Established during a volatile time for a restaurant opening in June 2021, given the dour and challenging business environment brought on by the pandemic, 6ixty 7even Restaurant & Bar is a sophisticated dining destination that offers delicious Modern European at reasonable prices. Thoughtfully designed and thoroughly tested to showcase the best flavours and ingredients, the 5-star hotel restaurant standards of 6ixty 7even Restaurant & Bar means every meal is an experience to look forward to.

Ambience at 6ixty 7even Restaurant & Bar exudes a quiet sophistication, classy but elegant. The 1st level of this restored shophouse features the gastrobar, with the main feature being the large bar counter spanning the open kitchen, allowing diners to interact with and observe the kitchen team preparing dishes. In itself, this is an excellent experience. The 2nd level features 2 distinct sections; the first being an intimate sit-down dining area, lit by spotlights and lined with casual comfortable furnishings. The second is a cozy lounge, with plush seats that lend well for relaxing, great for conversations and drinks.

Service at 6ixty 7even Restaurant & Bar is friendly and efficient, really making guests feel welcome. Staff are polite, quickly greeting and seating arrivals. They demonstrate good product knowledge on the menu, which changes seasonally, being able to explain how dishes are put together. I note staff quickly clean up when diners leave, but they also proactively offer to clear finished plates throughout the meal, and top up drinks. It's fantastic to be able to interact with the kitchen team as they prepare your meal, gaining insight into how each dish is conceptualised and formed, described in detail as it's served.

Food at 6ixty 7even Restaurant & Bar is Modern European cuisine, 5-star hotel restaurant contemporary dishes that are luxurious, delicious, yet reasonably priced. Chefs Ramesh and Vince head up the kitchen, with Chef Nixon Low consulting. Being familiar from prior restaurants, I know the exacting standards demanded in each dish as it's refined, striving for perfection. The result; ingredients that are respected and paired to highlight their inherent flavours, beautiful plating that is visually appetizing, large and substantial portions, and tastes that you'll savour. Prices are surprisingly not exorbitant, with a 4-course dinner at SGD $67++ per person. Great value for money.

There are 2 signature classic cocktails here. The 1st is the Cocktail Pegu Club (SGD $17), featuring a blend of gin, Cointreau orange flavoured triple sec liqueur, and lime juice, served with a wedge of lime. This cloudy white beverage has a boozy fruity sweet sour zesty flavour, great for sipping. Worth ordering!

The 2nd is the Cocktail Clover Club (SGD $17), featuring a blend of gin, raspberry syrup, lemon juice, and egg white, served with fresh mint leaves. This vibrant red beverage has a robust fruity sweet sour herbal boozy flavour, rich and velvety. Worth ordering!

The Chilled Angel Hair Pasta (SGD $67++ 4-Course Set Per Pax) is a delicate, luxurious appetizer that helps open the palate. Chef Vince expertly twirls chilled angel hair / capellini pasta noodles, infusing the long thin strands with just the right balance of truffle oil and kombu seaweed, resulting in a mild earthy savoury sweet touch, not too overwhelming. The gleaming avruga caviar goes on top, juicy globules that burst with briny salty sweet notes. Completed with crisp sakura ebi / sakura shrimp, crunching lightly with salty shrimpy savoury flavour. Looks delicate, but stands out with its bold refreshing flavour, and a generous portion size. Highly recommended!

The Truffle Scented Forest Mushroom Soup (SGD $67++ 4-Course Set Per Pax) is a large, filling, and hearty soup. Plated with large chunks of tender juicy forest button mushrooms with vegetal earthy sweet savoury flavour, crispy brioche bread croutons that are pourous with bready sweet flavour, and a thick dollop of sour cream with milky sour notes. It's dressed with truffle oil and served, then Chef Ramesh pours a creamy thick mushroom veloute table side. The aroma perfumes the air, and the rich soup / broth slowly covers the bowl, spreading like a velvety blanket over the ingredients at the base. Lovely vegetal earthy salty savoury sweet flavour, so filling. Yum. Highly recommended!

The house signature set menu presents 2 options of mains, from which you select 1. The Pan-Seared Tiberias Harvest Locally Sourced Barramundi (SGD $67++ 4-Course Set Per Pax) is the fish option. A base of grainy violet quinoa, firm edamame / immature soy beans, and soft braised baby cabbage, is covered with a creamy Iranian saffron and turmeric emulsion, resulting in a rich and complex vegetal grainy sweet savoury spice flavour. The large and boneless fillet of barramundi fish is fresh, pan-seared till the skin is crisp, yet the fish meat remains tender moist flaky in texture, with lovely sweet savoury salty flavour. A dressing of micro greens complete. Loved every bite of this. Highly recommended!

A base of creamy smooth kabocha squash pumpkin puree, tender roasted heirloom carrots, and juicy cherry tomatoes, is covered with a silky tarragon chicken au jus, resulting in bright and refreshing layers of vegetal sweet earthy spice savoury flavour. The large and boneless roulade of chicken is farm fresh, roasted till the skin is crisp, while the chicken meat retains a succulent tender juicy texture, with robust sweet salty savoury flavour. A dressing of micro greens complete. Every bite causes you to crave more. Highly recommended!

The 67 Chocolate Dome (SGD $67++ 4-Course Set Per Pax) is a delightful and whimsical dessert. A playful combination, with the base comprising crumbly dark chocolate soil with deep chocolatey sweet flavour, juicy blueberries and blackberries with fruity sweet notes, and crunchy Zeta popping candy which bursts with a fizzy sweet surprise. The chocolate dome is coated with a smooth chocolate cream, revealing the soft creamy chocolate mousse within when cut, with deep chocolatey sweet milky flavour. Paired with a smooth raspberry sorbet, whose bright fruity sour sweet flavour helps contrast the chocolate. Good!

Perhaps the highest praise I can say for 6ixty 7even Restaurant & Bar is that we will return. I really loved the overall dining experience I had during our visit, from the classy ambience, the friendly service, interacting with Chef over the counter, having beautifully presented and delicious food, and seeing how relaxing the lounge is. Have since returned to 6ixty 7even Restaurant & Bar for more!

The Cocktail Lychee Martini (SGD $16) is a floral fruity sweet boozy tipple, made with a blend of vodka, lychee juice, lychee syrup, and garnished with fresh juicy lychee. The fruity notes tame the strength of the vodka, making this pleasant yet punchy. Good!

The Cocktail Long Island (SGD $20) is meant to be strong and punchy, with a smoky boozy sweet bitter herbal fruity sour flavour. But the blend of gin, vodka, tequila, triple sec orange liqueur, lime juice, and coca-cola / coke soft drink, seems rather tame compared to elsewhere, unable to achieve the same high of taste profile. Could be improved.

The Wine Valvirginio Chianti Classico (SGD $78 per bottle) is a red wine, made from a blend of 80% Sangiovese red grapes, and 20% Merlot purple grapes, by the Valvirginio winery in Florence, Tuscany, Italy. It has a deep ruby red violet colour, with aromas of raspberry, violet flowers, vanilla, and oak. The body is medium, tannic, and persistant, with tastes of cherry, blackberry, iris flowers, and smoke. Has a deep fruity earthy floral sweet flavour, with a lingering finish.

Loved the Truffle Fries With Gruyere Cheese And Truffle Aioli (SGD $15), we kept reaching for more. The medium thin shoestring potato fries are crisp outside, fluffy inside, perfumed with truffle oil. Has an addictive starchy savoury salty sweet earthy flavour. Shavings of gruyere cheese and coriander lend a cheesy salty herbal vegetal note, while the creamy truffle aioli lends bold milky earthy sweet flavour. Highly recommended!

The Yangnyeom Style Crispy Chicken Karaage (SGD $14) features chunks of boneless chicken karaage, juicy and tender and piping hot within, coated in a crisp crunchy batter glazed with yangnyeom sauce. Each bite releases a burst of satisfying meaty sweet savoury spicy salty flavour, with a slight kick of heat. Nice, makes for a great bar snack. Highly recommended!

The Pan Roasted Foiegras, Caramelised Granny Smith Apples, Mulled Wine Raisins, Feuille De Brick (SGD $26) is so luxurious and decadent. The thick fatty soft succulent slab of foie gras sits in a base of rich brown gravy and apple espuma, surrounded by juicy caramelised granny smith apples, chewy mulled wine infused raisins, and crisp micro-greens. Has complex layering of fruity sweet sour boozy earthy fatty savoury salty flavours. Completed with crisp feuille de brick, a wheat flour pastry that shatters delicately and carries lovely bready sweet savoury flavour. There's a lot going on here, I personally would have liked it better toned down. Worth ordering!

The Signature Connor Stout Braised Beef Cheek (SGD $32) has a large chunk of beef cheek, braised in a Connor stout infused gravy till soft and tender, while the gravy takes on the richness. Has a robust meaty boozy savoury salty flavour, yum. Served on a bed of creamy smooth peanut butter pomme puree, the peanut butter lending a nutty sweet savoury note that complements the starchy sweet savoury flavour of the mashed potatoes. Surrounded by tender forest beech mushrooms with vegetal earthy salty flavour, and juicy pickled pearl onions that burst with tangy sour sweet vegetal flavour. Very filling, best shared. Highly recommended!

The Kurobuta Pork Chop, Bone In, With Bravas Style New Potatoes, Grilled Spiced Broccollini (SGD $42) features a 250g bone-in pork chop, grilled to perfection. Thickly sliced, each piece of kurobuta pork chop was juicy succulent with meaty fatty savoury salty smoky flavour, incredible. The grilled spiced broccollini was crunchy moist with smoky vegetal sweet earthy spice flavour, while the Spanish bravas style roasted potatoes were tender soft fluffy with robust starchy salty savoury flavour from the accompanying pork gravy au jus glaze. Highly recommended!

The Burnt Cheesecake (SGD $20) is done Basque style, the warm cheesecake being torched on the surface, giving it a smoky cheesy sweet salty flavour, with an almost-runny moist soft texture. The crunchy speculoos crumble on the side lends a contrasting crunch to texture, and a mild bready toffee sweet flavour that keeps the dessert exciting. A juicy poached apricot with fruity sweet flavour, a creamy smooth vanilla ice cream with floral milky sweet notes, and edible flowers, completes this dessert. Good!
