The Whisky Bruny Island Sherry Cask Single Malt 2023 has a smooth medium-thick texture with aromas and tastes of cherry, blackberry, apple custard, and raspberry. The Whisky Bruny Island Spellbound WH-168 Bourbon Cask 2023 has a rich chewy texture with aromas and tastes of butterscotch, oak, sour apple candy, and honey. The Whisky Bruny Island Twin Cask Bourbon Single Malt Marriage 2023 has a complex yet fine texture with aromas and tastes of barbecued pineapple, caramelised tangerine, banana, and toffee.

Delicious Oyster Raw (AUD $29 per dozen) and Oyster Kilpatrick (AUD $19 per half dozen) here. All oysters were plump, juicy, and slippery succulent in texture, the former having clean-tasting sweet briny salty flavour, the latter carrying meaty salty sour sweet savoury notes from the gravy. Good!

The Cheese C2 was the 1st raw milk cheese produced in the country, and is a classic cooked curd cheese aged for 6 - 12 months. The Cheese C2 has a hard firm texture, with a natural rind and mild nutty cheesy sweet flavour.
The Cheese George is made from unpasteurised cow's milk, aged for 6 - 8 months. The Cheese George has a semi-hard crumbly texture, with a natural rind and sharp savoury salty cheesy flavour.

Sampled the Cheese Platter (AUD $55), which was served with Cheese C2, Cheese George, and Cheese O.D.O. (One Day Old), the latter of which is made from unpasteurised cow's milk, aged for only 1 day. Marinated in olive oil, garlic, red chilli, black pepper, and chives, the Cheese O.D.O. (One Day Old) has a soft sticky texture, without any rind and milky sweet salty earthy sour peppery spicy vegetal flavour.
The Sourdough Bread has a spongy soft texture with bready sour sweet flavour, while the Smoked Wallaby has a chewy lean texture and robust meaty savoury smoky flavour. Served with a trio of condiments, the crunchy Beetroot Relish lends vegetal sour sweet earthy flavour, the juicy Bread & Butter Pickles lends vegetal tangy zesty sweet sour flavour, and the grainy Kasundi lends vegetal earthy sweet salty spice flavour. Highly recommended!

Love the Pancakes With Bacon & Maple, Clotted Cream & Ice Cream (AUD $21). This was a rather unique way to eat pancakes, seldom have a pairing of clotted cream and ice cream at the same time! The notes of sweet, savoury, and salty, layer together really well. Highly recommended!

Features tender juicy morsels of deshelled scallops, diced potatoes, white onions, and carrots, in a mild turmeric spiced curry gravy. Served within a crumbly pie pastry crust that is nicely butter glazed. It has a sweet savoury spice salty flavour. Highly recommended!

Only after arriving at The Cannery did I recall I'd visited the location before, though it was a different restaurant back then. Opened in December 2019, The Cannery is a casual restaurant serving hearty and homely dishes, made using the freshest seafood sourced from the nearby pristine waters.
Ambience at The Cannery is homely and casual. The brightly lit, spacious seating area has modern furniture, and maritime decor. There's both indoor and outdoor seating. Service at The Cannery is friendly, while ordering and payment is over the counter, staff do serve orders to your table, introducing dishes as they serve. I note they clean up relatively quickly when diners leave. Food at The Cannery is Modern Australian cuisine, with a focus on seafood and fish. Ingredients are fresh, mostly locally sourced. Portions are medium to large for individuals, and may be shared. Prices are reasonable enough for a casual restaurant, budget about AUD $50 per person.

The Beer Balter XPA (AUD $14) is an award-winning XPA, a cross between an American Pale Ale and an India Pale Ale, brewed by the Balter Brewing Company in Currumbin, Gold Coast, Queensland, Australia. Served alongside medium-cut potato shoestring chips, which have starchy salty savoury flavour and a crisp fluffy bite. Highly recommended!

The Seafood Linguine (AUD $36) has a base of slippery smooth al-dente linguine pasta noodles tossed aglio olio style, carrying grainy sweet savoury spice flavour. A dash of rocket leaves / arugula and cherry tomatoes lend a juicy crunch and vegetal bitter herbal sweet flavour. Garnished with a good medley of seafood, including crunchy shell-on prawns, bouncy calamari squid, tender flathead fish chunks, and bouncy scallops, all with sweet savoury salty flavour. Finished with lemon juice and red chili. A delicious dish. Highly recommended!

Almost a meal on its own, the Seafood Chowder (AUD $25) is served in a large portion. The seafood chowder soup is rich thick creamy, with bright sweet savoury briny salty milky flavour. Garnished with chunks of deboned basa fish fillets, prawns / shrimp, and scallops, all tender and springy in texture, picking up the lovely yummy flavours. Served with slices of crisp buttered toast bread with smoky bready savoury sweet flavour. Highly recommended!
