Opening to much fanfare in April 2019, alongside the rest of Jewel Changi Airport, Tiger Street Lab is a relaxing beer garden and casual dining restaurant. Operated under the Tiger Beer brand by the Heineken N.V. Group, Tiger Street Lab serves as their global experiential concept store, offering progressive Modern Singaporean cuisine paired with exclusive seasonal beer brews.
Ambience at Tiger Street Lab benefits from the breathtaking landscaped indoor rooftop scenery and iconic waterfall of Jewel Changi Airport. The cool mists of the waterfall and light air-conditioning create a comfortable setting, while the wide sturdy furnishing spaced neatly in the indoor beer garden is suitable for long lingering meals. The ample greenery at the rooftop also lends a sense of calm, bringing the outdoors in, evoking a tranquility of self.
Service at Tiger Street Lab is casual and efficient, with staff quickly greeting and seating guests. Orders are taken and fulfilled quickly, and I note staff also clean up efficiently when diners leave. That said, it's sometimes difficult to attract their attention. They display decent product knowledge, but not in-depth understanding of how the dishes are created, which is reasonable. Generally, staff do make you feel welcome, with sufficient attention and care demonstrated.
Food at Tiger Street Lab is Modern Singaporean cuisine, with small plates drawing on local ingredients, flavours, and cooking techniques that would seem more at home in a hawker centre, mashed up with premium ingredients and presentation that befits a restaurant. Bold on taste, each dish is designed to complement Tiger Beer. Portions are sized either for individuals or for communal group dining and sharing. Prices are reflective of a typical beer garden and gastrobar, budget about SGD $40 per person.

The Beer Tiger Lager (SGD $12 per pint / $10 per pint happy hour) is the iconic classic European pale lager and flagship beer of the Tiger Beer brand, brewed by the Heineken N.V. Group in Singapore. A bravely creative and unpretentious tropical pale lager, the Tiger Beer Lager pours a clear golden yellow colour with visible lively carbonation, and aromas of white bread, biscuits, apricot, and hops. The body is smooth, rounded, and crisp, with tastes of cornflakes cereal, honey, wheat, and corn. Has a clear bready sweet flavour with a light bitterness on the finish, pleasant and nicely refreshing.

The Beer Tiger Crystal (SGD $12 per pint / $10 per pint happy hour) is a 4.6% ABV (Alcohol By Volume) crystal cold filtered lager, brewed by the Heineken N.V. Group in Singapore, using all natural ingredients for the ultimate refreshment. The Tiger Beer Crystal pours a pale straw gold colour with little carbonation, and aromas of lime, wheat, apricot, and tangerine. The body is smooth, light, and crisp, with tastes of green apples, scones, scrambled egg omelette, and corn. Has a bright fruity bready sweet flavour with no bitterness on the finish, gentle and nicely refreshing.

The special edition Beer Tiger Orchid Brew (SGD $15 per pint) was first released as a seasonal beer at the launch of Tiger Street Lab, and subsequently made available through retail to commemorate Singapore's 55th National Day (on 31st August 2020). Inspired by Singapore’s national flower, the Vanda Miss Joaquim, this full-flavoured black lager is infused with orchids. The result is a subtle floral note with a hint of citrus, complementing the malty sweet bitter grainy flavours within. The eye-catching package (of the beer can) is designed by local artist and illustrator, Tiffany Lovage, who strove to blend elements of the orchid-infused beer with the lushness of the city.

The menu lists this appetizer as "Truffle Fries", but Fries With Truffle Mayonnaise (SGD $10) is the more accurate description. With long and thick-cut potato fries / chips, fluffy and crisp with bold starchy sweet savoury salty flavour, served with a creamy truffle oil infused mayonnaise that is boldly earthy milky sweet savoury in taste. Decent bar snack for munching, though portion size is a little small for the price. Worth ordering!

The Har Cheong Chicken Nibbles (SGD $12) feature har cheong / prawn paste marinated chicken cubes, deep-fried till the exterior is crisp with a light crunch, yet the interior remains tender and moist. Served piping hot, the chicken chunks have a distinct shrimpy earthy savoury salty flavour, yum. A creamy mayonnaise dip on the side completes this decadent bar snack. Good!

The Grilled Chicken Skewers With Makko Teck Neo Signature Rendang Sauce (SGD $24) is a fusion satay dish created in collaboration with Makko Teck Neo, a Peranakan restaurant reowned for their traditional and bold-tasting dishes. Here, the humble satay is upsized, with large chunky marinated chicken skewers, grilled perfectly. It's tender with a good moist bite to texture, carrying a smoky appetizing aroma, while the marinade lends bold savoury sweet salty spice flavour to the chicken skewers. Instead of satay sauce however, they've replaced it with a rich thick chicken rendang gravy instead, punchy with its spice savoury nutty earthy flavour. Served with crunchy juicy cucumbers and crisp red onions, both lending sharp vegetal sweet flavour. Highly recommended!

Loved the Shrimp, Guacamole, And Mango Salsa Flatbread (SGD $16), it was so yum. The base of crisp toasted flatbread with gooey mozzarella cheese has a light bready sweet savoury smoky cheesy salty flavour, and holds up the ingredients firmly, yielding only with a light crunch. The toppings of bouncy succulent fresh deshelled shrimp, gooey parmesan cheese, juicy crunchy salsa (diced mangos, red onions, tomatoes), and creamy guacamole, combine in a medley of fruity vegetal sweet sour cheesy salty savoury; a beautiful and appetizing burst of flavour on the palate. So addictive. Highly recommended!

The Beef Pepperoni And Mushroom Flatbread (SGD $16) resembles the classic pepperoni pizza. The toppings of tender button mushrooms and chewy beef pepperoni lend bold meaty salty savoury vegetal earthy flavour. Satisfying comfort dish, though I wish they were more generous with the button mushrooms. Worth ordering!

The Seafood Spaghetti Goreng (SGD $18) is essentially a fusion Mee Goreng, using long silky thin spaghetti pasta noodles, in place of the usual yellow wheat egg noodles. Otherwise, the garnishings of tender potato cubes, juicy tomato, bouncy squid, wispy egg, and succulent juicy deshelled spotted prawns, are similarly used like the local dish, with the only difference being the inclusion of alfalfa sprouts. Their rendition carries a robust bright spicy eggy sweet savoury salty flavour, with a touch of fiery heat that lingers on the palate. Yummy, causes you to crave more. Would order again. Highly recommended!

The Laksa Prawns Spaghetti (SGD $20) is essentially a fusion Laksa, with long silky thin spaghetti pasta noodles, in place of the usual thick bee hoon / rice vermicelli noodles. The garnishings of crisp bean sprouts, spongy tau pok / tofu puffs, tender fish cake, bouncy squid, and succulent juicy deshelled spotted prawns, are similarly used like the local dish, with the only difference being the inclusion of a soft boiled onsen egg. Their rendition carries a lovely earthy spice savoury sweet eggy flavour, with a distinct hit of the rich coconut milk infused laksa paste gravy and its shrimpy savoury spice notes. The only quibble is the tofu puffs were dry and unable to soak up the delicious gravy, but overall the dish is above average. Good!
