Description:
The Ice Cream is a Singaporean Persian / American / Italian dessert that consists of mostly milk or cream blended with one or more assortment of flavour enhancers, from fruit juices to nuts to flowers to spices and herbs, then cooled below freezing temperature such that it resembles a smooth semi-solid paste. Ice Cream can be served in either a cup, an edible wafer cone, a sundae glass, or various ice cream bowls. Also known as Gelato, Frozen Custard, Soft Serve, Ice Cream Cone, or Ice Cream Sundae, the Ice Cream dish is usually priced around SGD $1 to $20 per serving. It's normally eaten for dessert.
An Ice Cream is typically made from cow's milk or cream, though alternatives such as goat's milk, coconut milk, soy milk, or almond milk are also common. To the milk and cream is added white sugar or alternatives such as cane sugar or palm sugar, as well as optional salt or chicken eggs, along with the choice of flavour enhancers. The mixture is heated and whisked to blend, then chilled and churned, and left to freeze before serving. Some stalls may add natural food additives or stabilizing agents, such as glucose-based corn syrup sweeteners, while fancy options may use liquid nitrogen. The resulting texture of Ice Cream is usually soft, smooth, thick, and creamy, without any ice crystals.
The range of available flavour enhancers for Ice Cream are nearly endless. In Singapore, the most common flavours include vanilla with floral milky sweet flavour, chocolate with chocolatey milky sweet flavour, strawberry with fruity sweet flavour, and coconut with fruity sweet earthy flavour. Other popular flavour enhancers may include yam / taro with earthy sweet milky flavour, mint with herbal minty sweet flavour, salted caramel with salty sweet flavour, pistachio with nutty earthy milky flavour, yuzu with fruity sour sweet flavour, rose with floral sweet milky flavour, green tea or matcha with grassy earthy vegetal flavour, earl grey tea with floral earthy sweet flavour, or durian with fruity earthy sweet flavour.
It's also common to garnish a scoop of Ice Cream with toppings. Popular topping options include chocolate fudge, strawberry sauce, caramel or salted caramel syrup, rainbow sprinkle candy, marshmallows, speculoos biscuit crumble, fruit flavoured gelatine candy, or wafer biscuits. Other variations of Ice Cream include sorbets or sherbets (made without milk and fruit-based), frozen yoghurt or froyo (made with yoghurt), kulfi (not churned, resulting in a denser texture), and potong (rectangular-cut popsicles made with additional base ingredients like evaporated milk and corn starch). Ice Cream is loved by people of all ages, and is most enjoyed during warm weather.

Established by the Danish Andersen family in 1978 in Solvang, they use time-honoured family recipes for their ice cream.
They opened in Singapore in May 1994, and are known for their natural fruit flavours of ice cream, waffles, fondue, and plated desserts.
The Mint Chocolate Chip, in a cup, is smooth creamy thick, with bright minty herbal sweet chocolatey flavour. Nicely refreshing.
The Danish Nougat, in a cone with speculoos crumble, has contrasting crunchy grainy texture against smooth creamy thick texture, with mild milky earthy spice sweet flavour.

Founded by Edwin Lim in October 2015, this brand has gained a loyal following for their Southeast Asian botanical flavours of ice cream.
Minimalist with botanical decor in gentle pastel shades, their boutiques evoke a creative and playful side that reflects in their whimsical creations.
The Lychee Raspberry, in a cup, is smooth creamy soft, with the enticing floral fruity sweet hint of rose and lychee, underpinned with the sharp sour sweet fruity notes of raspberry.
The White Chrysanthemum, in a crisp thyme waffle cone, is smooth creamy soft, enhanced with delicate milky herbal floral earthy sweet flavour from the flower. Bits of cacao nibs lend crunch and a bitter chocolatey bite.

Founded in May 2011 by Audrey Wang, Khoh Wan Chin, and Victor Lim (the same founders of Sunday Folks), this long-serving brand is the home of premium hand-crafted ice cream.
The full range spans over 110 flavours, with about 18 flavours on display and rotated regularly, all hand-made in small batches.
The Honey Lemon Yuzu, in a cup, is a dairy-free sorbet that's soft icey smooth, with bright fruity tangy sour sweet floral flavour derived from hand-squeezed lemon juice, bits of yuzu peel, and rich honey. Super refreshing.
The Earl Grey Lavender, in a cone with rainbow sprinkle candy, has crunchy smooth soft texture with fragrant milky earthy floral bitter sweet flavour, from the infusion of classy earl grey tea and lavender flowers.

Founded in August 2018 by Leonard Ong, this brand is named for the feel good biological reaction of 'dopamine', and are known for their nut-based gelato.
Serving just 8 varieties of flavours daily, their gelato is made using all natural ingredients, kept in their individual pozzetti - a traditional Italian way of serving ice-cream to preserve its freshness and prevent cross-contamination by air.
The Roasted Pistachio, in a cup, has a deep robust nutty earthy sweet smoky flavour, and their signature pliant creamy soft texture with a gentle stretch. Finely crushed pistachio nuts lend a grainy texture and added nutty earthy flavour.
The Maple Pecan, in a cone, has addictive floral nutty sweet flavour, and the same signature pliant creamy soft texture with stretch. Bits of pecan nuts lend a firm crunch and nutty earthy flavour.

Established in August 2020 by Chef Christopher Tan, Shermain Ng, and Adam Ng, the same founders behind Brine Restaurant, this brand is known for opening late and serving artisanal ice cream with pairing of toppings.
Big on botanical and fruit flavours, they eschew ice cream cones, with everything served in disposable cups.
The Balsamic Strawberry, in a cup, builds on the common strengths of its ingredients, being tangy sour fruity sweet in flavour with soft creamy texture. Topped with toasted grated coconut which lends a grainy chew and smoky earthy floral sweet flavour.
The Preserved Orange Peel, in a cup, has intense fruity sweet sour flavour with a soft creamy texture. Topped with candied orange zest which is chewy and bursts with more fruity zesty tangy sour sweet flavour.

They're known for serving towering sundae creations, decadent and indulgent treats for all.
The famed Sticky Chewy Chocolate, in a sundae glass, features a large creamy smooth thick scoop, engulfed by thick velvety sensational chocolate hot fudge, dressed with fluffy whipped cream, crisp biscuit wafer, and a juicy chocolate coated cherry. Has a rich and addictive robust chocolatey sweet flavour, yum.
The Salted Butterscotch Crumble and Lime Sherbet, in an ice cream bowl, are dual scoops of creamy smooth thick goodness, the former with toasty salty sweet flavour, the latter with bright tangy sour fruity sweet flavour. On the side we chose 3 toppings, juicy strawberry with fruity sweet flavour, crunchy macadamia nuts with nutty flavour, and thick butterscotch with earthy sweet flavour.

There's up to 18 different flavours daily, and folks love the waffles as well.
The Leegacy, in a cup, is a dark chocolate tribute to the founding prime minister of Singapore. This has a smooth thick velvety texture and robust chocolatey bitter sweet flavour.
The Unicorn Pop, in a cone with rainbow sprinkles candy, is inspired by the childhood Paddle Pop brand. With a crispy crunchy and smooth creamy texture, and playful milky candied sweet flavour, this visually-appealing colourful treat is a delight.

The Triple Thai Coconut and Taiwanese Sesame Brittle, in a cup, have similar creamy sticky thick texture, the former smooth with floral earthy milky sweet flavour, the latter grainy with earthy nutty toasty sweet flavour.
The former is made with coconut gelato, coconut meat, and coconut water jelly; the latter is made with black sesame gelato, and sesame seed brittle.

Opened in November 2007 by wife-husband team of Wong Peck Lin and David Yim, this brand is renowned for its bold gourmet flavours, particularly their alcohol infused ice cream.
Having expanded into Southeast Asia, the brand boasts around 100 flavours of ice cream in its catalogue, with around 30 flavours on offer daily.
The Rum Rum Raisin, in a cup, has juicy black raisins soaked in rum, then mixed into a creamy smooth, rum-infused ice cream. At 3.9% alcohol level, this has a punchy boozy fruity spice sweet floral flavour.
The Baileys & Bourbon and Emperor Mao, in a crispy waffle bowl with grainy sweet flavour, is garnished with crunchy honey almond granola which lends nutty grainy sweet flavour.
