete. Good!

The Duo (SGD $33.90), as its name suggests, features 2 types of fish, accompanied by crunchy grilled cauliflower with smoky vegetal sweet spice flavour, over a base of sticky black rice with healthy grainy sweet flavour. There's a medium-sized fillet of grilled barramundi fish, tender and moist and flaky with smoky sweet savoury salty flavour. But the star is the hickory-smoked salmon fish, with its tender flaky juicy texture and bold smoky savoury sweet salty flavour; the hickory wood lending a depth of addictive deliciousness. Highly recommended!

Available only during dinner, the Binchotan-Grilled Young Chicken (SGD $27.80) is a visually intimidating plate, with the chicken claw artfully positioned in place of the chicken head, such that the entire dish looks like a chicken. The grilled chicken itself is excellent, with a tender bouncy juicy chew to texture, each bite releasing the appetizing sweet salty savoury smoky flavours. Served with springy nameko mushrooms with vegetal earthy sweet flavour, tender braised daikon radish with vegetal salty sweet flavour, and a large crunchy sourdough bread crisp with bready sour sweet flavour. Touches of sansho pepper, airy coriander emulsion, and creamy chicken fat aioli complete this decadent plate. Highly recommended!

The Yam Taro Orh Nee Cake (SGD $7) is well-executed and tasty, from the soft spongy sponge cake to the layers of creamy yam / taro buttercream with small chunks of the mashed vegetable within. Has bright vegetal earthy sweet buttery flavour that is more pronounced than other versions elsewhere, very appealing. Completed with a single bouncy gingko nut with nutty sweet flavour. Good!
