Established since May 2018, Go! K-BBQ entreats folks to, well, go for a Korean barbecue. Offering premium aged meats in an unpretentious, no-frills setting, Go! K-BBQ has come to be regarded as a reliable restaurant to satisfy that craving for succulent cuts of grilled meat.
Ambience at Go K-BBQ is casual functional. The no-frills place features warm lighting and wide sturdy wooden furnishings, with the smell of grilled meat lingering in the air. The display of aged meat is prominently displayed near the door. The 'secret' private rooms are slightly more comfortable, with a more spacious dining area per room.
Service at Go K-BBQ is attentive and personalised. Staff converse in a mix of Korean and English, and display great product knowledge of the various cuts of meat. Besides serving, they also help to prepare and grill the meats for you tableside. They offer to clear finished plates throughout the meal, and quickly clean up when diners leave.
Food at Go K-BBQ is naturally focused on Korean cuisine, specifically, Korean barbecue with meats aged up to 15 days. While they do have a good selection of other dishes, the star is the barbecue meats. Portions are large, sized for communal group dining. Prices are premium, reflective of the quality, budget about SGD $67 per person.

A relatively uncommon dish, the Yukhoe / Beef Tartare (SGD $26) features strips of raw beef, marinated in salt, sugar, sesame oil, white pepper, and garlic. Garnished with Korean pear, raw egg, pine nuts, and sesame seeds, you're supposed to mix everything together before eating. This Korean beef tartare has a tender juicy slippery chew to texture, with pleasing nutty spice meaty savoury salty eggy fruity sweet flavour. Complex and somehow comforting all at once.

The version of Galbi Tang Insam / Beef Short Rib Soup with Ginseng (SGD $22) here is different from elsewhere, and is so delicious. Garnished with tender chunks of beef with meaty savoury flavour, soft red dates with fruity sweet herbal flavour, and wispy beaten egg with eggy sweet flavour. The rich beef stock and ginseng soup / broth has bright meaty sweet savoury herbal flavour, nicely addictive. Couldn't help but keep reaching for more.

The Jin Galbitsal / Grilled Beef Short Ribs (SGD $36) is served with king oyster mushrooms, and staff help to prepare and grill this tableside. The king oyster mushrooms are bouncy moist in texture, with a mild vegetal earthy sweet flavour. The boneless beef short ribs are well marbled, resulting in a succulent juicy tender chew, with robust meaty savoury flavour. It simply melts delightfully in the mouth, with a satisfying taste from the meat.

The Samgyeopsal Gui / Grilled Pork Belly (SGD $66) is served with king oyster mushrooms and tteokbokki / ddukbokki / rice cakes, and staff help to prepare and grill this tableside. The king oyster mushrooms are bouncy moist in texture, with a mild vegetal earthy sweet flavour. Didn't like the grilled tteokbokki / ddukbokki / rice cakes, which was dry and hard with grainy sweet flavour. The star was the aged black pork belly, surprised at how succulent, tender, and juicy this was after grilling, despite the thick cut. With pleasing meaty sweet savoury flavour and a nice balance of fat to lean meat, the aged black pork belly was delicious even without any marinade.

The Mayak Kkeopdegi / Marinated Pig's Skin (SGD $18) is delicately prepared and grilled by staff tableside, using a stiff press to hold down the strips of marinated pig's skin. Diners are advised to sit back and away, because the hot oil pops off the grill from time to time... I got stung by oil droplets several times, as I was seated the closest to the grill. The decadent marinated pig's skin has a chewy gelatinous fatty texture, with deep savoury salty oily flavour that lies heavy on the palate. Definitely save some of the accompaniments for relief.
