Founded in October 2013 by entrepreneurs Jamie Koh and Lovelynne Chong, The Beast Southern Kitchen + Bar is Singapore's first and longest-serving American bourbon bar, reowned for serving over 30 different bourbon whisky labels alongside delicious American Southern comfort food. With recipes curated from Atlanta, Georgia, United States Of America, The Beast Southern Kitchen + Bar is the place for hearty American grub.

Ambience at The Beast Southern Kitchen + Bar is raw and rustic. Inspired by a barn, the 3-storey place has ample salvaged wood features, but since the onset of the pandemic, only the first level is in use. The indoor seating features diner style perch stools around recycled oil drums and warm overhead lamps, while the outdoor seating features long wooden benches lit by farmhouse lights. Designed to be a casual bar, the place is great for catching up with friends, less so for families with children.

Service at The Beast Southern Kitchen + Bar is friendly and hospitable. Staff make you feel at home with easy conversation and their friendly demeanour, demonstrating good product knowledge in describing dishes and introducing them as they serve. I note they clean up quickly when diners leave, but I wish they would offer to clear finished plates throughout the meal. Staff appear clued in to the extensive drinks list, especially the background of the range of bourbon whisky labels available.

Food at The Beast Southern Kitchen + Bar is American Southern cuisine. Think large hearty portions of buttermilk fried chicken, bourbon maple syrup drizzled over waffles, iced tea, and generous slabs of barbecued pork. True southern comfort food. The extensive range of 30 bourbon whisky labels is great for pairing too. Portions are large and suitable for sharing. Prices are comparable to other typical restaurants, budget about SGD $41 per person for a meal with drinks here.

The Coca-Cola With Lime (SGD $6) features the iconic soft drink, served with a lime wedge. Has a light sweet herbal flavour from the cola, with a hint of the zesty sour tangy notes from the lime. Expensive though.

Good 'ole Lemonade (SGD $8), bright with zesty sweet sour flavour, helping to refresh the palate. Just like how they'd do it in the American South. Good!

The Bourbon Russell's Reserve Kentucky Straight (SGD $15) is a bourbon brewed by Master Distiller Jimmy Russell of the Wild Turkey Distillery in Lawrenceburg, Dearborn, Indiana, United States Of America. Aged for at least 10 years in virgin American oak casks with a #4 char (nicknamed alligator-char for its depth and strength), this bourbon has a vibrant copper orange colour, with aromas of cinnamon, toasted white bread, vanilla, and oak. The body is rich, spicy, and complex, with tastes of maple syrup, orange, cloves, and raisins. Has a strong fruity woody earthy sweet spice flavour, with a medium warming finish. A well deserved award winner.

The Bourbon N Apple (SGD $16) is a cocktail of sorts, made with a blend of Rebel Yell Kentucky Straight bourbon and freshly squeezed green apple juice, served over ice with a sprig of mint. Pleasantly drinkable, this has predominant notes of fruity sweet sour boozy, with a hint of the strength from the bourbon beneath. Worth ordering!

The Gin & Tonic Brass Lion Butterfly Pea (SGD $18) exudes elegance and sophistication. Brewed by the Brass Lion Distillery in Singapore, this is a harmonious blend of Singapore dry gin, lavender flowers, butterfly pea flowers, elderflower tonic water, and lemon juice. With a deep rich blue hue that morphs into a soft purple colour, this has pleasant aromas and tastes of lavender flowers, juniper berries, lemon, and pomelo. The body is mellow, silky, and clean, with rich floral fruity sweet herbal earthy flavour. Naturally infused without any preservatives, this is so good.

We shared a Southern Coleslaw & Cornbread Platter. The Southern Coleslaw (SGD $8) features crunchy purple cabbage coated in a light sauce of mayonnaise, lemon juice, and apple cider vinegar, which lends a beautiful vegetal sweet sour tangy zesty flavour. Refreshing, decent pairing with other dishes. Worth ordering!

The Cornbread (SGD $8) was excellent. The large cake-like loaf made from finely ground cornmeal has a lovely grainy sweet flavour and a fluffy crumbly texture. Warm and delicious on its own, it's served with a creamy, house made, whipped honey butter, which lends beautiful floral sweet notes. Highly recommended!

The star of the St. Louis Maker's Mark Glazed Pork Ribs (SGD $32) is undoubtedly the large, succulent, tender, juicy pork ribs. Thanks to the 4-hour slow roast it undergoes, the meat just peels clean off the bone. Glazed with a house tomato-based barbecue sauce infused with Maker's Mark bourbon, the pork ribs carry a robust smoky sweet savoury salty tangy sour spice flavour with a hint of boozy. Love the generous glaze and its enticing sheen. Served with a fresh garden salad (lettuce, cherry tomatoes) with vegetal sweet flavour, and long thin Cajun spiced shoestring potato fries with a fluffy crisp texture and addictive savoury salty spice flavour. Good!

The classic American Southern Fried Chicken (SGD $20) was so yummy. The fresh chicken is brined for 24 hours with herbs and spices, then coated in buttermilk biscuit crumbs, and flash fried. Crunch into the crisp chicken skin and you get a burst of salty peppery spice flavour, followed by the juicy chicken meat with clean sweet savoury notes. Love that it's not overly greasy. Served with Southern Coleslaw, and brown country gravy that lends bold salty savoury flavour. Understand they used to have larger chicken pieces, but this was still sufficiently filling. Highly recommended!

The Cornflakes Crusted Catfish & Chips (SGD $22) feature medium sized, clean-tasting fillets of catfish, coated in crispy cornflake batter that crunches gently to reveal the soft moist fish meat within. With a gentle sweet salty flavour, the fish pairs well with the creamy tartar sauce and its sour tangy zesty flavour. Served with long thin Cajun spiced shoestring potato fries with a fluffy crisp texture and addictive savoury salty spice flavour. Worth ordering!
