Description:
The Ice Jelly Fruit Cocktail is a Singaporean Chinese dessert that consists of finely shaved ice and aiyu jelly, topped with a cocktail of canned fruit. Also known as Ice Jelly Cocktail, Fruit Cocktail Jelly, or Aiyu Jelly Fruit Cocktail, the Ice Jelly Fruit Cocktail is usually priced around SGD $3 to $5 per serving. It's normally eaten for dessert.


Always served chilled, the Ice Jelly Fruit Cocktail begins with a base of wobbly aiyu jelly or ice jelly, a type of fig seed gel made from the seeds of the awkeotsang creeping fig. The gelatine has a translucent brown colour with a mild earthy flavour. Topped with shaved ice, finely crushed by an electric ice shaver till it forms a small mound within the bowl. Then dressed with a simple sugar syrup, usually a blend of white sugar and water, giving it a basic sweet flavour.

The Ice Jelly Fruit Cocktail is then garnished with canned fruit cocktail, usually a mix of diced fruit chunks (peach, pineapple, cherry, green grapes or red grapes, pear) in a cane sugar and fructose corn syrup. The texture of the fruit is juicy and soft, with bright fruit sweet flavour. Served in a bowl and completed with a small calamansi lime, whose lime juice lends a splash of tangy sour zesty flavour.

Some stalls may also add other toppings to the Ice Jelly Fruit Cocktail, such as longan, lime, canned nata de coco / coconut water gelatine / coconut water jelly, chia seeds, or rainbow jelly balls. Together, the Ice Jelly Fruit Cocktail makes for a refreshing dessert.

Operating since the early 1990s, this long-serving stall is known for their generous portions and wide variety of desserts.

Over a mound of soft shaved ice and wobbly aiyu jelly, is drizzled a simple syrup and lime juice, stacked with juicy fruit cocktail (peach, pear, green grapes, nata de coco), and springy rainbow tadpole jelly.

Refreshing burst of fruity zesty sour sweet floral flavour, great to cool off.

When quality of ingredients is mostly standard (since it's all canned or processed), the other factors to compete on are portion size, price, service quality, convenient location, or creativity.

It's all about convenient location for this stall, with a largely captive audience that goes for takeaway or delivery.

Their rendition is refreshing. The base of wobbly aiyu jelly and smooth shaved ice with lime juice, topped with juicy fruit cocktail (peach, pear, green grapes, longan), has a lovely floral fruity zesty sour sweet flavour.

This humble stall has been operating even before 2012, with locals returning time and again for their tasty desserts, friendly service, and affordable pricing.

Their version differs more than any other, with the fig seed gel (derived from the seeds of the awkeotsang creeping fig) moulded into an accordion-shape rather than the traditional slices.

This wobbly aiyu jelly is then placed over, rather than under, the smooth shaved ice, drizzled with lime juice and a simple sugar syrup. The juicy diced fruit cocktail (pear, pineapple, peach, cherry, green grapes, nata de coco) sits around it.

Carries enticing honeyed earthy floral fruity sweet sour zesty tangy flavour, yummy.
