Opened in October 2016, Noodle Thai Thai Kitchen serves flavourful Thai dishes made with fragrant herbs and spices. Noodles and grilled dishes are the speciality at Noodle Thai Thai Kitchen. Founder-couple husband Keith Teo runs the operations, while Thailand-born wife Candy prepares the sauces and ingredients for dishes, using her own family recipes, which ensures consistency in food quality.

Ambience at Noodle Thai Thai Kitchen is homely and casual. The small place is neatly decorated with Thai statues, curios, and pictures. Brightly lit, the sturdy and moderately comfortable furnishings are neatly lined and closely packed. The air-conditioning is sufficiently powerful, and welcome on warm days. Overall, it doesn't look particularly attractive, but it doesn't need to be.

Service at Noodle Thai Thai Kitchen is transactional and efficient. Staff are quick to seat guests and take orders, and despite the limited command of English, get by well. There's little display of product knowledge, but thankfully the menu is sufficiently clear. I note they clean up quickly when diners leave. Fittingly, there is no Goods & Services Tax (GST) or service charge!

Food at Noodle Thai Thai Kitchen is focused on Northern Thai cuisine, especially noodles and grilled dishes. The menu features some uncommon Thai dishes, including signatures from Chiang Mai. With the founders overseeing the kitchen, food quality is consistently above average. Portions are sized for communal group dining. Prices are relatively affordable, budget about SGD $23 per person.

The Iced Rock Sugar Lemongrass (SGD $2.50) is refreshing but mild, with the herbal earthy sweet flavour coming off as diluted. Could be improved.

The Iced Thai Lime Soda (SGD $3.80) is cold and refreshing, with the Thai lime juice lending a zesty tangy sour flavour to the lively sweet notes of the soda soft drink. But it's also slightly diluted. Could be improved.

The Red Tom Yum Soup With Seafood (SGD $12) is properly spicy sour herbal in flavour, with the fiery red soup / broth being more sour than elsewhere. Filled with a medley of fresh ingredients, including juicy tomatoes, succulent shell-on prawns, tender straw mushrooms, meaty plump white clams, and bouncy squid, all of which pick up the flavours of the soup / broth. Best paired with white rice. Good!

The Grilled River Prawns (SGD $24 for 4 pieces) feature large succulent river prawns, filleted and grilled to perfection. With a tender meaty crunch to texture and beautiful smoky savoury sweet flavour, these prawns are so enticing. Served with a seafood chili dipping sauce on the side. Good!

The Barbecued Sea Salt Sea Bass Fish (SGD $32) requires a lengthy preparation time, but the freshness of this dish is worth the 30-minutes wait. The large sea bass fish is coated in a layer of salt, stuffed with lemongrass and other Thai herbs, slow grilled, then the salt is gently removed. This results in the fish skin carrying most of the smoky salty savoury flavour, while the fish meat itself is clean-tasting with fresh sweet savoury herbal flavour. Served with silky rice vermicelli noodles with grainy sweet flavour, and crisp leafy lettuce with vegetal sweet notes, this grilled fish dish is succulent and delicious. I love it when paired with a chili dipping sauce. Good!

A speciality of Chiang Mai, Thailand, the Khao Soi Curry Noodles (SGD $7.90) features a delicious creamy thick yellow curry made with herbs and spices unique to the Northern region it hails from. A blend of yellow curry powder, red curry powder, light soy sauce, fish sauce, coconut milk, chicken stock, and other spices are slowly simmered, resulting in a milky sweet savoury spice flavour that is pleasant and mellow. Served with chicken drumstick with tender chicken meat, and a duo of chewy flat egg noodles and crisp fried flat egg noodles, all of which pick up the yummy flavours of the rich curry. Will return again just for this. Highly recommended!

The Egg Fried Rice (SGD $5.90) is decent and straightforward, with the smoky aroma of light wok hei / breath of the wok. While it certainly could be more pronounced, the eggy sweet savoury flavours of this dish are adequately tasty, pairing well with most dishes. Worth ordering!
